My Soul Satisfying n Most Favourite Simple Thali Today.... Red Boiled Rice Pej With Ghee n Garlic Tadka ( Mota Rice Or Ukda Rice Kanji ) , Vaali, Bikand (Jack fruit seeds) & Magge ( Yellow Cucumber ) Peje Randayi ( Malabar Spinach Or Mayalu n Jackfruit seeds n Magge Curry) With Ground Coconut Masala ) , Raw Mango Chutney (( Kairi Gojju ) , Appinmedi Amli Lonche( Small Kairi Pickle ), Roasted Red Chilli Papad.

 Red Boiled Rice Pej... Recipe.. Wash n spak Rice for atleast 2 hours.. then for 1 cup rice add 4 cups of water n cook it in  pressure cooker for 8 to 10 whistles as it takes much time to cook soft. Then again mash it nicely n add some water ,salt as per taste n boil it nicely. Then make Tadka with gheee n add lots of Garlic in it n fry ..add it in Pej. If you dont like Garlic tadka you can skip it n serve plain Pej .. Vaali, Bikand (Jack fruit seeds) & Magge ( Yellow Cucumber ) Peje Randayi ( Malabar   Spinach Or Mayalu n Jackfruit seeds n Magge Curry ) Recipe... Boil  yellow cucumber means magge n add cooked Jackfruit Seeds with some saltin  pressure cooker ...  boil mayalu also ..mix it.add salt , little of jaggery..  and make ground masala of whole red chillies , fresh coconut n imli, pinch of haldi...  Make fine paste n add it in mayalu n veggies I add 1 green chilli while boiling.. nicely mix  it n boil it.. then switch off the gas..   add tadka of ghee with lots of crushed g

My Thali ....Parval Fritters ..(Parval Phodi )., Garlic Tadka Dal, Kairi ( Full Kairi Preserved in salt water) with Coconut Chutney or Gojju...,Jumping Potato, Mooli Raita ...n....Rice

 Parval Fritters ..(Parval Phodi ).. Recipe. Make medium thin pieces of Parval as shown in my thali pic.. Add Salt, Haldi n Red Chilli powder n Hing in it..  Mix it well. Add Rice powder n some Besan in it  till all pieces get well covered.. Then shallow fry these Phodis till it become crispy... Kairi ( Full Kairi Preserved in salt water)  with Coconut Chutney  or Gojju... Recipe.. Grind together fresh grated coconut, kairi pieces ,Green chillies n salt ,sugar n lots of  garlic with little of water.. chutney is ready to serve Garlic Tadka Dal... Recipe.. Pressure cook 1 Cup Toor Dal  till Dal cooks very soft.. then mash it or mix it till no  Dal grain remains.  Add water as much you need.. keep for boiling..add salt in it.. add haldi in it.. mix it.. boil it properly.. keep the thickness of Dal as you like. My only Fish Thali Today....Haldi Paanatla Masala Bangda ( Masala Mackerel in Turmeric Fresh Leaves.)., Pomfret Fish Curry, Bangda Fish Amshe Tikhshe (Tikhle ), Fish Rawa Fry ....n....Rice.

  Haldi Paanatla Masala Bangda ( Masala Mackerel in Turmeric Fresh Leaves.).. Recipe... Wash n Clean Bangda Fish.. Make slits as shown in the pic. Apply Salt n Haldi to Bangda. Grind 15 to 20  Mixed Bedgi n Kashmiri Whole Red Chillies , 5 to 6 Garlic Cloves , small  ball of Tamarind ( Imli ) & some salt, Haldi. With some Water. Then app!y this ground masala to Bangda properly.. Then keep 2 to 4 Haldi Leaves in a open Pan.  Spread  Bangdas nicely on the leaves.. pour 2 to 3 tabsps of Coconut oil on it evenly.. Then close this fish nicely with some Haldi leaves again.. cover it with these leaves.. Then nicely grill it in the  pan on low flame for 10 to 15 minutes.. My Thali Today... Mutton Kheema Chana Masala , Tomato Saar , Onion n Baby Tomato Salad , Phulka ...n...Rice.

 Mutton Kheema Chana Masala... ( For Variation You can use Chicken Kheema instead of Mutton Kheema ) Recipe.. Soak White chole Chana 1 cup over night. Wash n clean Mutton Kheema...500 gms. Grind Green Masala with 1 cup Dhania leaves, Garlic 7to 8 small cloves. Grate 1 inch Ginger .n grate 7to8 small garlic cloves n keep aside. In pressure cooker cook soaked chana for 1 whistle. Then in pressure cooker add 2 tabsps.of oil. Add 2 Lavang, 1 Elaichi, 4..5 black pepper..  then add 2 finely chopped onions.. fry for few minutes till it becomes slightly brown..  Add grated Garlic n Ginger..stir it.. then add Mutton Kheema.. keep stirring then add  ground Green masala, stir it for few minutes.. Add Garam masala, or Sunday Masala or any mutton masala, 1 tabsp Dhania Powder,   1 /2 sp of Haldi, add 2 green chillies.n 1 finely chopped Tomato.keep stirring it.. then add boiled chana with its boiled water..add salt as per taste. Cook it till kheema gets cooked for 2vto 3 whistles..  adjust the gravy

My Thali Today...Batata Talasani , Drumsticks - Small Onions-Ash Gourd sambhar...or Kholombo.. French Beans (Parasbi or Shravan Ghevda) Upkari , Carrot Koshimbir, Dodka Fry ( Ridge Gourd Fry )...n.....Rice.

  Batata Talasani... Recipe.. Peel the Potatoes.. Make long n thin Pieces like we make for Finger Chips or French Fry.. Make Tadka with Oil , add lots of Crushed Garlic, Whole Red Chilli, fry it till brown . Add Haldi , red chilli powder, salt ,little of gud or sugar to taste (optional).. mix it nicely...keep the lid.. cook it till Potato get cooked.  Then saute it till it become slightly crisp.  Talasani is ready to  serve Drumsticks - Small Onions-AshGourd  sambhar...or Kholombo..  Recipe.. Cook tur dal in pressure cooker till very soft.  make pieces of,tomato ,& make long pieces of drumsticks. AshGourd (kohala),small onions ,boil all the vegetables with some salt . For Sambhar masala...roast 1tabsp of dhania seeds,1/2tsp of jeera, 7-8 methi seeds,6-7  black pepper, 1tabsp.chana dal,1/2tsp of udid dal,5-6 curry patta, pinch haldi, hing, then  add 7-8 bedgi whole red chillies. finally add fesh 2tabsp of grated fresh coconut.roast it  properly in few drops of oil.make fine paste .

  Pan Fried Stuffed Pooris With Tomato Ketchup....  Very Healthy ,  Yummy , Crispy Stuffed  Vegetable Pooris steamed like Momos n then  Shallow Fried On  a Pan. Recipe.. Outer Covering.. Ingredients.. Wheat Flour..2to 3 cups. Green chillies.. 3 to 5 Garlic clove Ghee.. 1tabsp. Salt..as per Taste Water...as needed Ingredients for Stuffing.. Oil..1 tabsp.for tadka. Jeera.. less than 1/4 tsp. Green chillies.. 2 finely chopped. Onion...1 finely chopped. Green Peas..1/4 cup. Grated Cabbage..1 Cup French Beans... 1/4 cup Finely chopped Red Chilli powder..1/4 tsp or less as per taste. Roasted Dhae Jeera powder ..1/4 tsp. Haldi.. 1/4 tsp. Garam Masala powder.. pinch Green spring leaves.. 1 hand full finely chopped. Salt..as per taste. Boiled potatoes.. 2 slightly mashed Dhania leaves.. 2tabsps finely chopped. My Thali Today... Tirphalachi Tambli ( Coconut with Tirphal or Teppal Thand Kadhi ), Squids Chilli , Matar Paneer , Kantoli n Parwal Phodi ...n.... Rice.

  Squids Chilli.... Recipe....   Clean n wash the 2 cups of Squids Rings.. Add some3 to 4 pinch of salt n 1/2 tsp.of Haldi  in it.. Add some 1/2 cup of water n keep in in the pressure cooker. Cook it for 2 whistles. In a pan take little more of  3 to 4 tabsps.oil.. add finely chopped 2 medium Onions .. add  1tab sp of fresh grated Garlic.. add 1/2 tab sp.of Fresh Grated Ginger.. Saute for few  minutes.. then add 1 Big Finely chopped Tomato..add 3 to 4 Green chillies chopped.. you  can add more if you want spicy.. then saute  till all gets wellmixed n Tomatoes get soft. Then add 1/2tsp. Of Haldi , 1/2 to 1 tsp.of Red chilli powder as per taste, add 1tsp.of  Dhania powder , salt as per taste.. ..saute till all mixture gets well Mixed..  Then add Cooked Squids Rings in it.. n cover it n cook it for few minutes till all masala  gets well mixed with Squids.. My Thali Today... Tirphalachi Tambli ( Coconut with Tirphal or Teppal Thand Kadhi ), Cauliflower Talasani , Matar Paneer , Kantoli n Parwal Phodi ...n.... Rice.

  Tirphal Tambli Recipe... Recipe.. Fry 4-5 fresh tirphal, 2 green chillies pieces, in 1/2 tsp ghee & add at least 2 pinches hing powder.then  keep it down from flame.,then grind this above fried things with 1 cup grated coconut & some  water.make a fine paste.add salt &1 kokum &again grind it only for 5 seconds.you can add water if it  is very thick..this tambli tastes very yummy with fish fry n rice. Zatpat Matar Paneer.. Recipe... Grind 2 medium Onions, 5..6 Garlic cloves , 1 inch Ginger piece.. Then in Pressure cooker take 2 tabsps of oil ..add 3..4 Black Pepper, 2 Lavang , 2 Small  Green Elaichi..  pinch of Shaha Jeera. Then add ground onion paste.. fry it till its rawness will be gone.. then add finely chopped  1 Tomato... Fry it till Tomato gets soft n well mixed.. Then add 1 Tsp.of Dhania powder, less than 1/4 tsp.Jeera powder, 1/2 tsp.Haldi  n 1/2   Tsp.red chilli powder.. keep stirring till oil separates from masala.. then add 1 tabsp.of  Dahi..mix it properly

My Thali Today.... Potato Soang ( Mangalorian type Potato red ,spicy Curry ), Tomato Rasam , Onion Salad , Rice Powder n Jowar Flour Mixed Bhakri , n....Rice.

  POTATO SOANG.. Recipe..  Boil the 4  potatoes in the cooker ..Remove skin.make pieces.  Chop 2 onions finely . Take 3 to 4 tabsps of coconut oil or any other oil in a pan. add chopped onions.fry till light brown . Add 1/2tsp.of haldi, 2 tabsps.of kashmiri red chilli powder,.add1 tabsp.of tamarind (imli)  Juice. Add salt,as per taste...add pinch sugar if u like (this is optional)..fry for 2 minutes.. Add potato pieces..mix it..add little water .. boil it till potato gets mixed with masala. Potato Soang is ready to serve.   TOMATO RASAM. .RECIPE.. Chop 2-3 tomatoes. grind it in mixie without water... In a vessel take 3-4 glass water,add tomatoes,2tbsp cooked n mashed dal or you can use  any left over dal.. add green chillies,crushed garlic,rasam powder.(or little sambhar powder or crushed  dhania jeera n black pepper powder ) , Add currypatta,dhania leaves,little hing,salt,sugar(optional),imli juice,&boil for 10  minutes on low flame.if needed add more water..boil till nicce Rasam

My Thali Today...Palak Tambli ..Palak n Coconut Thand Kadhi, White Tingalora Bendi (Curry of ButterBeans with red chilli n coconut, Beetroot Raita , Fried Patrada (Alu Vadi ), Kantoli (Spine Gourd or Phagil )Chutney , Methi Paratha... n....Rice

 Palak Tambli ..Palak n Coconut Thand Kadhi  Recipe...  Palak Tambli...Recipe: 1.In a pan put 1/4 tsp.ghee and fry 1tsp.jeera, , 2-3 green chopped chillies and add 1/4tsp.  hing 2.grind 1/2 grated coconut, leaves of 1 bunch boiled palak, and the above  tadka(ghee,jeera,green chillies,hing),tamarind and salt together,make a fine paste 3.add water in the paste and tambli is ready.no need of heating..(water may be added as  required) 4.serve with rice. Tingalorya Bendi(white beans red curry). Recipe.. soak white beans for 4hours.. cook it in pressure cooker till soft.. grind red whole chillies,some cooked beans,1tabsp.fresh grated coconut,little  imli(tamarind)..make a fine paste..then add tirfal seeds in it  ( this is optional.. you can  skip it. )& grind it 1 more time..  mix this masla with cooked beans,add salt..give a nice boil..  make tadka of oil & lots of garlic.. add it in curry..    Modaks n Diya Modaks for Arti.. Recipe.. Ingredients... For Stuffing.. 1..Fresh Grated Coconut...2 cups 2.. Jaggery or Gud.... 1.1/2 to 2 Cups ...as per taste 3..Elaichi powder.. 1/2 tsp 4.khismiss n cashew crushed if you like as much as you like.. 5.White Til...1 tsp. 6.Ghee..1tabsp. For outer covering... 1.Maida (Plain Flour ) 2.oil for Mohan ..3tabsps. 3. Salt.. as per taste. 4.water..as needed. Oil to deep  Fry. Method... Stuffing... 1. In a pan add ghee..add fresh grated coconut..add Gud .mix it nicely on low flamme  2. Add crushed cashew n khismiss in it..mix it Make the mixture dry..  3. Add Elaichi powder..mix it. &Keep it aside. Outer Covering.. 1.Mix Maida with salt & very hot oil mohan..mix it.. 2..then add water & knead it.. make hard dough like Poori dough. 3. Aamchi Wheat Flour n Gud Unde or Ladoo..

 Wheat Flour n Gud Unde or Ladoo.. Recipe... Ingredients.. 1..Wheat Flour.. 1 cup. 2.Gud.. 3/4th cup to 1 cup as per taste.. 3. Ghee..3 to 4 tabsps. 4. Elaichi powder 1/4 tsp. 5. Roasted n crushed Ground nuts. 6.water ..4 tabsps. Method.. 1. In a pan add Ghee n add Wheat flour in it.. Fry on a low flame till nice aroma n slightly  brown.Add roasted ground nut powder ..then keep it aside. 2. Then in a pan take Gud.. add 4 tabsps.of water.mix it n stir it on low flame for few  minutes.. 3.Add 1 tsp.of Ghee in it.. make nice syrup..do not keep for more time or ladus will be  hard. 4.Add Elaichi powder.then add Wheat flour in it.. mix it properly..then switch off the gas. 5..Apply few drops of ghee on palms.. n make ladoos with above Ladoo mixture when it is warm. Keep it in a plate..

For outer covering... 1.Maida (Plain Flour ) 2.oil for Mohan ..3tabsps. 3. Salt.. as per taste. 4.water..as needed. Oil to deep  Fry. Method... Stuffing... 1. In a pan add ghee..add fresh grated coconut..add Gud .mix it nicely on low flamme  2. Add crushed cashew n khismiss in it..mix it Make the mixture dry..  3. Add Elaichi powder..mix it. &Keep it aside. Outer Covering.. 1.Mix Maida with salt & very hot oil mohan..mix it.. 2..then add water & knead it.. make hard dough like Poori dough. 3. Jaggery or Gud.... 1.1/2 to 2 Cups ...as per taste 3..Elaichi powder.. 1/2 tsp 4.khismiss n cashew crushed if you like as much as you like.. 5.White Til...1 tsp. 6.Ghee..1tabsp. For outer covering... 1.Maida (Plain Flour ) 2.oil for Mohan ..3tabsps. 3. Salt.. as per taste. 4.water..as needed. Oil to deep  Fry. Method... Stuffing... 1. In a pan add ghee..add fresh grated coconut..add Gud .mix it nicely on low flamme  2. Add crushed cashew n khismiss in it..mix it Make the mixture dry..  3. Add Elaichi powder..mix it. &Keep it aside. Outer Covering.. 1.Mix Maida with salt & very hot oil mohan..mix it.. 2..then add water & knead it.. make hard dough like Poori dough. 3. Aamchi Traditional Udid & Rice Powder Chakli...

 AMCHI TRADITIONAL CHAKLI........ Ingredients:  1.dry roasted udid dal - 1 cup. 2.rice powder -    3.1/2cups. 3. salt to taste 4.unsalted butter (loni)- 2 tb sp. 5.til(sesame)- 1tb sp 6.jeera (cumin seeds)- 1/2 tsp 7.water to cook Udid dal... 3 cups. 8.oil to fry chaklis Instructions:  1. take a bowl add roasted udid dal, add 3 cups of water...and keep it in pressure  cooker .cook it for 3 to 4 whistles.. then grind it finely in the mixer. Do not add more  water.. 2.  Take rice powder,salt,butter,til,jeera and mix well.. You can even add red chilli  powder, Hingn dhania jeera powder or any masala you like ..But I have made it plain for  Pooja Naivedya.  3. Then add this in ground Udid Dal. and knead the dough. 4.make required round or long balls of the dough and put in chakli mould,make chaklis. 5.heat oil in a kadai /fry pan,& fry chaklis till crispy and golden brown on low flame 6.chaklis are ready to serve.and can be stored gor 10-15 days.

Chicken Puffs..... Puff Pastries filled with Chicken Kheema Served With Thai Sauce ..

 Chicken Puffs...  Recipe... Wash n clean the Chicken Kheema..We can make fresh Chicken kheema at home..by  chopping boneless Chicken breasts in a chopper or grinder.. In  pan take some oil..addd finely chopped 1 onion.add ginger garlic paste n fry till onion  becomes soft.. Then add chicken kheema in it.. fry for 5 to 6 minutes.. Then add 1tabsp.of Tomato sauce, some greens of spring onions..add 1tabsp of finely  chopped green capsicum.fry all the mixture for few minutes. Add 1/2tsp of Dhania Jeera powder, green chilli chopped finely, black pepper powder Mix it.. add salt as needed.. add 1/2 tsp.of soya sauce. Mix it.. garnish with dhania leaves..n keepit aside.. Then fill it in puff pastries.. seal the edges..  Then brush egg white on the top of puffs. Then grill it in the oven till it gets nicely puffed n crisp.. I have used Air Fryer to grill it.no  oil is used.. Serve it withTomato ketchup or Thai sauce or any sauce which you like..

My Thali Today... Rajma Masala , Cucumber -Onion Salad., Tambli ( with onion,ginger) , Fresh Potato French Fries...or Finger Chips...n...Rice.

  Rajma Masala.... Recipe... 1.. Soak  2 cups Rajma Over Night..  Morning Cook it with Adding Water In the Cooker for 2 Whistles.. 2.. Then In pressure Cooker take 3tabsps.of Oil Or Ghee add 2 cloves, 1Tejpatta, 1 Green  Elaichi, 4to 5 Black pepper, Fry for few Seconds.   Then Add 1 onion Paste 1tabsp.of Garlic n Ginger Paste, fry Till it becomes Slight Brown  and Then add 1 Finely Chopped Tomato... Fry till Tomato Becomes Soft..then Add Haldi ,  Red Chilli powder, Dhania Powder , Jeera powder  as per taste.. add Salt, mix it.. then add  Cooked Rajma in it.. Mix it Properly.. n again cook it For 3 to 4 Whistles..Garnish with  Dhania leaves n serve. ..( Keep Gravy thick as You like). Cucumber -Onion Salad.... Recipe... Make long pieces of Cucumber n Onion.. Sprinkle salt, pepper powder n red chilli powder on it.. Add some lemon juice.. Garnish with Dhania leaves n serve. Tambli ( with onion,ginger)... Recipe; we make different varietis of tambli..either with garlic,or with onion-ginger.
