My Thali Today... Radish n Onion Sukke , Dudh Pithle ( Milk Pithle ) , Vangi Bharit , Phulka ....n... Rice.
Radish n Onion Sukke...
This is a Mangalorean dish..
Peel the Radish. make big pieces of it. add 1 Onion big pieces,add salt & water ..then cook it till soft. You can cook it in pressure cooker for 2 whistles.
then in a tadka pan fry 1\2 tabsp. of dhania seeds, 1/2tsp of white udid dal,7-8 methi seeds.t,& 3-4 red whole chillies in few drops of oil.
then grind fresh grated coconut, above fried things,haldi,&little of chinch wtth water & make paste.
then add it in cooked Radish...add little gud,some salt.& boil it.. keep very little gravy..it shud be sukka.
then add tadka with coconut oil,rai,currypatta n hing in it.. sukke is ready to serve.
Dudh Pithle ( Milk Pithle )
This is a Simple Maharashtrian side dish..It is very different but very easy and quick to make ..It tastes good with hot hot rice and any pickle and papad..
Ingredients...
1.In a kadai add 1tabsp.oil..when heated add1/4tsp. jeera,5..6..chopped or crushed garlic,fry till light brown .
2.then 1/2tsp.haldi and add2 to 3 cups of milk in it.add red chilli powder to it..let it boil.
3.add salt as per taste.
4 .when it is boiled ..start adding 3 to 4 tabsps of Besan ..stir continuously till Besan gets well mixed in milk..let some besan lumps remain.
5.keep till some lumps of besan in it..as it tastes nice in pithle.
Boil nicely till besan gets cooked..
6.Garnish it with dhania leaves.
7.Dudh (Milk) pithle is ready to serve with rice.
Vangi Bharit ..
This is a Brinjal Bharta just like Chutney... Here I
have used Green Big Brinjal.
Recipe..
Apply little oil to a Brinjal.. Then roast it on Gas
flame from all sides till it gets well roasted. n its
Outer skin becomes fully black.
Then keep it aside.. remove blabk skin from it.
Mash it n keep aside.
Then in a pan take 2 to 3 tabsp of oil... heat it
Add jeera 1/4 tsp. ,Add crushed n chopped 8to 10
garlic cloves.. fry ot.. then add 1 finely chopped
onion.saute till it frys slightly..then add finely
chopped 1 Green chilli, 1 small finely chopped
Tomato.
Add some salt, add kanda lasun masala 1 tsp.
(Kolhapuri masala).. if you dont have you can
add malvani masala , or agri masala or koli
masala.,add Haldi 1/4 tsp., Add salt as per taste.
Saute all the mixture.keep the cover for few
minutes till all mixture gets well mixed.
Then add roasted Mashed Brinjal. Add 2 tabsps.
Of roasted ground nut powder (Shengdana koot)
Stir fry it for 3 to 4 minutes.till everything gets
well mixed.
Garnish with finely chopped dhania leaves.
Brinjal Bharta is ready to serve..
