My Thali...Grated Suran Andhra Bhaji.. Yam Sabji , French Beans Kismur , Vilayati Dal , (Simple Dal Varan with Kanda, lasun ) , Gongura Chutney.. Tangy n Spicy Andhra Chutney....n...Rice.


 

French Beans Kismur

Recipe..


Ingredients:

1.parasbi(french beans)- 250gms,finely chopped.

2.onion -2 small, finely chopped.

3.grated coconut - 3/4-1 wati

4.green chillies-2 long slits.

5.lemon juice -1 tsp or to taste

6.salt to taste

7.dhania leaves- finely chopped for garnishing

8.oil - to fry (appx 2-3 tb sp)


Instructions:

1.heat oil in a fry pan add chopped parasbi, little 

salt, green chilly and fry till its crispy and light 

brown.

2.In a serving bowl, add onion,grated coconut, 

little salt, fried parasbi, dhania leaves and 

lemon juice and mix well.

3.garnish with dhania leaves and serve.



Grated Suran Andhra Bhaji.. Yam Sabji

Recipe..

Remove skin of Suran.. you can take Suran piece 

as much as your need.

Grate it thicker  not fine.

Then place it in a dish n steam it in a steamer    

or  in pressure cooker without whistle for 5 to 7 

minutes. Do not add any water in grated suran.

Then in a pan make tadka with 2tabsps.of oil, 

add 1tsp. udid dal ,1/4 sp rai, little of jeera , haldi

2green chilli long cut, n red dry chilli, currypatta

When rai splutters n tadka is ready 

add grated steamed Suran..add salt as per taste. 

Stir fry n mix it nicely for 3to 4 minutes.

Grated Suran Bhaji is ready to serve.



Vilayati Dal , (Simple Dal Varan with Kanda, lasun ) ...

Recipe...

My Amma used to call this Vilayati Dal..as it doesnt have any masala or spices.. but tastes 

very yummy...this is my most favourite Dal since my childhood to till now.


Soak Toor dal for 1/2 an hour .then add 1small 

onion medium chopped pieces..add 4 Crushed 

Garlic, add Haldi ..and cook it in pressure cooker   
for 4 to 5 whistles.

 It shud be cooked very soft..no grain shud be 

seen...then remove it in vessel..add little 

sugar n salt  as per taste.. add home made ghee 

2tsp.while boiling.

Keep slight thick like other varan.. boil it nicely 

adding some water if needed..

While serving on rice add some ghee again n 

serve.

 Gongura Chutney.. Tangy n Spicy.....




This is Andhra traditional Recipe.. 

Recipe..

Gongura leaves means Ambadi leaves.. these r 

green leaves with red stems.. it is sour in 

taste. Commonly Gongura is known as Spinach 

Dock or Red Sorrel.


Recipe...

Ingredients..


Gongura leaves..1 bunch

Garlic.. 10 to 12 cloves.

Udid dal.. 1tabsp.

Rai..1/4 tsp.

Jeera.. 1/2 tsp

Whole Red chillies..3to 4

Green chillies..2 optional

Oil..as needed 2to 3 tabsp.

Salt ..as per taste..


Method..

Separate green leaves from stems. Use only leaves .. 

Then nicely wash it in salt water.

Take a pan. Add 1 to 2 tabsp.of oil.after it is 

heated add Gongura leaves on low flame 

nicely fry it for 3 to 4 minutes .. it shud be fried 

perfectly or chutney will be sticky.

all leaves will shrink  n change the colour n look 

liked mashed completely..then keep it 

aside..

Then again in a pan.add 1 tabsp.of oil. Add 

mustard seeds, udid dal, whole red 

chillies,jeera, green chillies ,fry till slightly 

brown add garic 5 to 6 in it.stir it.. n switch off 

the gas.

Then let all ingredients cool down .

Then put it in the grinder adding salt, n fried 

Gongura leaves .

Grind it adding very little water in it. Do not 

make chutney watery.. it shud be properly dry.

Remove this ground Chutney in the bowl.

Make tadka with oil n remaining  garlic . Fry it n 

add on the top of Gongura Chutney..

Gongura Andhra styled Chutney is ready to 

serve.

Lacy Neer Dosa or Panpole With coconut Garlic Chutney For Breakfast..

 Lacy Neer Dosa or Panpole.. Here is recipe. Ingredients... Rice...1 cup Fresh Grated Coconut.. 1/2 cup. Sugar.. 1 tsp.(optional ) Salt.. as per taste. Water...as needed. Oil..For Frying Dosa Method... 1-soak rice for 3-4 hours in water. 2-grind rice,grated coconut,salt and sugar(optional )with water in a fine paste. 3-add some water and make that paste thin to spread dosas. 4-take non stick tawa and spread thin dosas on it 5-apply some oil on tawa to take out dosas easily. Coconut Garlic chutney.. Grind fresh 1 cup fresh grated Coconut ,  4 to 5 Garlic cloves, small piece of chinch (Imli) 2 or 3 Whole Red Chillies n salt with some  water. Chutney is ready to serve.

Rice Oondi (Undi) & Lasun (Garlic) Gojju (Chutney)

Rice Oondi (Undi) & Lasun (Garlic) Gojju (Chutney). Recipe.... Ingredients.. Rice Idli Rawa...2 cup Fresh Grated Coconut... 1/2 cup.. (4to 5 tabsps) Water...4 cups. For Tadka.. Oil.. 2 tabsps. Rai..1/2 tsp. Curry patta.. 8 to 10 Whole red chilli..2 or 3 Hing..1/4 tsp. Salt...as psr taste or minimum 1tsp. Sugar..1tsp.  Method.. Wash 1 wati idli rice rawa & keep. make tadka of oil,rai,red chillies,curry  patta,& hing. then add water .. while boiling add rawa,2 to 3 tabsp.grated  coconut..salt, sugar. mix it.& make it dry  like upma.. then make round undies with hand..make a  small whole in the middle.. steam it like idlis..undies r ready to serve... Serve it with Lasun Gojju. Lasun (Garlic ) Gojju ( Chutney) Recipe... Grind Grated fresh coconut 1cup with garlic 3..chinch small 2 pieces ,  3whole red  chillies & salt as per taste with little  water. sprinkle some coconut oil on it. (This is optional)
