Rajasthani Dahi Kadhi..

Ingredients...
1.Dahi 1n1/2 cups to 2 Cups.
2. Besan 4 tabsps.
3.Green chillies 3 to 4
4.Ginger..1 inch piece.
5.oil..3to 4 tabsps.
6.Rai.. 1tsp.
7.Methi seeds.. 1/4 tsp.
8.Jeera.. 1tsp.
9.Whole Red Chillies.3
10.Hing.. 1/2 tsp.
11.Haldi..1/2 tsp.
12. Saunf..1/4 tsp.
13. Dhania seeds..1/4 tsp.
14.Red chilli powder..1/2 tsp.
15. Ghee ..1tabsp.
16.dhania leaves..for Garnishing.
17.Curry patta.. 10 to 12
18. Salt as needed..
19.Water as needed.
20. Kasuri Methi..1/4 tsp.
Method..
Whisk Dahi in a bowl.. add chilli powder, Haldi n
little of salt,n then add water atleast 4 to 5 cups.
Make tadka in kadhai.. add oil in it.heat it.
Add rai, Methi seeds, Jeera, dhania seeds, saunf
chopped green chillies, n chopped ginger, saute ..
Then add hing,n curry patta in it..
When tadka is ready ..add dahi mixture in it.. n
keep stirring till it gets boil.. stirring
continuously avoids dahi curdling.
Keep boiling till besan gets cooked properly..
add some dhania leaves. Then add Kasuri methi
in it.boil it.adjust salt in it.
Remove the kadhai from the gas.
Make one more tadka again with ghee..add rai,
jeera , curry patta,whole red chillies n pinch of
hing..n red chilli powder. Pour this tadka on top
of the ready Kadhi. Garnish with dhania leaves
n serve it with steamed rice.
