My Lunch Today... Poori n Batata Bhaji With Tomato Saar with Coconut Milk..

   Batata Bhaji... Recipe... Description: Very delicious potato bhaji.. it is usually served with hot pooris..I have given slight change to this bhaji..so try it.. I am sure you all will love it... Ingredients: 1.potatoes-4-5 2.oil-2 tabsp. 3.udid dal-1/4 tsp. 4. rai (mustard seeds)- 1/2 tsp. 5 jeera (cummin seeds)-1/4tsp 6.garlics chopped-2 7.whole red chilli-1 8.curry patta 5-6 9.pinch hing, 10.haldi-1/4 tsp  11/ginger-small piece. 12.green chillies=2 13.onions-2 14.sugar-little((optional). 15.salt-as per taste. 16.besan (gram flour)-2tabsp. 17.dhania leaves-chopped finely-1tabsp. 18.water-some as needed for gravy. Preparaion: 1.Boil potatoes in pressure cooker.peel it & make pieces. 2.In a pan make tadka of oil.when heated add udid dal, rai(mustard seeds), jeera(cummin seeds),garlic  chopped,whole red chilli,curry patta,pinch hing, haldi,after frying for few seconds , 3,add small piece of finely chopped ginger,finely chopped green chillies, 4,then add finely chopped onions.fry

My Thali Today...Vaal Birde or Dalimbi Usal , Goad varan Without Tadka , Vaangi Talasani , Karatya Koot (Karela Fresh Pickle ) , Phulka ..n... Rice

Sprouted Vaal Birade(Dalimbi Usal) ... Recipe Soak Vaal overnight & give them sprouts.. make tadka of oil,add rai,jeera,chopped garlic,green chillies,hing,haldi,red chilli powder(optional),goda masala(or pinch garam masala), then add sprouted val in it.add 2 kokums in it.stir for few minutes..... add water &cook it till Vaal gets soft. Then add 2tabsps of fresh grated Coconut. then add salt as per taste,little sugar,or gud..again cook it properly. Garnish with dhania leaves. Vaal birde or usal is ready to serve. If You want to make it quick then you can make directly in pressure cooker.. add salt n gud n everything together n just cook for 1 or 2 whistles.then garnish with dhaniia leaves. Karatya Koot or Karela Fresh Pickle.. Recipe... Finely chop Karela... add some salt. Keep it for 15 minutes.. then squeeze it  or wash it under the tap n squeeze it..   Recipe.. This is a Simple but yummy Maharashtrian Breakfast Dish.. It is a lovely variation to our regular Kanda Poha...  Ingredients... 1. Kurmura... 5 cups. 2. Tomato...1 Small. 3. Onion... 1 Big. 4.Oil... 2 to 3 tabsps. 5. Rai (Mustard seeds )... Less than 1/4 tsp. 5. Jeera...1\4 tsp. 6. Garlic... 3 Cloves. 7. Green Chillies...2  8.Red chilli Powder...little as per taste.. 9. Boil tur dal in pressure cooker,  make tadka of oil, rai,, jeera, hing, haldi, currypatta, some goda masala, red chilli powder, then pour it in  well cooked and mashed dal .  add imli juice, again add some goda masala, green chillies, dhania leaves, add salt, jaggery   boil it nicely till amti aroma comes out.. garnish with dhania leaves. amti is ready to serve.   Knolkol Sukke... Recipe.. This is a Mangalorean dish..  Peel the Knolkol. make big pieces of it. add 1 Onion big pieces,add salt & water ..then cook it till soft. You can cook it in pressure cooker for 2 whistles. then in a tadka pan fry 1\2 tabsp. of dhania seeds, 1/2tsp of white udid dal,7-8 methi seeds.t,& 3-4 red whole chillies in few drops of oil. then grind fresh grated coconut, above fried things,haldi,&little of chinch wtth water & make paste.  then add it in cooked Knolkol.add little gud,some salt.& boil it.. keep very little gravy..it shud be sukka. .then add tadka with coconut oil,rai,currypatta in it.. Methi Batata Bhaji..Recipe. In a pan heat oil .add some  rai,3 crushed garlic fry little,add hing,haldi,red chilli powder. add green chillies,then add 1finely chopped big  onions,fry for few seconds   add potato pieces.add sugar,salt and cover the pan , cook till potatoes get cooked.add methi leaves.cook for few minutes.use little water if you need . Cook for 2to 3 minutes.. Methi potato bhaji is ready to serve. Gajarachi Koshimbir. ( Carrot Salad )...recipe..  Peel 2 Carrots.. Then Grate it. In A Bowl take Grated Carrot..add Finely chopped little of Onion ( optional..you can skip it.. ),  Add 1to 2 tabsps of Grated Fresh Coconut ,Salt, Lemon Juice.  Mix it properly..Then add Tadka with Ghee , Rai, Curry Patta, Green chilli, small whole  red Chilli , Hing..   TOMATO RASAM..RECIPE.. Chop 2-3 tomatoes. grind it in mixie without water... In a vessel take 3-4 glass water,add tomatoes,2tbsp cooked n mashed dal or you can use any left over dal.. add green chillies,crushed garlic,rasam powder.(or little sambhar powder or crushed dhania jeera n black pepper powder ) , Add currypatta,dhania leaves,little hing,salt,sugar(optional),imli juice,&boil for 10 minutes on low flame.if needed add more water..boil till nicce Rasam aroma comes..switch off gas..  Add tadka of ghee,rai,whole red chilli,hing,curry patta...i add pinch of rasam powder in tadka..tomato rasam will be ready..  CauliFlower Talasani.. Recipe... Chop cauliflower in to lond pieces.... Make tadka of oil, lots of crushed garlic,add Whole red Chilli ,pinch of Udid dal ,after it becomes slightly brown  it till red chilli powder ,haldi, Immediately add cauliflower pieces in it..add salt and pinch sugar if u like..keep lid and cook it.it shud be properly dry ...talasani is ready to serv

Malvani Crab Curry.... Recipe..  Ingredients: 1.Crabs- 4/5 2.grated fresh Coconut-1cups.. and Grated Dry Khopra (Coconut )...1wati. 3.long cut onions-5/6 4.garlic cloves-10 5.ginger-3/4 inch 6.kashmiri or bedgi whole red chillis-7/8 7.haldi-1tsp 8.whole garam masala-6cloves,1inch cinnamon,dhania seeds-2tabsp.,jeera-1/4tsp,saunf- 1/2tsp,black pepper-6/7,green elaichi-3,optional(small piece dagadful,javitri,1/4sp khaskhas,(optioonal) 9.oil -4-5tabsp. 10.dhania leaves-finely cut-1/2cup 11.salt-as per taste. 12.finely cut medium size tomatoes-3 Preparation: 1.wash crabs..clean it and make 2 pieces.. 2.grind 1/4 cup dhania leaves,green chillies, 5 garlic cloves, 2inch ginger piece without water. 3.marinate crabs with salt,haldi,...keep aside. 4.take 1sp.oil in a pan roast all whole garam masala for 1 minute 5.take 1tab sp.oil in a pan roast long cut onions,5garlic cloves,ginger piece,fry untill light brown add grated coconut and  Dry grated khopra ..roast it till coconut gets little brown.

Sprouted Black Eyed Beans  With Tender Bamboo Shoots Ambat...Recipe Soak 3 cups of black eyed beans in water for overnight,.next day remove water n keep in warm place for sprouts.then again add water in it,.n remove skin of each bean.then cook it with Tender Bambo Shoots Pieces ( you can skip it if you dont like or have it.) water n salt till it gets soft.n  well cooked. Roast and 10 to 15 methi seeds and 2-3red whole chillies in 1/4tsp of oil. then Grind  1.1/2wati fresh coconut, small piece of chinch(tamarind),haldi, and above roasted masala with some water.make fine paste..then add this  ground masala in the mixture of well cooked beans. Add salt &mix well..boil it..  Make tadka of 1t to 2tabsps of oil,I use coconut oil add 1finely chopped onion,.fry till brown.and add in the curry.. Ambat is ready to serve with rice.. Home Made Chicken Biryani With Tomato-Cucumber-Onion Raita , Papad Fry..

  This home made chicken biryani is for 4 to 5 persons.. Wash 2 and 1/2 big wati Basmati rice and keep aside for 15 to 20 minutes. then marinate chicken pieces and 1 potato cut in to big pieces with little salt ..,little chilli powder, 2-3tabsp shaan biryani masala or 1/4 tsp garam masala. Grind 6-7 garlic, 2inch ginger, dhania leaves 2 handfulls, 1 hand full pudina leaves. Add this in ,add at least 1cup dahi. Marinate chicken  atleast for 20 minutes or more. Take water in big vessel, add small dalchini piece, 4-5 lavanga, 4elaichi, 2 tamalpatra, little salt,.boil it..add  rice in it ..cook for few minutes till rice is only half done...it should not cook more.just till it fully becomes  long & when pressed it should be raw from inside..then strain it & keep aside. Fry long cut 3 onions in more oil till properly brown and keep aside. Take oil in cooker add 1onion finely chopped, fry for 3 minutes. Add 1 tomato finely chopped..fry till  soft. Tel Poli or Gul Poli  This Tel Poli or Gul poli  can be preserved for 8 to 10 days without Fridge. It is the best to carry in travels..  This is made specially on Makar Sankranti Day.. Ingredients.. For Outer Cover.. 1..Wheat Flour..2 cups. 2...Oil...1/4 cup in dough as a mohan. n oil as needed for Shallow Fry. 3..Salt.. as per taste. 4.. water.. as needed to knead the dough. Stuffing.. 1.. 3 Tabsp.of Besan. 2.. 1 cup Roasted Til Powder . 3.. 1 n 1/2 cups Grated Gud or Gud powder. 4..Ghee as needed to Bind the stuffing. 5.. 1 tsp.Elaichi Powder. Method.... For Outer Cover.. Knead the dough with wheat Floor  add more of oil like about  1/4 cup as a mohan in it.. Add salt as per taste, mix it nicely.then add water only as much as you need..knead slightly hard dough..keep it for 1 hour atleast. Then for stuffing.. .. Dry Roast Besan till light brown.  Then add 1 cup of roasted Til powder, add grated 1n 1/2 grated gud or gud powder.in it...you can add more if you like sweeter taste..  Add

My Sunday Thali Today... Prawns Goan Curry , Surmai Kalwan , Potaoto Jumping , Palak Pathrado ( Like Alu Vadi ).... n..... Rice.

Surmai Kalwan ... Recipe... Take 5 to 6 Surmai pieces.. apply some salt ..n haldi n keep it for some time..  In a grinder grind in to fine paste.. grated fresh coconut 1 cup .. dhania seeds tabsp., 4 ...5 black pepper , small piece of ginger, 4..5 garlic cloves., 1 small onion, 3to 4 red chillies, haldi1/4 tsp., 1small tomato.., make fine paste..  Then in a kadhai.. take some oil.. add pinch of hing, 2..3 currypatta, 1green chilli, then add ground masala, add salt, kokum or some imli water , 1/2 tsp.malvani or any koli masala if you have.. boil it nicely..then add surmai pieces..add some ginger long cut thin pieces n green chill long cut.. n boil till fish gets cooked.. garnish with dhania leaves n serve. Goan Prawns Curry.. Recipe... Wash n clean prawns. 1to 1n half cup... remove black thread from each prawn.. then apply some salt to it.. keep aside. My Thali Today.... Squids Rings Chiili ( Fish Chilli ), Lasun Tadka Dal , Green Chavali Leaves Upkari ( Fresh Tandulkha Bhaji ) ,Mooli Dahi Raita ( Radish Raita ), Pomfret Fish Fry , Phulka....n..... Rice

  Squids Chilli.... Recipe....   Clean n wash the 2 cups of Squids Rings.. Add some3 to 4 pinch of salt n 1/2 tsp.of Haldi in it.. Add some 1/2 cup of water n keep in in the pressure cooker. Cook it for 2 whistles. In a pan take little more of  3 to 4 tabsps.oil.. add finely chopped 2 medium Onions .. add 1tab sp of fresh grated Garlic.. add 1/2 tab sp.of Fresh Grated Ginger.. Saute for few minutes.. then add 1 Big Finely chopped Tomato..add 3 to 4 Green chillies chopped.. you can add more if you want spicy.. then saute  till all gets wellmixed n Tomatoes get soft. Then add 1/2tsp. Of Haldi , 1/2 to 1 tsp.of Red chilli powder as per taste, add 1tsp.of Dhania powder , salt as per taste.. ..saute till all mixture gets well Mixed..  Then add Cooked Squids Rings in it.. n cover it n cook it for few minutes till all masala gets well mixed with Squids.. My Thali Today.... Palak Raita, Drumsticks- small Onions- French Beans- Cauliflower stems Sambhar , French Beans Talasani ( Dry Sabji with Garlic n Red Chilli Tadka ) , Green Peas Shells Bhajiya or Crispies.....n....Rice.

  Palak Raita Recipe.... 1.wash & finely chop 1bunch of palak leaves. 2.Boil palak,chopped 2 to 3 green chillies,grated 1 inch ginger,salt as per taste ,pinch of sugar,and very little water for 5 minutes till palak is cooked. 3.switch off gas & add whisked 1 cup dahi in it. 4.make tadka of 1tabsp.ghee,1/2 tsp.rai, 1/2 tsp.jeera,1whole red chilly and ;pinch of hing and add in palak raita. 5.palak raita is ready to serve. Green Peas Shells Bhajiya or Crispies.. Recipe... These Green Peas Shell Bhajiyas is a very yummy dish with great taste from waste . My grandmother used to make this.. In my childood whenever she used to make this we all kids used to wait to remove inner thin skin rom vatana sali.. I am sure you all will love these crispy bhajiya.. Recipe... Home Made Gulkand from Fresh Desi Fragrant Rose Petals..No Artificial Colour or Essence.

  Gulkand ..  Recipe. Ingredients... 1.. Fresh Fragrant Red Rose Petals... 2 cups.  2.. Sugar...1n1/4 to  1n1/2 Cups. 3...Green Elaichi Powder... 2 pinch. 4..Honey..1tsp. 1.. wash 2 Cups of nice fresh , fragrant rose petals.. then dry it completely.. 2..add 1.1/4  cup to 1/2 cup of sugar.it depends upon how much do sweet you prefer. 3..then nicely mix it with hand till petals gets crumbled n sugar gets well mixed  with it.then keep it on gas on low flame.mix it nicely till suger gets dissolved n mixture starts leaving the sides of a pan.ot takes hardly any time 3 minutes to 5 . 4..then add 2 pinch of elaichi powder..n switch off the gas..it shud not be hard  but soft. 5..then after it cools down add 1 tsp of honey in it..mix it nicely. 6..fill it in the bottle... preserve it in fridge.so that it will reain fresh for longer time. 7..We can preserve it for many months in the Fridge..

  Egg Bhurji...  1..Whisk the 4  Eggs in a bowl..Keep aside. 2.. Finely Chop 2 Medium Onions. 3.. Finely Chop 2 to 3 Green Chillies. 4... Finely Chop 1 Small Tomato. 5.. Finely Chop Dhania Leaves. 6..In a Pan add 2 tabsps Of Oil or Ghee. Add 1/2 tsp.of Jeera.. then Add Finely Chopped Onions, Green Chillies , Some Finely Chopped Dhania Leaves..Stir Fry till Onions Become soft ..then Add Finely Chopped Tomato.. Fry till Tomato Gets Mixed with onions. Then add Whisked Eggs in it.. Add 2tabsps.to 3 tabsps of Milk in it.. add Salt, Pepper Powder ..Mix It Nicely Till Eggs Get Properly Cooked.. Then Garnish With Dhania Leaves  n Serve. Rajma Curry.. 1.. Soak  2 cups Rajma Over Night.. Morning Cook it with Adding Water In the Cooker for 2 Whistles.. 2.. Then In pressure Cooker take 3tabsps.of Oil Or Ghee add 2 cloves, 1Tejpatta, 1 Green Elaichi, 4to 5 Black pepper, Fry for few Seconds.  Then Add 1 onion Paste 1tabsp.of Garlic n Ginger Paste, fry Till it becomes Slight Brown and Then add 1 Fine

  Happy New Year To All My Friends.... My Thali Today.... Vaalache Birde (Dalimbi Usal ), Majjige Phulsu in my way ( with Curds or Buttermilk ) , Cabbage Koshimbir , Home Made Poha Papad , Phulka ... n... Rice. Majjige Pulusu - take 1 cup yoghurt, add salt and water to make buttermilk (medium consistency of thickness),  1/2 finely chopped onion.or smal shallots add in buttermilk n  Keep aside.  Heat buttermilk slightly..do not heat it till boil or it will curdle..so switch off the gas judt after heating it slightly.. you can make phulsu without heating it.. but I like to heat it slightly. Make tadka in oil put pinch of urad dal, chana dal, rai, jeera, curry leaves, long slit green chilly, haldi, crushed ginger, 2finely chopped garlic, 1/2 chopped onion.or some small shallots .  Add this tadka to the buttermilk and garnish with coriander leaves.n serve it..
