Sprouted Vaal Birade(Dalimbi Usal) ...
Recipe
Soak Vaal overnight & give them sprouts..
make tadka of oil,add rai,jeera,chopped garlic,green chillies,hing,haldi,red chilli powder(optional),goda masala(or pinch garam masala),
then add sprouted val in it.add 2 kokums in it.stir for few minutes.....
add water &cook it till Vaal gets soft. Then add 2tabsps of fresh grated Coconut.
then add salt as per taste,little sugar,or gud..again cook it properly.
Garnish with dhania leaves.
Vaal birde or usal is ready to serve.
If You want to make it quick then you can make directly in pressure cooker.. add salt n gud n everything together n just cook for 1 or 2 whistles.then garnish with dhaniia leaves.
Karatya Koot or Karela Fresh Pickle..
Recipe...
Finely chop Karela... add some salt. Keep it for 15 minutes.. then squeeze it or wash it under the tap n squeeze it..
Shallow fry it in some oil in non stick pan..so more oil is not required..make it crisp..
In Tadka pan fry 1/2 tsp rai, 4-5 methi seeds, 1/2 tsp dhania seeds, ,red chillies 3-4, 1tabsp fresh coconut &some haldi & hing in 1/4sp of oil..grind this with some imli & water.
add fried Karela pieces in it.. mix properly..no need of heating ..Karatya koot is ready to serve..
This is not like other pickles which we can preserve it for long period.. It is a fresh pickle to be eaten only for day or 2 days as we use coconut in it.
Vaangi Talasani.. (Brinjal Sabji )...
Recipe..
Make long n medium thin pieces of any Size of Vaangi .. 250gms.
In a pan make Tadka with oil 2 tabsps.. add crushed Garlic cloves..7to 8 , Add whole red chilli pieces..1 or 2..
Then add Vaangi pieces in it.. add 1/4tsp.of Haldi , n 1/4 tsp of red chilli powder.. mix it..then add salt n pinch of sugar or small piece of gud ( you can skip this..this is optional )
Then cover it with lid.. cook just fir 2 to 3 minutes.. then remove lid.. n stir fry it till slightly crisp..
Vaangi Talasani is ready to serve.
Goad Varan...
Recipe..
Cook Toor dal nicely till it cooks soft n completely cooked in Pressure Cooker adding haldi, hing, Jeera, 3 ..4 Methi seeds, n ghee.
Then Remove it.. add water as much as you need.. boil it for 10 minutes nicely adding with salt n sugar as per taste... You have to add some seetness as this tastes yumm when we add gud or sugar in it.. then serve it with adding some lemon juice n ghee in it..Then serve it with hot hot steamed rice.
