My Thali Today.... Mango curry....Ambya Andurli or Ambyacha Kol.., Fresh Green Math (Chavali Green leaves or Green Amaranthus Leaves ) n Magge ( Yellow Cucumber ) Randayi, Vangi Batata Bhaji... (Brinjal n Potato Curry )....Phulka n Rice.
Mango curry....Ambya Andurli or Ambyacha Kol..
1. peel outer skin of 8 to 10 mangoes.add little water in all mango peeled skin.and take out all juice from it.
2. take big vessel &put all mangoes and above juice in it. add enough water .
3. add 1/2 tsp black pepper powder,1 or 2 green chillies(optional),jaggery(gud),salt.keep for boiling.
4. add 2tabsps of rice powder mixed in some water.. and add this paste in it and let it cook for 5 minutes.
5. make tadka. heat 1tabsp.ghee add 1/2 tsp.rai,1whole red chillies ,1/2 tsp hing and add in above curry and keep lid.
6. serve with rice.

Recipe..
Remove the skin of yellow cucumber means magge or raw papaya pieces...
then boil it with finely chopped Green Math leaves with some water adding salt , little of
jaggery n 1 or 2 crushed garlic.....
and make ground masala of whole red chillies , grated fresh coconut 1 cup n imli , n 2 crushed garlic ..
Make fine paste n add it in the cooked magge n math leaves.
add 1 green chilli while boiling.. nicely mix it n boil it.. then switch off the gas.. n add
tadka of ghee with lots of crushed garlic in it.. curry is ready to serve..
Vangi Batata Bhaji... (Brinjal n Potato Curry )....
Recipe...
Make pieces of Big Bharta Vangi or any types of Vangi..
Remove the skin of 2 potatoes.. make small pieces.
In a kadai take 2tbsps of oil.. add 2 chopped finely Garlic, 1/4 tsp.of rai,
after frying add some haldi, add 1 finely chopped Onion.. add green chillies 2.. fry it for some time..
add Potato pieces.. mix it n add some Malavani or any masala which you like..
add some chilli powder, mox it.n keep lid n cook potatoes till half done.. add finely
chopped 1 tomato pieces...stir it..then add Vangi pieces in it..
mix it add salt n gud as per taste..mix it cover it ..if needed add some water n cook it till potatoes n Vangi gets well cooked..
add some roasted ground nut powder (optional)..
garnish with dhania leaves n serve..
This Bhaji tastes good with Batata n Vangi Bhaji...
