My Thali Today..... Rice Shevai n Sweet Rass with Batata Soang , Tomato Hot n sweet chutney , Appinmidi Kairi Lonche , n Coconut oil to serve with Shevai.. hope you all will like it..


Rice Shevai..

Extremely tasty & traditional aamchi style noodles.Looks and sounds difficult but actually very easy to make.. Shevai n Sweet Rass is a very traditional Amchi dish... We always say Atithi Devo Bhav.. and so in my childhood my mother used to make this special dish whenever we had guests for lunch or dinner..and guests used to enjoy it .. but today no guests but I made it..why you know?? My grand daughter Ira loves this .and yesterdsy night she asked me Amma can you plz make Shevai n Rass ??..so I fulfilled her Farmaish happily.. 

Here r my recipes....

Rice Shevai...

Ingredients: 


1) 2 n1/2 wati rice(soaked in 4 wati water for minimum 4-5 hrs)

2)Grated coconut 1 1/2 wati

3)salt to taste

Method...

1.grind soaked rice and grated coconut,with the same water in required quantity.make fine paste

2.Heat it on a pan on low flame add little salt,keep stiring all the time till the

 water evaporates and it becomes a thick dough and it should not stick to the

 hands and can be moulded into shapes easily

3.switch off the gas and let it cool for sometime.

4.then when its warm dip hands in water and make long or round balls

 accordingly required.

5.then steam it in cooker like idlis. without whistle (appx 10-12 mins)

6.then put the steamed balls in the shev mould and make shevais.

Tip:to keep the steamed rice balls hot, do not switch off the gas, keep on low flame until the whole shevais are done

SWEET RASS

Ingredients...

1. grated coconut  2 cups

2.jaggery a little more than 1 wati(variations according to taste)

3.elaichi powder 1 tsp or more

Method..

1. extract coconut milk by 

grinding the grated coconut 
with water

strain the coconut milk thru the strainer,repeat this twice.

2.add jaggery in the coconut milk and mix well and then add elaichi powder.

3.Rass is ready to serve.

4.tastes well with a topping of little ghee on the shevai..


Tomato Hot n Sweet Chutney...

Ingredients: 

1. Red ripe Tomatoes - 7-8 finely chopped

2. Green chilly - 2 medium spicy long slits.

3. Red chilly powder - 2 tsp.

4. turmeric - 1/4 tsp

5. Jaggery - 2-3 tbsp

6. salt as per taste.

7. oil for tadka - 2 tbsp

8. Mustard seeds - 1/2 tsp

9. hing - 1/2 tsp

10.methi seeds(fenugreek) - 1/4 tsp


Instructions: 


1. In a fry pan make tadka of oil, mustard seeds, methi seeds, hing, turmeric, red chilly powder.

2. Add the finely chopped tomatoes and green chillies.

3. Add salt and jaggerry and stir well.

4. cover with lid and cook on medium flame for appx 15 mins.

5. tomato chutney is ready to serve.



Batata Soang....


Recipe.. 

Boil the 4  potatoes in the cooker ..


Remove skin.make pieces. 


Chop 2 onions finely .


Take 3 to 4 tabsps of coconut oil or any other oil in a pan. add chopped onions.fry till light brown .


Add 1/2tsp.of haldi, 2 tabsps.of kashmiri red chilli powder,.add1 tabsp.of tamarind (imli) 


juice.


Add salt,as per taste...add pinch sugar if u like (this is optional)..fry for 2 minutes..


Add potato pieces..mix it..add little water ..boil 

it till potatogets mixed with masala.


Potato Soang is ready to serve

 Maharashtrian Goda Masala...    Its a Home made Fresh Maharashtrian  Brahmani Goda Masala powder..I use this this  Masala in my regular  dishes like Amti, Bharali  Vangi, or any vegetables , Many Vegetable   Sabjis,  Dal Rice Khichdi, or Masale Bhaat , we  can even spread this Masala with some oil on  rotis n make rolls n eat. We can make Masala  Chapati. It us used in making Cutlets.. we can  add it in aby non veg dishes with eggs, fish or  meat..  Ingredients..   Use same Big Wati or Cup for measurement . 1...Dhane ( Dry Coriander Seeds )... 4 Big Wati. 2...Regular Jeera (Cummin Seeds.)... 1/2 Wati 3....Shaha Jeera.. 6 tsps. 4...Lavang (Cloves ).... 4 tsps. 5...Dalchini (Cinnamon)... 8 to 10 pieces about 2  inch each. 6.... Bread Thalipeeth... Very Good Of Use Of Left Over Bread...

Bread Thalipeeth  Recipe... Ingredients.. Brread Slices...5 to 7 big Fine Rawa (Suji ) Green Mirchi (Chillies)..3..4 Garlic ..2 big Dhania leaves.. as needed Onion.. 1 big chopped finely Sugar... 1sp or as per taste Salt..as per taste Water.. as needed Oil.. for frying Method.. Put 5 to 6 bread slices in water..immediately press it n remove water n take it in a bowl, Then add 1cup fine rawa..add salt .little of sugar,  Add chopped finely green mirchi, dhania leaves.n little of garlic grated. ( this time I added 2tsps of green masala.i.I green chillies.,grated garlic n dhania leaves chutnney)   . Add chopped finely onion..n mix it nicely n make dough for thalipeeth.if you need some water u can sprinkle some on the dough n,make ot soft.. Take parching paper or butter paper then apply some oil n keep 1 ball of dough n press it  make round thin like  puri or chapati   Shallow fry it on a pan with applying oil from both sides,make churchuri ( crispy ) n serve it..
