Bharali Vangi (stuffed brinjals)....

recipe...

Give cross slits to Small Vangi(brinjals) 250gms..

fry without oil 2 long cut onions 2 in oil till it becomes soft..

Then add 2 tabsps of dry grated coconut  (sukha Khopra ). &  3 to 4 Garlic cloves..Fry till 

sukha khopra onions becomes slightly brown..

Then Grind it with some Dhaia leaves ..Take it in a bowl.. add Goda masala 2 tsp. ,Red 

chilli powder 1/2 tsp., Haldi 1/2 tsp, roasted Ground nut powder 2 tabsps.,small piece of 

Gud, salt as per taste.and little of imli juice. Mix it properly.

stuff this masala in Brinjals.

In a pan add oil,rai,hing,haldi..add brinjals in the tadka..stir for few seconds..

Add little water to cook..keep lid & cook it till brinjals get cooked..

Garnish with Dhania leaves .

Serve with chapati,bhakri,or rice..

( if you dont have goda masala you can use,garam masala, malvani masala, or amti 

powder).






 Sprouted Alsandya (Black Eyed Beans) Ambat... (Amti with coconut ground masala )


Recipe

Soak 3 cups of black eyed beans in water for overnight,.next day remove water n keep in 

warm place for sprouts.then again add water in it,.n remove skin of each bean.then cook 

it with water n salt till it gets soft.n  well cooked...(you can cook it in pressure cooker for 

only 1 whistle.)

Roast and 10 to 15 methi seeds and 2-3red whole chillies in 1/4tsp of oil in a tadka pan

Grind  1.1/2wati fresh coconut, small piece of chinch(tamarind),haldi, and above roasted

 masala with some water.make fine paste..then add this  ground masala in the mixture of 

well cooked beans.

Add salt &mix well..boil it.. 

Make tadka of 1t to 2tabsps of oil,I use coconut oil..you can use any oil 

add 1finely chopped onion,.fry till brown.and add in the curry..

Ambat is ready to serve with rice.






Kook or Koork (Chinese Potato) Upakari....  Bhaji .

Recipe....


Ingredients..

10 to 12 small Kook

Rai..1/4tsp

Curry patta.. 4 to 5

Crushed garlic cloves ..4

Whole Red chilli ..1

Salt to taste 

Gud ..as per taste.very little .( optional).


Method..

Peel Kook and make pieces.

 Heat little oil in a pan,make tadka with rai , curypatta, 1whole red 

chilli, crushed garlic .

then add peeled Kook pieces add salt n Gud as per taste.. mix 

it.. add some water..n cover it.. n cook till it get 

well cooked n dry the remaining water in the bhaji

Make it very dry  n stir fry for few minutes.itt gives nice flavour to Kook upakari.





Mixed Lentils Usal.. ( Mixed Kadadhanya chi Usal )...


recipe..

 soak Kulith , Matki (Moth), Brown Chana , Rajma, Green Whole Moong, Black Eyed 

Beans (white Chavali ) White Peas .. take each lentil as per your taste but take in small 

quantiity.) 

Soak it for 5 to 6 hours then remove water n keep it for sprouts for night  till all gets nice 

sprouts.

Cook all these sprouted lentils  with salt n water in pressure cooker.. 

make tadka with oil add rai, jera, chopped garlic, hing, haldi, Goda Masala, add finely 

chopped onion , green chilli chopped.fry till onions  get soft n pinkish colour..then 

add small chopped tomato,fry add chiil powder .

then add cooked lentils.,grated coconut  or grated dry coconut, add, salt.n mix it 

well,again cook it till it gets well mixed.then garnish with dhania leaves.serve it

Lacy Neer Dosa or Panpole With coconut Garlic Chutney For Breakfast..

 Lacy Neer Dosa or Panpole.. Here is recipe. Ingredients... Rice...1 cup Fresh Grated Coconut.. 1/2 cup. Sugar.. 1 tsp.(optional ) Salt.. as per taste. Water...as needed. Oil..For Frying Dosa Method... 1-soak rice for 3-4 hours in water. 2-grind rice,grated coconut,salt and sugar(optional )with water in a fine paste. 3-add some water and make that paste thin to spread dosas. 4-take non stick tawa and spread thin dosas on it 5-apply some oil on tawa to take out dosas easily. Coconut Garlic chutney.. Grind fresh 1 cup fresh grated Coconut ,  4 to 5 Garlic cloves, small piece of chinch (Imli) 2 or 3 Whole Red Chillies n salt with some  water. Chutney is ready to serve.

Rice Oondi (Undi) & Lasun (Garlic) Gojju (Chutney)

Rice Oondi (Undi) & Lasun (Garlic) Gojju (Chutney). Recipe.... Ingredients.. Rice Idli Rawa...2 cup Fresh Grated Coconut... 1/2 cup.. (4to 5 tabsps) Water...4 cups. For Tadka.. Oil.. 2 tabsps. Rai..1/2 tsp. Curry patta.. 8 to 10 Whole red chilli..2 or 3 Hing..1/4 tsp. Salt...as psr taste or minimum 1tsp. Sugar..1tsp.  Method.. Wash 1 wati idli rice rawa & keep. make tadka of oil,rai,red chillies,curry  patta,& hing. then add water .. while boiling add rawa,2 to 3 tabsp.grated  coconut..salt, sugar. mix it.& make it dry  like upma.. then make round undies with hand..make a  small whole in the middle.. steam it like idlis..undies r ready to serve... Serve it with Lasun Gojju. Lasun (Garlic ) Gojju ( Chutney) Recipe... Grind Grated fresh coconut 1cup with garlic 3..chinch small 2 pieces ,  3whole red  chillies & salt as per taste with little  water. sprinkle some coconut oil on it. (This is optional)
