Recipe Description:
Bharva Bhendi is a Sindhi side dish..i learnt it from my friend Taruna Rao.this dish is very tasty when served
with rotis..
Ingredients:
1.Bhendi(lady finger)-250gms.
2.Potatoes-2-3
3.Onions-2
4.Garlic-5-6 big
5.Green Chillies-4
6.Dhania powder-2tabsp.
7.Amchur powder-1/2tsp.
8.Garam masala-1/4tsp.
9.Pepper powder-less than 1/4tsp.
10.Kashmiri red chilli powder-1tsp.
11.Salt-as per taste.
a12.Oil-1tsp.and 4tabsp more.
Instructions:
1.pound together(crush)onion pieces,chopped garlic,and chopped green chillies in the pestle.make coarse
paste.
2.To this paste add haldi,dhania powder,amchur powder,garam masala,black pepper powder,red chilli
powder,salt,and mix well.
3.Add 1tsp oil in the mixture.
4.Slit Bhendi and fill in the masala mixture in it.Peel the Potatoes.and make round thin slices.
5.In a vessel put oil (little extra), make a layer of raw potato slices dipped in the masala then spread a layer of the bharva bhendi on it.and cook for 15minutes on low flame covered with a plate with little water on it.keep some heavy weight on it.
6.Then remove lid,and fry for few minutes.Garnish with dhania leaves.
7.Bharva Bhendi is ready to serve with hot rotis.
