My Home made Mutton Biryani & Raita


MUTTON /CHICKEN BIRYANI RECIPE...

This home made mutton OR chicken biryani is for 4 to 5 persons..

Wash 2 and 1/2 big wati Basmati rice and keep aside for 15 to 20 minutes.

then marinate 3/4 kg mutton pieces or chicken pieces and 1 potato cut inro big pieces with little salt ..,little 

chilli powder, 2-3tabsp shaan masala  or 1/4 tsp garam masala. Grind 6-7 garlic, 2inch ginger, dhania leaves 

2 handfulls, 1hand full pudina leaves. Add this in mutton,add atleast 1cup dahi. Marinate mutton or chicken 

atleast for 20 minutes or more.

Take water in big vessel, add small dalchini piece, 4-5 lavanga, 4elaichi, 2 tamalpatra, little salt,.boil it..add 

rice in it ..cook for few minutes till rice is only half done...it should not cook more.just till it fully becomes 

long & when pressed it should be raw from inside..then strain it & keep aside.

Fry long cut 3 onions in more oil till properly brown and keep aside.
Take oil in cooker add 1onion finely chopped, fry for 3 minutes. Add 1 tomato finely chopped..fry till 

soft. Add shaan 2 tabsp.biryani masala or 1tsp Garam Masala.

Then add mutton or chicken and mix it well. Add very little water. Cook till 4 whistles.then keep it on slow 

simmer for 10minutes, if the gravy is thin then keep on gas for some time. till gravy becomes less & thick.

Then brush the corning ware pot with ghee. Spread a layer of mutton curry first then a layer of rice then 

sprinkle dhania leaves, pudina leaves, little ginger thinly long cut, fried onions. Then repeat the above layers step. 

Top layer should be rice with dhania leaves, pudina leaves, fried onions, ginger cut & little kesar mixed in 3-

4 tabsp milk. Cover the pot with tight lid and keep it on very low flame or in microwave for 10 minutes.

Biryani is ready to serve.

( if u r making chicken biryani then cook chicken only till 3 whistles..& switch off the gas. Dont cook for more time)

Lacy Neer Dosa or Panpole With coconut Garlic Chutney For Breakfast..

 Lacy Neer Dosa or Panpole.. Here is recipe. Ingredients... Rice...1 cup Fresh Grated Coconut.. 1/2 cup. Sugar.. 1 tsp.(optional ) Salt.. as per taste. Water...as needed. Oil..For Frying Dosa Method... 1-soak rice for 3-4 hours in water. 2-grind rice,grated coconut,salt and sugar(optional )with water in a fine paste. 3-add some water and make that paste thin to spread dosas. 4-take non stick tawa and spread thin dosas on it 5-apply some oil on tawa to take out dosas easily. Coconut Garlic chutney.. Grind fresh 1 cup fresh grated Coconut ,  4 to 5 Garlic cloves, small piece of chinch (Imli) 2 or 3 Whole Red Chillies n salt with some  water. Chutney is ready to serve.

Rice Oondi (Undi) & Lasun (Garlic) Gojju (Chutney)

Rice Oondi (Undi) & Lasun (Garlic) Gojju (Chutney). Recipe.... Ingredients.. Rice Idli Rawa...2 cup Fresh Grated Coconut... 1/2 cup.. (4to 5 tabsps) Water...4 cups. For Tadka.. Oil.. 2 tabsps. Rai..1/2 tsp. Curry patta.. 8 to 10 Whole red chilli..2 or 3 Hing..1/4 tsp. Salt...as psr taste or minimum 1tsp. Sugar..1tsp.  Method.. Wash 1 wati idli rice rawa & keep. make tadka of oil,rai,red chillies,curry  patta,& hing. then add water .. while boiling add rawa,2 to 3 tabsp.grated  coconut..salt, sugar. mix it.& make it dry  like upma.. then make round undies with hand..make a  small whole in the middle.. steam it like idlis..undies r ready to serve... Serve it with Lasun Gojju. Lasun (Garlic ) Gojju ( Chutney) Recipe... Grind Grated fresh coconut 1cup with garlic 3..chinch small 2 pieces ,  3whole red  chillies & salt as per taste with little  water. sprinkle some coconut oil on it. (This is optional)
