Gatte ki Sabji.. (Rajasthani Curry in my way )..
Recipe....
For Making Gatte...
In a bowl take 1 cup of Besan.. add 1/4 tsp of Haldi, 1/4 to 1/2 tsp of Red Chilli powder as per taste., Pinch of Hing, 1/4 tsp Ajvain , 1/2 tsp.of Crushed Dhania Seeds , 2 Tabsps of Ghee, Salt 1/4 tsp as per taste , 2tabsps of Dahi..
Then mix everything together niceLy..n add water just 1 tabssp if necessary. Make soft dough...then take small round ball n make it cylindrical long medium size rolls.
Then in a kadai take 3 cups of water n boil it nicely..then add these long rolls or tubes in it.. cover it n cook for 10 to 12 minutes till all the rolls rise up n start floating in the upper surface of water.. you can see white spots as bubbles on the all rolls .. it means these gatte r nicely cooked..
Then remove these rolls n cut small round pieces as you like.. you can see in my above pic.
In a bowl take 1 cup of Dahi,add 1/2 tsp of Haldi, 1/2 tsp of red chilli powder, 2tsps of Dhania Powder, Salt as per taste, mix it nicely..n keep it aside..
Then in a pan take 3to 4 tabsps of ghee or oil..make tadka with Jeera, Saunf, ..then add 1tabsp of garlic Ginger paste , fry it.. add 1 finely chopped Onion ( this is optional but I like to add ), fry it till Onion becomes slight pink n soft..
Then add all Dahi mixture in it.. keep stirring all the time or it will curdle fast.. go on stirring till you see ghee or oil on surface.. then add gatte n .remaining gatte boiled Water.. boil it till you need the thick curry as you want..add some Dhania leaves.. n then servevit.

Make Long pieces of Brinjal..as you like..
In a Fry Pan add little more of oil.. add Brinjal pieces.. Haldi ,salt, n Red chilli powder..n fry it till Brinjal pieces become soft n get fried ..
Brinjal fry is ready to serve..

Creamy,very tasty homemade shrikhand.very simple and easy to make.can eat with puris, chapatis or simply
Ingredients:
1. readymade full cream yoghurt - 1 kg
2. sugar powder - appx 8-10 tb sp
3. kesar milk masala or dry fruit powder - appx 1/2 tb sp.
4. saffron (kesar) - strands 7-8
5. cardamom(eliachi) & nutmeg(jaifal) powder - 1/2 t sp
6. soaked almond and pista's finely sliced for garnishing.
Instructions:
1. put the yoghurt in a muslin cloth,wrap it tight, hang it and let all the water strain out.keep it hung for at least
2. then put the hung curd in a bowl add powdered sugar and whisk it with hand blender / mixer till it gets
3. then add kesar milk powder / dry fruit powder, cardamom and nutmeg powder and mix well.
4. then sprinkle saffron strands and garnish with sliced almonds and pistas.
5.shrikhand is ready to serve
