My Thali Today... Padval Dumbells.. Stuffed Padvals or Stuffed Snake Gourd.,Garlic Tadka Dal. Vangi Talasani.. (Brinjal Sabji ).Potato Bhajiya ,Chow Chow or Chayote Vegetable Phodi., Beetrooot Raita....n.....Rice..

Garlic Tadka Dal...Recipe.. Pressure cook 1 Cup Toor Dal  till Dal cooks very soft.. then mash it or mix it till no  Dal grain remains.  Add water as much you need.. keep for boiling..add salt in it.. add haldi in it.. mix it.. boil it properly.. keep the thickness of Dal as you like. Make tadka with Ghee add cushed lots of Garlic n Whole Red Chilli pieces ..Fry till Garlic gets slight Brown..add tadka in Dal.. Lasun Tadka Dal is ready to serve. Vangi Talasani.. (Brinjal Sabji )... Recipe.. Make long n medium thin pieces of any  Size of Vangi  .. 250gms. In a pan make Tadka with oil 2 tabsps.. add crushed Garlic cloves..7to 8 , Add whole red  chilli pieces..1 or 2.. Then add Vangi pieces in it.. add 1/4tsp.of Haldi , n 1/4 tsp of red chilli powder.. mix  it..then add salt n pinch of sugar or small piece of gud ( you can skip this..this is optional )  Then cover it with lid.. cook just fir 2 to 3 minutes.. then remove lid.. n stir fry it till  slightly crisp..  Vangi Talasani is ready t

My Thali Today.. Black Toor seeds Saar , Black Whole Toor Usal , CauliFlower Talasani , Simple Dal Varan , Kantoli or Spine Gourd or Phagil Phodi..n....Rice.

 Black Toor seeds Saar  recipe... This Saar is made with water of cooked soaked Toor .I soaked it for overnight.  Cook these seeds n lots of water in the pressure cooker  for 6 to 8 whistles..  Take out all the water from  cooked Toor..this water is used for saar. grind 1tabsp.fresh grated coconut,1 whole red chilli, 3 tabsp.cooked Toor,  1/2tsp.dhania  seeds,2-3 chopped garlic,small piece of imli(chinch) with water.make fine paste..  add this in boiled seeds water..add salt,little gud,1-3 green chillies.2crushed garlics.then  boil it nicely for 5 minutes.make tadka of 1tabsp.ghee,5-6 crushed garlics,1whole red  chilli..add it in saar..garnish with dhania leaves..saar is ready to serve Black Whole  Toor Usal  recipe.. Khotto or Steamed Idlis in Jackfruit Leaves with Coconut Red Spicy Chutney.. This delicacy from Manglore..our Traditional Recipe made on special festival days.. but I make it for Breakfast too whenever Jackfruit leaves r available...

  Khotto or Steamed Idlis in Jackfruit Leaves Recipe.. Wash n Soak 1 cup of Udis dal .. with 8 to 10 methi seeds for overnight or 4to 5 hours..  wash n soak 2 cups of Idli Rice separately for same time above..then grind it separately..  Grind Udid dal adding little water at a time .. make it fluffy.. Grind Rice in to a paste ..you can grind it n keep batter as fine rawa.. mix it  both  batters.... In my recipe I wash grinder n add water in this batter n add atleast 1/2 cup to 1 cup Idli  Rawa in it.. n make idli batter ready.. keep it for overnight or 10 to 12 hours to  ferment..add salt before making khotto.. Wash n clean the jackfruit leaves..then dry it.. n make masket or cup by keeking together   by  pinning with tooth pic pieces...you can see in my pic. Then fill these cups with idli batter from above ..n steam it in steamer or pressure cooker  like Idlis for 12 to 15 minutes....serve with Sambhar or Chutney .. Coconut Red Chutney ... Today is World Vada Paav Day..so Enjoy My Special Vada Pav..n...Batata Vada With Yummy Spicy Red Chutney

 Batata Vada... Recipe... Boil 6to 8 Medium Potatoes in Pressure Cooker..  Then Remove the skins..n mash it roughly n keep aside. Then crush 5to 6 Green chillies , 1 inch of Ginger  6to 8 Garlic cloves..together. Then Make Tadka in kadhai with 1tabsp.of oil..  add 1/4 tsp Rai, 1/4 tsp.Jeera , 5 to 6 Curry patta Add hing powder 1/2 tsp. n Haldi less then 1/4 tsp Then add crushed above green masala.fry for  few seconds .. Add mashed Potatoes in it.. add salt as per taste. Add pinch of sugar to get slightly sweet taste.this  is optional. Add lots of finely chopped Dhania  leaves. Then mix it.. after it is cooled down make   Round shaped balls n just press it little to mke  slightly flat. Make medium thin batter with 1 cup of water  added with salt, haldi, red chilli powder, hing  powder.  Extremely tasty & traditional aamchi style noodles.Looks and sounds difficult but  actually very easy to make SHEVAI Ingredients:  1)2 1/2 wati rice(soaked in 4 wati water for minimum 4-5 hrs) 2)Grated coconut 1 1/2 wati 3)salt to taste SWEET RASS 1. 1 grated coconut 2.jaggery a little more than 1 wati(variations according to taste) 3.elaichi powder 1 tsp or more Instructions: Shevai 1.grind soaked rice and grated coconut,with the same water in required quantity.make  fine paste 2.Heat it on a pan on low flame add little salt,keep stiring all the time till the water  evaporates and it becomes a thick dough and it should not stick to the hands and can be  moulded into shapes easily 3.switch off the gas and let it cool for sometime. 4.then when its warm dip hands in water and make long or round balls accordingly required. 5.then steam it in cooker like idlis. without whistle (appx 10-12 mins) 6.then put the steamed balls in the shev mould and make shevais.  Kobichya Vadya.. Cabbage Vadi like Kothimbir Vadi Steamed n then Shallow Fried.. Recipe... Ingredients... Grated Cabbage.. 2 cups. Finely Chopped Onion...1 big or 2 medium Rice Powder or Fine Rawa...1/4 cup  Besan...1cup or more as needed to bind. Red chilli powder.. as you like. Haldi..1/2tsp. Green Chilli Finely Chopped....3 to 4 As you like. Grated Garlic .. 3 if you like. Dhania leaves Finely Chopped.. 1 handful Salt... As per taste. Roasted or Raw Jeera Powder..1/4 tsp. Hing... Pinch or little more. Method...  Mix Grated Cabbage ,Finely Chopped Onion ,  Finely chopped Green Chillies, Grated Garlic  ,Dhania leaves. Then add salt, Haldi, Jeera powder, Red Chilli  powder, Haldi, Hing.. Mix it nicely. Then add Rice powder or Fine Rava n Besan . Bind it nicely..make thick paste.  Then in round greased thali spread it in thin layer. Steam it in steamer like dhokla. Once it is cooled down make square pieces..n  shallow fry it from both sides till crispy. You can serve it with Tomato Ket

  Neer Phanas n White Peas Shak... (Div Kadgi with Safed dry Vatana Karwari Curry ) recipe.. Soak  White dry Peas over night ... then cook it in pressure cooker.. remove skin of neer phanas n  make medium pieces .add some salt n water.. n cook it till it gets well cooked.. then roast 1 tabsp,of dhania seeds in 1/2 tsp of oil add red chilli in it,,grind fresh coconut  grated..n roasted dhania seeds n ed chillies,.imli..pich,of haldi..with water make fine paste. add it in cooked peas n phanas..while boiling add 4-5 crushed teppal ( tirfal)..boil it.. if you like spread some coconut oil while boiling.. Or you can add crushed garlic n  coconut oil tadka in to it,.this is optional. My Thali Today.. French Beans Koshimbir, Beetroot Raita , Tomato Saar with Coconut Milk , Deev Kadgi Phodi (Neer Phanas Frotters ), n.... Rice.

 Neer Phanas Fritters .. (DeevKadgi or Breadfruit) Phodi.. Recipe.... peel the Neer Phanas.make medium thin pieces.. apply salt,haldi,red chilli powder,hing..& mix it.. add rice powder & some Besan n Fine Rawa ..mix it.. then shallow fry it in coconut oil or any oil you like.. Fry it keeping covered till crispy. PARASBI (FRENCH BEANS) KOSHIMBIR.. RECIPE.. 1.heat 2-3tabsp.oil in a fry pan add 250gms.chopped parasbi, little salt,2 long slit green  chillies and fry till its crispy and light brown. 2.In a serving bowl, add 2 finely chopped onion,3/4 wati grated coconut, little salt, fried  parasbi, finely chopped dhania leaves and1/2 tsp lemon juice and mix well. 3.garnish with dhania leaves and serve. Beetroot Raita.. Recipe..
