My Thali Today.... Sprouted black Eyed Beans with Tender Bam boo Shoots Ambat (Alsandya Ambat ) , Bhendi Dry Sabji , Mooli Leaves n Knolkol Green leaves Bhaji , Tendli Kachri (Tendli Stir Fry , Phulka....n.... Rice


Sprouted Black Eyed Beans  With Tender Bamboo Shoots Ambat...Recipe

Soak 3 cups of black eyed beans in water for overnight,.next day remove water n keep in warm place for sprouts.then again add water in it,.n remove skin of each bean.then cook it with Tender Bambo Shoots Pieces ( you can skip it if you dont like or have it.) water n salt till it gets soft.n  well cooked.

Roast and 10 to 15 methi seeds and 2-3red whole chillies in 1/4tsp of oil.
then

Grind  1.1/2wati fresh coconut, small piece of chinch(tamarind),haldi, and above roasted masala with some water.make fine paste..then add this  ground masala in the mixture of well cooked beans.

Add salt &mix well..boil it.. 

Make tadka of 1t to 2tabsps of oil,I use coconut oil
add 1finely chopped onion,.fry till brown.and add in the curry..

Ambat is ready to serve with rice..


Mooli leaves n Knolkol Green leaves Sabji.... Recipe


Wash n clean the leaves of Mooli or Radish n Knolkol.. chop finely  about 3to 4 cups..n keep it aside..

In a pressure cooker add  2  tabsps .of oil ..add 3 Garlic cloves chopped finely ,add 1/4 tsp.of Rai , 2 Green chillies chopped , when Rai splutters add Haldi.

Add 1 finely chopped Onion,saute it ..then add 1 finely chopped Tomato.. saute it till all gets well mixed..then add 1/4 tsp.of Dhania powder, Pinch of Red chilli powder ..saute it.

Add chopped Green leaves in it.. mix it for few minutes.add salt n gud as per taste.. add 2 tabsps of  fresh grated Coconut.. mix it.. add some water..n close the pressure cooker.

Cook it for 1 or whistles.. this sabji becomes very soft n yummy to eat with Chapati or phulka.



Tendli Kachrya or Tendli Stir Fry.. Recipe


Wash n chop round thin slices of Tendli .. about 2to 3 cups.

In a Pan take 2to 3 tab oil.. after it becomes hot add Tendli slices in it.. Saute it.. then keep lid for some time n cook till tendli pieces become slightly soft ..then remove lid n keep frying it onmlow flame till it become slightly crisp n brown.. 

switch off the gas ..add salt n Red chilli powder as per taste.. mix it.cover it n keep.. 

Tendli Stir fry is ready to serve.



Bhendi Sabji.. Recipe..

Make pieces of Bhendi.. I have chopped it long..as shown in sabji pic.

In a pan add some oil.. add rai, 4 to 5 methi seeds , hing haldi , red chilli powder n 

Then add Bhendi pieces in it.. Keep stirring . Add salt as per taste.. keep lid for 3to 4 minutes.. then remove the lid n stir fry it till Bhendi becomes nice dry.n all stickiness goes.

Garnish with dhania leaves n serve.

My Thali...Grated Suran Andhra Bhaji.. Yam Sabji , French Beans Kismur , Vilayati Dal , (Simple Dal Varan with Kanda, lasun ) , Gongura Chutney.. Tangy n Spicy Andhra Chutney....n...Rice.

  French Beans Kismur Recipe.. Ingredients: 1.parasbi(french beans)- 250gms,finely chopped. 2.onion -2 small, finely chopped. 3.grated coconut - 3/4-1 wati 4.green chillies-2 long slits. 5.lemon juice -1 tsp or to taste 6.salt to taste 7.dhania leaves- finely chopped for garnishing 8.oil - to fry (appx 2-3 tb sp) Instructions: 1.heat oil in a fry pan add chopped parasbi, little  salt, green chilly and fry till its crispy and light  brown. 2.In a serving bowl, add onion,grated coconut,  little salt, fried parasbi, dhania leaves and  lemon juice and mix well. 3.garnish with dhania leaves and serve. ( Wheat Rava )... 1 cup Grated fresh Coconut...3/4 cup. Green Chilies... 3to 4 as per taste ..chopped finely. Grated Ginger... 1tsp.. or 1  inch Ginger piece. Salt..as per taste..
