My Thali Today.... Sprouted Vaal Birde( Dalimbi Usal ), Garlic Tadka Dal Thin Saar , Mashroom Chilli , Phulka , n... Mixed Vegetable Rice...

  Sprouted Vaal Birde (Dalimbi Usal) ... Recipe Soak Vaal overnight & give them sprouts.. make tadka of oil,add rai,jeera,chopped garlic,green chillies,hing,haldi,red chilli powder(optional),goda masala(or pinch garam masala), then add sprouted val in it.add 2 kokums in it.stir for few minutes..... add water &cook it till Vaal gets soft. Then add 2tabsps of fresh grated Coconut. then add salt as per taste,little sugar,or gud..again cook it properly. Garnish with dhania leaves. Vaal birde or usal is ready to serve. If You want to make it quick then you can make directly in pressure cooker.. add salt n gud n everything together n just cook for 1 or 2 whistles.then garnish with dhaniia leaves. My Thali Today.... Cauliflower Talasani , Fresh Green Peas Ambat, Suran Pickle , Malabar Spinach ( Vaali Leaves or Basale leaves or Mayalu Paan) Bhajiya, Phulka ...n....Rice

Fresh Green Peas Ambat... Recipe.... Cook some fresh Green Peas with some water n salt... You can cook it in pressure ccooker for 11 whistle..  Fry less than 1/4 methi seeds in few drops of oil add 3-4 whole red bedgi chillies in it. Grind Together fresh 1 cup grated coconut,small piece of chich( Imli , Tamarind) , 1/tsp haldi,and fried methi & red chillies in to a fine paste.  Add this ground masala in cooked Green Peas.. Add salt as per taste. boil it. then make tadka of oil and add 1finely chopped onion.fry till brown and add in curry.  Ambat is ready to serve. CauliFlower Talasani.. Recipe... Soft n Spongy Udid Dal n Regular Rava (Semolina ) Idlis With Coconut Green Chillies Chutney n Home made Dry Chutney Powder....

 Soft n Spongy Udid Dal n  Regular Rava (Semolina ) Idlis ..... Recipe.. Wash 3 to 4 times n then Soak White Udid dal 1 cup with less than 1/4 tsp.of methi seeds .. for 3 to 4 hours..  Then Grind it in fine thick batter.. Then add slightly roasted  Regular Rawa (Suji )..2 cupss... in the batter..add salt as per taste.. mix it well..n keep over night to ferment in warm place. Add 1/2 tsp.of Eno in it n mix it.. (you can skip this step if you dont like to add Eno.) Make Idlis in Idli moulds. Coconut n Green Chutney .. Recipe.. In Tadka pan add few drops of oil.. add slitted green chillies n roast it for few seconds..add hing in it.. then Grind it with fresh grated coconut, imli, 1tabsp.of phutana dal n little of water..  Add tadka with ghee or oil ,rai, currypatta n 1  small whole red chilli.. Green Chutney is ready to serve.

  Green Peas , Vaali ( Mayalu leaves or Malabar Spinach ), n kadgi (Raw Jack fruit ) Koddel ( Mangalore Curry ), Recipe.. Cook Green Peas n Vaali  in pressure cooker till soft.. Cook Jackfruit pieces with little salt In separate vessel in cooker. Grind red whole chillies ...fresh grated coconut,..little imli (tamarind)..make a fine paste.. You can add some Tirphals if you like.. but its optional.. if you dont like it ..you can make without it. Mix all cooked Vegetables together.. Mix this ground masala with cooked veggies ,add salt..give a nice boil..  Make tadka of oil  (Coconut Oil tastes good but its optional ) & lots of  crushed garlic..  Add it in curry.. Koddel  is ready to serve.. Corn Cob (Maka Kanis ) Curry... Recipe.... Make pieces of  Corn Cobs. take 1sp.oil in a pan roast all whole garam masala like dhania seeds, lavang, dalchini, black pepper, for 1 minute take 1tab sp.oil in a pan roast long cut onions,garlic cloves,ginger piece,fry untill light brown add grated cocon

My Thali Today.... Prawns Lipte (CKP style in my way ) ,Beetroot Raita , Dal Varan , Nogli (Lady Fish ) n Prawns Fry... n....Rice.

 Prawns Lipte..CKP Style in My Way...     Recipe.. Clean the Prawns.... Remove the black threads from it....apply some Haldi, Red Chilli  Powder n pinch of Hing..keep it aside.. Grind Green masala with lots of Dhania, Chopped Green Chillies, Grated Ginger  n Grated  Garlic, 1/4 to 1/2 tsp of Dry Dhania Seeds , n small ball of Imli (Tamarind). Apply this  masala to the above Prawns..mix it nice ly n keepit aside. In a Pan take oil.. add finely chopped Onion, fry till slightly pink..then add little of  Chopped Tomato pieces..add little of  Red chilli powder n Haldi..saute till get well mixed ..  then add above marinated Prawns.. Fry it nicely.. I have added some Finely chopped  Green Spring onions in it (this is optional ).. n added some water to cook the prawns..  then adjust the salt as per taste.. made it slightly dry .Prawns Lipte is ready to serve..This  Tastes yumm with Rotis, Bhakri, or Pav or even with rice.. My Simple Lunch Thali..Sprouted Matki Usal in Kolhapur Style, Boiled Tendli with Garlic, Buttermilk Kadhi, Khamang Kakdi, Potato Bhajiya ..n..Rice.

Kolhapuri Matki Usal... recipe...  Soak Matki in water in the morning..night remove water fully n keep it to get sprouts,  next  day  cook Matki with little salt n water in pressure cooker for 2 whistles.. in a pan fry 1onion long slices in few drops of oil.till soft n slighhtly browned..,add grated dry coconut 2to 3tabdps..fry it till brown..then grind it with ginger n garlic paste..make fine paste, then in kadhai take little more oil add 1finely chopped onion.fry it for few minutes, add 1tomato finely chopped fry till it gets soft.then add kolhapur kanda lasun red spicy masala powder in it. then add fried ground coconut n onion paste in it..add cooked matki in it..n boil it properly..adjust salt n masala..garnish with dhania leaves n serve. Boiled Tendli (Ivygourd ) with Garlic.. Its very easy..my grand kids love these boiled tendli..  crush tendlis slightly,add 5-6 Crushed garlic..salt n pinch of sugar..if you want add 2-3  green chillies,,add very little water  n cook it in pressur

Wheat Flour Soft Roti Without Kneading Dough Or Rolling It But With Liquidy Batter Served With Squids Chilli Masala...

 I saw so many posts of these Rotis without making n kneading or rolling dough like for regular rotis.. so Finally decided to try it.. Today it was 1st attempt of my trial.. next time surely can make more improvements..  Wheat Flour Soft Roti Without Kneading Dough Or Rolling It But With Liquidy Batter ... Recipe..  In a bowl take 1 cup of Wheat flour. Add 1/2 tsp of salt n 1/2 tsp.of sugar. Add 1 cup of water mix well.. then again add 1 more cup of water in it.n whisk it properly so that batter will neither thick nor thin.. keep that batter for 5 minutes. Then on a non stick pan ..pour the batter in  middle of that pan.n spread it evenly like dosa turning that pan slightly round. Thenflip it n change the side when you see upper side is completely dry.. then after flipping keep pressing sides on medium flame..so that Roti gets puffed fully.. n keep turning n pressing till it gets nicely roasted ..its the same method just like we do our regular rotis on a pan..no need of oil or ghee..th

My Thali Today....White Tingalavre n kook Bendi (Mangalore coconut curry with White Beans n Chinese Potatoes..or Koorka ) , Kearala Cabbage Thoran , Tambli ( Thand Coconut Kadhi with Onion n Ginger ), Tingalavre Pej Upkari or Saar Upkari ,Cauliflower n Capsicum Bhajiya (Fritters ), ...n....Rice

 Tingalavre n Kook Bendi(white beans red curry)..Recipe Soak white beans for 4 hours or Overnight...  Cook it in pressure cooker till soft.. Cook some Kook  in pressure cooker..then peelit n make 2 pieces. Grind red whole chillies,some cooked beans 1tabsp. ...fresh grated coconut,..little imli (tamarind)..make a fine paste.. You can add some Tirphals if you like.. but its optional.. if you dont like it ..you can make without it. Steamed Rice Shevai With Left Over Rice ,with Batata Soang n Sweet Rass..(Sweet Coconut milk with Gud n Elaichi Powder.

Rice Steamed Shevai ..... Leftover rice idiappam. Thanks Sabitha Shenoy for the recipe.very quick recipe.Her Recipe is From recipe from Ravikalakka.   Grind leftover rice adding little water n salt.  Now mix rice floor and make soft  dough .  Make shevai using sev mould.. Then spread  on idli stand and steam it for 5 minutes.  But as a variation I added 2 tabsps of instant coconut milk powder while grinding leftover rice in a grinder.it tastes yumm. Because of Coconut Milk powder Shevai became very soft . POTATO SOANG.. Recipe..  Boil the 4  potatoes in the cooker .. Remove skin.make pieces.  Chop 2 onions finely . Take 3 to 4 tabsps of coconut oil or any other oil in a pan. add chopped onions.fry till light brown . Add 1/2tsp.of haldi, 2 tabsps.of kashmiri red chilli powder,.add1 tabsp.of tamarind (imli)  juice. Add salt,as per taste...add pinch sugar if u like (this is optional)..fry for 2 minutes.. Crispy Sabudana Vada.... Tried to Make it With More Of Sabudana n Less of Potato n Peanut Powder.

 Sabudana Vada Recipe..   This Recipe is a slight different from what I make Sabudana Vadas Regularly.. If you want to try my these regular easy method of it you can watch it on my You Tube Channel... Vidya Baindur's Food World   Today's recipe I tried from Madhura's Recipe..but I  made some variations to it n tried this .. These Sabudana Vadas Were very crispy from outside n soft from inside.. n they look also very beautiful as we  cud see each Sabudana intact on it.. Ingredients.. 1.Sabudana- 2cups (soaked for 4-5 hours) 2.Roasted peanuts powder-  3 Tabsps. 3.Boiled Potatoes- 3 medium 4.Green chillies-3-4..chopped 5.Ginger-1/2 inch piece. 6.Jeera-1tsp. 7.Oil-for frying. 8.Dhania leaves-2-3tabsp chopped finely. 9.Salt-as per taste. 10.Sugar-less than 1/4tsp (optional) 11. Rajgira Flour or  Powder For Binding... 3 tabsps. Preparation.. 1.Soak Sabudana For 4 to 5 hours...then in a big open bowl Mix together Soaked Sabudana , roasted groundnuts powder, boiled,mashed Potatoes.

My Thali Today... Gatte Ki Sabji..(Rajasthani Curry in my way) , Brinjal Fry , Home Made Shrikhand , Fryums, Jowar Bhakri ...n... Rice

  Gatte ki Sabji.. (Rajasthani Curry in my way ).. Recipe.... For Making Gatte...  In a bowl take 1 cup of Besan.. add 1/4 tsp of Haldi,  1/4 to 1/2 tsp of Red Chilli powder as per taste., Pinch of Hing, 1/4 tsp Ajvain , 1/2 tsp.of Crushed Dhania Seeds , 2 Tabsps of Ghee, Salt 1/4 tsp as per taste , 2tabsps of Dahi..  Then mix everything together niceLy..n add water just 1 tabssp if necessary. Make soft dough...then take small round ball n make it cylindrical long medium size rolls.  Then in a kadai take  3  cups of water n boil it nicely..then add these long rolls or tubes  in it.. cover it n cook for 10 to 12 minutes till all the rolls rise up n start floating in the upper surface of water.. you can see white spots as bubbles on the all rolls .. it means these gatte r nicely cooked.. Then remove these rolls n cut small  round pieces as you like.. you can see in my above pic. In a bowl take 1 cup of Dahi,add 1/2 tsp of Haldi, 1/2 tsp of red chilli powder, 2tsps of Dhania Powder, Salt

Healthy , Spongy, Soft Udid Dal n Moong Dal Idli With Coconut Chutney....( Idli Without Rice...)

Udid dal n Moong Dal Idili..... Recipes.... Soak 1 cup white udid dal,& 1cup yellow moong dal together for 4-5 hours..  then grind it with water..add salt ..make thick batter like usual Idlis batter.. then keep for fermentation for 8-9 hours( I KEPT FOR WHOLE NIGHT) .. Add 1/2 tsp.of Plain Eno in it..mix it nicely.. this is optional. Make Idlis in in the Idli stand in the Morning.. (For Variation I add ... grind roughly green chillies, ginger without water..add it in batter jst before steaming..add 1tsp whole jeera, hing, curry patta pieces.. mix it nicely.. steam idlis as u want..no need of rice at all..) Coconut Chutney.... In atadka pan take few drops of oil..add 2..3 green chillies add 14sp of hing in it.. mix it.. switch off the gas..  Then grind it with 1 cup of fresh grated coconut , imli, salt, n 2 tabsps of Roasted Chana dal (Phutana Dal )... Add tadka with ghee or oil adding Rai, currypata, red whole chilli.. Chutney is ready to serve.

My Thali Today... Jeera-Mirya (cumminseeds n black peeper coconut kadhi , Palak Raita ,Red Pumpkin Phodi.(Lal Bhopla Phodi ), Cauliflower Talasani , Phulka ....n.....Rice

Jeera-Mirya (cumminseeds n black peeper coconut kadhi..Recipe.. In 1/tsp.ghee fry 2tsp jeera,1/2tsp miri(black pepper) ,2-3garlic chopped till light brown,add 1 or 2 red whole chillies in it..  grind this with 2wati fresh grated coconut in fine paste..  then add some water in this ground masala, add some salt, 2 kokum,and boil it for 2 minutes..  switch off the gas before it starts boiling..then add tadka of ghee and 4-5 garlic in it. kadhi is ready to serve.. Palak Raita... Recipe.... 1.wash & finely chop 1bunch of palak leaves. 2.Boil palak,chopped 2 to 3 green chillies,grated 1 inch ginger,salt as per taste ,pinch of sugar,and very little water for 5 minutes till palak is cooked. 3.switch off gas & add whisked 1 cup dahi in it. 4.make tadka of 1tabsp.ghee,1/2 tsp.rai, 1/2 tsp.jeera,1whole red chilly and ;pinch of hing and add in palak raita. 5.palak raita is ready to serve Red Pumpkin Phodi.. My Thali Today.... Jumping Potatoes , Palak Talasani ,Lasun Tadka Dal , Raw Mango Hot ,Spicy n Sweet Pickle , Pomfret n Prawns Fish Fry...n... Rice.

Palak Talasani Recipe... hop palak finely.. make tadka in a pan with oil..add rai,,udid dal, jeera, 3-4 garlic, 1red chilli,...2green chillies, currypatta, & haldi..add palak in it..  add some salt , pinch of sugar(OPTIONAL).. keep lid for 2 minutes.. palak talasani is ready to serve. Pomfret n Prawns Fish Fry... Recipe...  Apply haldi..salt..red chilli powder..& dhania leaves..green chilli &garlic paste(without water).. Then rolled in to the mixture of rawa n rice powder then shallow fried.. Garlic Tadka Dal...Recipe.. Pressure cook 1 Cup Toor Dal  till Dal cooks very soft.. then mash it or mix it till no  Dal grain remains.  Add water as much you need.. keep for boiling..add salt in it.. add haldi in it.. mix it.. boil it properly.. keep the thickness of Dal as you like. Make tadka with Ghee add cushed lots of Garlic n Whole Red Chilli pieces ..Fry till Garlic gets slight Brown..add tadka in Dal.. Lasun Tadka Dal is ready to serve. Jumping Potato... Recipe.. My Thali Today....... Undhiyo with Available Vegetables At Home , Ghosalya Upakari (Ridge Gourd Bhaji , Jowar n Rice Flour Bhakri , Sabudana Papdi n Fryums Fry .... n... Rice.

Undhiyo with Available Vegggies At Home..  recipe...Ingredients:  1.vegetables...5-6 small purple brinjals,green fresh valpapadi- 2 cups, raw banana-1,ripe banana-1,fresh green peas-1cup,  yam (suran)-pieces-1/2cup,potatoes pieces-1/2cup , green fresh toor- only seeds- 1/2cup. 2.for muthia...methi leaves chopped finely 1cup,fine rawa-2tabsp,besan-1/2 cup,oil 2tabsp,haldi,red chilli  powder,goda masala,salt,gud -as per taste.. 3.roasted dhania seeds 3tabsp and 2 tabsp jeera.. 4.oil for tadka,rai,hing,red chilli powder,ajwain,white til(sesame seeds)-as per taste. 5.for green chutney..lots of green dhania leaves,green chillies, ginger,and lots of garlic or fresh green garlic , 2 tabsp grated fresh coconut... Instructions:  1.make slits to the purple small brinjals, 2 open &make half of val papadi.. 3.keep fresh green peas,and green fresh toor ready, 4.make slits to 1 raw banana,1 riped banana(with skin), 5.make pieces of yam(suran).make pieces of  potatoes. 6.dry roast dhania seeds&am

My Thali .....Mutton Curry With Jowar n Rice Flour Bhakri , Cucumber n Onion Salad..& .... Rice...

  Mutton Curry... Recipe Instructions:  boil the 4 to 5 onions ,boil 2 tomatoes and grind n make fine paste.  grind 2 inch piece of ginger n 7 to 8 garlic  cloves ,dhania leaves and green chillies together and make a paste. Apply some green masala ,haldi n salt to mutton pieces.  n keep aside..  heat 2-3 tb sp oil in cooker, add tej patta, add 4to 5 Black Pepper, 2 Elaichi..fry onion n Tomato paste...  and saute for appx 5 mins.  add the ground green masala stir well, then add mutton .  stir for 5 mins &  then add  any Garam masala, or Meat masala , red chilli n powder  n haldi .saute for 5 minutes.add 1 cup of coconut milk in it.. (you can instant Coconut milk powder mixed in the water n made coconut milk).. cook for 4 -5 whistles, then cook again for 10 mins on low sim.   Garnish it with dhania leaves n serve.. Light n Healthy Cooked Jowar n Rice Flour  Bhakris...we call it Alaan Roti.. very Easy ..quick n Tasty Rotis.. Recipe..  Boil 2 cup of water adding pinch of salt..    once

My Thali Today....Bangda Fish Amshe Tikhshe ( Adding Raw Mango) , Alsanda Upkari (Black Eyed Beans Upkari , Vaal Papdi Bhaji , Bangda Fry ....n.... Rice.

 Bangda Fish Amshe Tikhshe... (Adding Raw Mango ) Recipe.. 1.Clean 1/2kg Bangda fish & make 2-3 pieces of each.add salt,haldi and keep aside  2.Roast 6to 8 red Bedgi chillies in few drops of oil for 1/2 minute. 3.Grind 4to 5 tabsp grated coconut,red chillies,1.4tsp haldi,2-3 garlic cloves,small ball of tamarind.make fine smooth paste with water. 4.Grind 5-6 tirfal with little water and strain it ..or just add tirfals in final round  of grinding masala,just grind it for 2 to 3 seconds. 5.Boil ground masala,tirfal water, by adding some more water. 6. Add Some Raw Mango thin slices in it while boiling.. 7.Add fish pieces and boil it till fish is cooked. 8.Sprinkle 1tabsp.coconut oil on the curry,cover with lid.curry is ready..serve with rice. Bangda Fish Fry..  recipe.. Clean Bangda Fish..wash it.. apply salt,haldi,red chilli powder.add 2-3 kokum pieces &mix it.make rough paste of dhania leaves,green chillies,lots of garlic.do not use water.apply this masala to the fish pieces..
