My Thali Today....Batata Soang , Vaali n Dal Ambat ( Mangalorian Curry with Toor Dal n Malabar Spinach or Mayalu or Basale ) , Batata Sukki Bhaji , Mirchi Bhajiya , Beetroot Raita, Phulka ....n..... Rice.

  Batata Soang.... Recipe..  Boil the 4  potatoes in the cooker .. Remove skin.make pieces.  Chop 2 onions finely . Take 3 to 4 tabsps of coconut oil or any other oil in a pan. add chopped onions.fry till light brown . Add 1/2tsp.of haldi, 2 tabsps.of kashmiri red chilli powder,.add1 tabsp.of tamarind (imli)  juice. Add salt,as per taste...add pinch sugar if you like (this is optional)..fry for 2 minutes.. Add potato pieces..mix it..add little water ..boil  it till potatogets mixed with masala. Boil washed N chopped Green Vaali bhaji with some salt and water.  Cook1cup Toor Dal in pressure cooker till very soft. then mash it. add cooked bhaji in it. In tadka pan fry less than 1/4 methi seeds in few drops of oil add 3-4 whole red bedgi  chillies in it. grind together fresh 1 cup grated coconut,small piece of imli , 1/tsp haldi,and fried methi  & red

My Thali ...Rajasthani Dahi Kadhi , Batata Talasani , Methi Batata Bhaji , Black Pomfret , Bangda Fish Rawa Fry ... n...Rice.

 Batata Talasani... Recipe.. Peel the Potatoes.. Make long n thin Pieces like we make for Finger Chips or French Fry.. Make Tadka with Oil , add lots of Crushed Garlic, Whole Red Chilli, fry it till brown . Add Haldi , red chilli powder, salt ,little of gud or sugar to taste (optional).. mix it nicely...keep the lid.. cook it till Potato get cooked.  Then saute it till it become slightly crisp.  Talasani is ready to  serve. Methi Batata Bhaji.. Recipe. In a pan heat oil .add some  rai,3 crushed garlic  fry little,add hing,haldi,red chilli powder. add green chillies,then add 1finely chopped big   onions,fry for few seconds   add potato pieces.add sugar,salt and cover the  pan . cook till potatoes get cooked.add methi  leaves.cook for few minutes.use little water if  you need .  Rajasthani Dahi Kadhi.. Recipe... Ingredients... 1.Dahi 1n1/2 cups to 2 Cups. 2. Besan 4 tabsps. 3.Green chillies 3 to 4  4.Ginger..1 inch piece. 5.oil..3to 4 tabsps. 6.Rai.. 1tsp. 7.Methi seeds.. 1/4 tsp. 8.Jeera.. 1tsp. 9.Whole Red Chillies.3 10.Hing.. 1/2 tsp. 11.Haldi..1/2 tsp. 12. Saunf..1/4 tsp. 13. Dhania seeds..1/4 tsp. 14.Red chilli powder..1/2 tsp. 15. Ghee ..1tabsp. 16.dhania leaves..for Garnishing. 17.Curry patta.. 10 to 12 18. Salt as needed.. 19.Water as needed. 20. Kasuri Methi..1/4 tsp. Method.. Whisk Dahi in a bowl.. add chilli powder, Haldi n  little of salt,n then add water atleast 4 to 5 cups. Make tadka in kadhai.. add oil in it.heat it. Add rai, Methi seeds, Jeera, dhania seeds, saunf chopped green chillies, n chopped ginger, saute .. Then add hing,n curry patta in it..  When tadka is ready ..add dahi mixture in it.. n  keep stirring till it gets boil.. stirring  continuously avoids dahi curdling. Parathas Stuffed with Veggies, Chicken Kheema, Chicken Sausages, Mozzarella Cheese...These Parathas can be made with only Veggies.

  Parathas... This is very tasty , yummy Parathas ...we can stuff anything which is available  at home..very quick recipe.Everyone likes to have it for lunch , dinner or as a breakfast..  We can eat it with Tomato Ketchup, Curds or any Chutneys..we can enjoy without any  side dish. We can make these Parathas with only any Veggies n without using Chicken.. Recipe...  Knead Chapati Dough with wheat flour, salt, little of oil n water as needed. Then keep it covered for 15 minutes. Chop finely 1 Onion. Grate 6 to 8 Garlic cloves. Chop greens of spring onion.. Chop 2 Green Chillies Finely. Chop finely Dhania leaves. Chop finely 1 small capsicum. In a bowl take coed Chicken Kheema 1/2 cup..you can use left over dry kheema if you have .  Mix in Steamed 2 Chicken Sausages n chop in to small pieces. Then add onion, green chillies, garlic paste,pinch of  pepper powder, Haldi, Red chilli  powder as per taste, Add Mozzarella Cheese 3 tabsp.or as much as you like, add Lots of  Dhania leaves..choppe

My Thali Today... Radish n Onion Sukke , Dudh Pithle ( Milk Pithle ) , Vangi Bharit , Phulka ....n... Rice.

  Radish n Onion Sukke...  Recipe.. This is a Mangalorean dish..  Peel the Radish. make big pieces of it. add 1 Onion big pieces,add salt & water ..then cook it till soft. You can cook it in pressure cooker for 2 whistles. then in a tadka pan fry 1\2 tabsp. of dhania seeds, 1/2tsp of white udid dal,7-8 methi seeds.t,& 3-4 red whole chillies in few drops of oil. then grind fresh grated coconut, above fried things,haldi,&little of chinch wtth water & make paste.  then add it in cooked Radish...add little gud,some salt.& boil it.. keep very little gravy..it shud be sukka. then add tadka with coconut oil,rai,currypatta n  hing in it..  sukke is ready to serve. Dudh Pithle ( Milk Pithle )   This is a Simple Maharashtrian side dish..It is very different but very easy and quick  to make ..It tastes good with hot hot rice and any pickle and papad.. Ingredients... 1.In a kadai add 1tabsp.oil..when heated add1/4tsp. jeera,5..6..chopped or crushed garlic,fry till light brown .

My Thali Today.... Palak Gargatta..Maharashtrian Side Dish , Sprouted Vaal Birde (Dalimbi Usal ) , Tomato Saar with Coconut Milk. , Thick Slightly Spiced Green Chillies Bhajiya....n... Rice.

 Palak Gargatta... This is  a Maharashtrian Side Dish which goes very well with Rotis,   Steamed Rice, or Bread. Recipe.. Ingredients....  Fresh Palak (Spinach )...1 Bunch or 1.1/2 to  2 cups of finely chopped. Toor Dal... 3/4 th cup. Chana Dal.. 2 tabsps. Ground nuts...1 to 2 tabsps..as per taste. Green Chillies.... 4 to 5 as per taste. Garlic... 7to 8 cloves. Salt.. as per Taste.or 1/2 tsp. Haldi..1/2 tsp. Tomato....1 Medium..chopped Gud.. Small piece. Besan..1 tsp.full. Oil ..1n 1/2 tabsps.for Tadka. Rai.. 1/2 tsp. Jeera.. 1/2 tsp. Curry patta.. 8 to 10  Hing... 1/4 tsp. Method... Wash both Toor dal n Chana dal properly.. add groundnuts in it.. then add chopped  Tomato in it..  Take it in 1 separate vessel of pressure cooker. Add water as needed to cook it. Then in another pressure cooker vessel take Chopped palak. Dont add any water..  Then both vessels keep it in pressure cooker.. keep  chopped Palak vessel above dal   vessel. Cook it in pressure cooker for 3 to 4 whistles. Then m

 Puffed Spring Onion Masala Poori. Recipe... Spring Onion.. chopped Finely ..1cup..as per   taste. Wheat Flour.. 1 to 1/2 cup Besan...1 to 1/2 tabsps. Haldi..1/2 tsp. Red Chilli Powder..1/2 tsp.or as per taste. Salt..1/2 tsp or as per taste Sugar.. Pinch.or little more. Hing ..Pinch. Garlic.. Grated 1 tabsp. Green chillies ..1  chopped n crushed. Jeera.. 1/2 tsp. Water as needed to kneat Dough. Oil..In dough..1tabsp. and as needed to deep fry  Pooris. Method.. In a bowl take take fresh Spring Onion  chopped Finely . Add salt,haldi, pinch sugar ,  Add hing or Grated Garlic, crushed green chillies n jeera,1tab sp oil... Mix it nicely. then add wheat flour n Besan.. and knead dough with water as needed. keep dough aside for 5 to 10 minutes. then heat oil...deep fry rolled round Poories.. n serve with any sauce which you have.

Magge ( Yellow Cucumber ) Neer Dosa or Paanpole With Coconut Red Chutney...

 Magge ( Yellow Cucumber ) Neer Dosa or Paanpole.... Recipe... Ingredients:  Rice-2cups coconut-1cup Magge ( Yellow Cucumber )- Peeled n seeds removed n then  Grated...1 cup or more as per taste. salt-as per taste sugar(optional)-very little water-to grind oil-to spread dosas on tawa Instructions:  1-soak rice for 3-4 hours in water. grind rice,grated coconut, Grated Magge ,salt and sugar(optional)with water in a fine paste. 3-add some water and make that paste thin to spread dosas. 4-The batter doesnt need fermentation..we can make dosas immediately  4-take non stick tawa and spread thin dosas on it 5-apply some oil on tawa to take out dosas easily. while spreading batter on tawa..do not pour it in the middle of tava..but take a hot pan in  the hand & pour it from the side n go on rotating tava round..so tht batter willl be spread  evenly..n will be thin like lace..keep the batter thin. We can remove Paanpola without turning the side of it while frying.. or we can fry it  slightly

  Vegetable Samosa.. Recipe... Ingredients..  Ready made Samosa Patti. For Stuffing.. Potato... 2 Green peas...2 cups  or more as per your choice. Onion... 1 medium. I have used only these veggies.. but if you like you can add Cauliflower, French beans, or Carrot. Ginger Garlic paste... 1 tabsp. Dhania powder ...1 tsp. Jeera powder..1/2 tsp. Goda masala or Garam masala .. 1/2 tsp. Green Chilli..1 chopped finely. Haldi.. 1/4 tsp.. Red chilli powder.. 1/4 tsp. Dhania leaves..1 to 2 tabsp. Salt..as per taste. Oil for tadka n oil for deep frying Samosas. For Sticking paste... Maida 2 tabsps.. with some water about 2 tabsps. Method.. 1st prepare stuffing for Samosas. Take a pan add oil in it.. add chopped finely onions. Then add ginger garlic paste in it..saute it. Then add chopped thin n small pieces of peeled potatoes.. sauteit. Then add Peas in it n if you want add chopped finely other veggies. Saute properly n add haldi, Dhania powder, jeera powder , Goda masala or garam  masala, red ch

My Sunday Thali ....Corn Cob (Maka Kanis ) Masala , Vangi Talasani.. (Brinjal Dry Sabji ) , Tomato Rasam , Amla( Full Amla n Green Chillies Preserved in salt water) Chutney or Gojju , Bombil Fish Fry ... n...Rice

  Corn Cob (Maka Kanis ) Masala... Recipe.... Make pieces of  Corn Cobs...Steam these pieces with some salt in cooker or steamer. take 1sp.oil in a pan roast all whole garam masala like dhania seeds, lavang, dalchini,  black pepper, for 1 minute take 1tab sp.oil in a pan roast long cut onions,garlic cloves,ginger piece,fry untill light  brown add grated dry coconut and roast it till coconut gets little brown. grind above roasted garam masala,roasted onion coconut,red chillies,little dhania leaves  together with water and make fine paste. take 3tabsp oil,add tomatoes fry for few minutes, add corn cobs pieces,add ground above  masala,salt as per taste,add water and cook it .keep gravy as you require. garnish with dhania leavesa..Corn Cob masala is ready to serve. Vangi Talasani.. (Brinjal Dry Sabji )... Recipe.. Make long n medium thin pieces of any  Size of Vaangi  .. 250gms. In a pan make Tadka with oil 2 tabsps.. add crushed Garlic cloves..7to 8 , Add whole red  chilli pieces..1 or 2.

Soft n Spongy Rice n Dal Dhokla With Green Chutney for Breakfast...

  Soft n Spongy Dhokla With Green Chutney for Breakfast.... Thanks to  Madhura's  Recipes for such a yummy n healthy Dhokla.... I have made some variation in  measurements as per my liking.. Recipe.. Ingredients....  Rice ...any Rice.. I have used my regular Basmati Rice.... 1 cup Poha..1 cup. Chana dal.. 4 tabsps. White Udid dal.. 4 tabsps. Yellow Moong Dal... 4 tabsps. Garlic..7to8 cloves. Green Mirchi... 4 or as per taste.   n 5 to 6 Green Chillies to be fried in tadka. Oil..for tadka... 4 tabsps. Rai... 1 tsp. Jeera..1/4 tsp. White Til (Sesame Seeds)... 1 tabsp. Hing.... 1/4 tsp. Haldi..1/2tsp. Dhania Leaves...to garnish.. Salt ..as per taste . Eno....Fruit salt... 1 tsp. Method... Soak Rice, Chana dal, Udid dal, Yellow Moong dal tigeter in water for 5 to 6 hours. Soak Poha in little of water just ten minutes for grinding. Then Grind Rice n Dal  mixture n Poha together in the grinder till fine paste..use   minimum water as needed to grind. Keep batter thickness just as Idli bat

My Thali Today... Bharali Vangi (stuffed brinjals , Sprouted Alsandya (Black Eyed Beans) Ambat... (Amti with coconut ground masala ) , Kook or Koork (Chinese Potato) Upakari or Bhaji, Mixed Lentils Usal.. ( Mixed Kadadhanya chi Usal ) ,..n...Rice

  Bharali Vangi (stuffed brinjals).... recipe... Give cross slits to Small Vangi(brinjals) 250gms.. fry without oil 2 long cut onions 2 in oil till it becomes soft.. Then add 2 tabsps of dry grated coconut  (sukha Khopra ). &  3 to 4 Garlic cloves..Fry till  sukha khopra onions becomes slightly brown.. Then Grind it with some Dhaia leaves ..Take it in a bowl.. add Goda masala 2 tsp. ,Red  chilli powder 1/2 tsp., Haldi 1/2 tsp, roasted Ground nut powder 2 tabsps.,small piece of  Gud, salt as per taste.and little of imli juice. Mix it properly. stuff this masala in Brinjals. In a pan add oil,rai,hing,haldi..add brinjals in the tadka..stir for few seconds.. Add little water to cook..keep lid & cook it till brinjals get cooked.. Garnish with Dhania leaves . Serve with chapati,bhakri,or rice..
