My Simple Lunch Thali..Sprouted Matki Usal in Kolhapur Style, Boiled Tendli with Garlic, Buttermilk Kadhi, Khamang Kakdi, Potato Bhajiya ..n..Rice.
Kolhapuri Matki Usal...

Soak Matki in water in the morning..night remove water fully n keep it to get sprouts,
next day cook Matki with little salt n water in pressure cooker for 2 whistles..
in a pan fry 1onion long slices in few drops of oil.till soft n slighhtly browned..,add grated dry coconut 2to 3tabdps..fry it till brown..then grind it with ginger n garlic paste..make fine paste,
then in kadhai take little more oil add 1finely chopped onion.fry it for few minutes,
add 1tomato finely chopped fry till it gets soft.then add kolhapur kanda lasun red spicy masala powder in it.
then add fried ground coconut n onion paste in it..add cooked matki in it..n boil it properly..adjust salt n masala..garnish with dhania leaves n serve.
Boiled Tendli (Ivygourd ) with Garlic..
Its very easy..my grand kids love these boiled tendli..
crush tendlis slightly,add 5-6 Crushed garlic..salt n pinch of sugar..if you want add 2-3
green chillies,,add very little water n cook it in pressure cooker for 1to 2 whistles.very
simple but tastes lovely.for this tendli shud be small n tender.
Then serve it..
Khamang Kakdi
recipe ..
Peel Cucumbers,chop it in small pieces.
Add roasted groundnut powder
Add Dhania leaves, salt, pinch sugar If you like add some lemon juice ( optional ) .
Then add tadka with ghee, jeera n finely chopped green chilli, currypatta n pinch of hing.
Mix it properly,
Garnish with Dhania leaves..n serve.
