My Thali Today.... Palak Gargatta..Maharashtrian Side Dish , Sprouted Vaal Birde (Dalimbi Usal ) , Tomato Saar with Coconut Milk. , Thick Slightly Spiced Green Chillies Bhajiya....n... Rice.


 Palak Gargatta... This is  a Maharashtrian Side Dish which goes very well with Rotis, 

 Steamed Rice, or Bread.

Recipe..

Ingredients.... 


Fresh Palak (Spinach )...1 Bunch or 1.1/2 to  2 cups of finely chopped.

Toor Dal... 3/4 th cup.

Chana Dal.. 2 tabsps.

Ground nuts...1 to 2 tabsps..as per taste.

Green Chillies.... 4 to 5 as per taste.

Garlic... 7to 8 cloves.

Salt.. as per Taste.or 1/2 tsp.

Haldi..1/2 tsp.

Tomato....1 Medium..chopped

Gud.. Small piece.

Besan..1 tsp.full.

Oil ..1n 1/2 tabsps.for Tadka.

Rai.. 1/2 tsp.

Jeera.. 1/2 tsp.

Curry patta.. 8 to 10 

Hing... 1/4 tsp.


Method...

Wash both Toor dal n Chana dal properly.. add groundnuts in it.. then add chopped 

Tomato in it..  Take it in 1 separate vessel of pressure cooker. Add water as needed to cook it.

Then in another pressure cooker vessel take Chopped palak. Dont add any water.. 

Then both vessels keep it in pressure cooker.. keep  chopped Palak vessel above dal  

vessel. Cook it in pressure cooker for 3 to 4 whistles.

Then mash dal mixture  n palak properly. Mix it..

Grind or Crush Garlic cloves n Green chillies in a grinder without water.

Make Tadka in a kadhai.. add oil in it.after heated add  rai, jeera in it.. when rai splutter 

add Curry patta, hing, haldi.. then add mixture of green chilli n garlic in it.. saute for few 

minutes..while saute add besan in it.. fry till all raw smell  removed.

Then add palak n dal mixture in it.. adjust water as you like how much thick you like.

Add salt n Gud in it.. and boil it nicely for few minutes.. 

I have added some more curry patta in it while boiling ..this tastes very yummy.. 

Palak Gargatta is ready to serve.



Sprouted Vaal Birde (Dalimbi Usal) ...

Recipe..


Soak Vaal overnight & give them sprouts..peel each Sprouted Vaal.

make tadka of oil,add rai,hing,haldi,red chilli powder(optional),goda masala(or pinch 

garam masala),

then add sprouted val in it.add 2 kokums in it.stir for few minutes.....

Add  fresh grated coconut or grated dry coconut , Green chillies n garlic n Jeera.. Saute 

Vaal withA ll this masala..

add water & cook it till Vaal gets soft. 

then add salt as per taste,little sugar,or gud..again cook it properly.

Garnish with dhania leaves.

Vaal birde or usal is ready to serve.

Thick Slightly Spiced Green Chillies Bhajiya....

Recipe..


Make slit to the Green Chillies..

Apply salt,hing,as per taste.. 2tab.sp.dahi..mix it...keep it aside for 10 to 15 minutes.

Make batter of besan with 2 tabsps of Rice powder,hing,salt,chilli powder,dhania leaves,water.. 

Dip each Chilli  in the batter properly..  chillies shoud be covered properly with the batter..

Deep fry bhajiyas till crispy.

My Thali...Grated Suran Andhra Bhaji.. Yam Sabji , French Beans Kismur , Vilayati Dal , (Simple Dal Varan with Kanda, lasun ) , Gongura Chutney.. Tangy n Spicy Andhra Chutney....n...Rice.

  French Beans Kismur Recipe.. Ingredients: 1.parasbi(french beans)- 250gms,finely chopped. 2.onion -2 small, finely chopped. 3.grated coconut - 3/4-1 wati 4.green chillies-2 long slits. 5.lemon juice -1 tsp or to taste 6.salt to taste 7.dhania leaves- finely chopped for garnishing 8.oil - to fry (appx 2-3 tb sp) Instructions: 1.heat oil in a fry pan add chopped parasbi, little  salt, green chilly and fry till its crispy and light  brown. 2.In a serving bowl, add onion,grated coconut,  little salt, fried parasbi, dhania leaves and  lemon juice and mix well. 3.garnish with dhania leaves and serve. Grated Suran Andhra Bhaji.. Yam Sabji Recipe.. Remove skin of Suran.. you can take Suran piece  as much as your need. Grate it thicker  not fine.
