My Thali Today....... Undhiyo with Available Vegetables At Home , Ghosalya Upakari (Ridge Gourd Bhaji , Jowar n Rice Flour Bhakri , Sabudana Papdi n Fryums Fry .... n... Rice.
Undhiyo with Available Vegggies At Home..
1.vegetables...5-6 small purple brinjals,green fresh valpapadi- 2 cups,
raw banana-1,ripe banana-1,fresh green peas-1cup,
yam (suran)-pieces-1/2cup,potatoes pieces-1/2cup , green fresh toor- only seeds-
1/2cup.
2.for muthia...methi leaves chopped finely 1cup,fine rawa-2tabsp,besan-1/2 cup,oil 2tabsp,haldi,red chilli
powder,goda masala,salt,gud -as per taste..
3.roasted dhania seeds 3tabsp and 2 tabsp jeera..
4.oil for tadka,rai,hing,red chilli powder,ajwain,white til(sesame seeds)-as per taste.
5.for green chutney..lots of green dhania leaves,green chillies, ginger,and lots of garlic or fresh green garlic ,
2 tabsp grated fresh coconut...
Instructions:
1.make slits to the purple small brinjals,
2 open &make half of val papadi..
3.keep fresh green peas,and green fresh toor ready,
4.make slits to 1 raw banana,1 riped banana(with skin),
5.make pieces of yam(suran).make pieces of potatoes.
6.dry roast dhania seeds&...jeera separately..make fine powder.
7.grind green chutney with lots of dhania leaves, green chillies, ginger, green fresh garlic(or regular garlic) and
little of fresh coconut with little water.
8.add dhania jeera above powder in it.. add little goda masala(optional),sugar or gud,add salt,red chilli powder, haldi.. mix it..
9.stuff this masala in to brinjals, both bananas...then apply this masala to the potato ,yam, sweet potatoes,
kand pieces.apply masala to valpapadi,green peas, and green toor.
10.make muthias of finely chopped methi leaves, little rawa,besan,add above green masala, little of roasted
dhania jeera powder,red chilli powder,haldi,little of oil.,salt,sugar..white til(sesame seeds),ajwain..mix and make balls.. deep fry it..
11.then in pressure cooker..take 4to 5 tab sp of oil.make tadka of rai,til,ajwain,hing,redchilli powder,haldi,&hing..then 1st add potatoes,yam and all ..then add papadi,add raw bananas, brijals,then all green seeds..then add above made muthias,add ripe banana....add little of water.and take only 1 whistle..
12.undhiyo is ready to serve with hot puris..

(Approximately )
2 cup - Ridgegourd
3/4 cup -Fresh grated coconut
2 Green chillies
Pinch of Asafoetida
Salt to taste
Chop the peel of Ridge gourd and wash it properly and keep for dry.
Once its dry chop it into small pieces.
Heat little oil in a pan,make tadka with rai, udid dal, green chilli , curypatta, 1whole red chilli, hing ,pinch haldi...
then add chopped ridgegourd add salt n Gud as per taste.. mix it..add some freash grated coconut..mix it.. add some water..n cover it.. n cook till ghosale pieces get well cooked n dry the remaining water in thr bhaji
Garnish with dhaniac leaves n serve.
Once it cool grind along with coconut,tamarind,salt and little water to coarse paste.
Phodniche Varan...
Recipe....
Cook 1 cup of Toordal with adding water hing, haldi n littke of ghee in a pressure cooker.. cook it till very soft.. then mix it properly so that no dal grain will be seen..
Then make dry grind n make coarse paste grated sukha khopra , garlic cloves, n green chilies.. n keep it aside..
Make takdka with ghee or oil..add rai, jeera, currypatta, , then add 1 finey chopped Onion (this is optional) saute it till soft....then add 1 finely chopped tomato..saute till it becomes slightly soft for 2 to 3 minutes.. add little of red chilli powder ,then add ground dry paste.. saute for few minutes..then add cooked mashed dal.. add water as per need, add dhania leaves, add salt n gud as per taste..boil nicely for 5 minutes keeping lid on it.. then garnish with dhania leaves n serve .
Light n Healthy Cooked Jowar n Rice Flour Bhakris...we call it Alaan Roti.. very Easy ..quick n Tasty Rotis..
Recipe..
Boil 2 cup of water adding pinch of salt..
once it gets boil add both Flours each1 cup ..mix it nicely.. then cover it.. n switch off the flame.. keep for 5 minutes covered..
then knead it nicely when it is hot.. you can use little more water of you need as water quantity depends on quaality of flour. The dough shud be just like chapati soft atta..
.Then keep it covered.. then take one by one round ball n again knead nicely n roll it round as big you like..
then roast it on tawa by both sides.. just twice you have to change up n down without any oil... it puffs up nicely.. only good kneading is needed.
then take it down apply ghee on it.. it remains soft for long time ..even till next day.. we can eat it with any powder chutney..or wet chutneys or with any curries...
For variation we can use rice flour or jowar or Bajra or Ragi Flour.. we can mix flours n make it as well... try it .. I make it regularly..
