My Thali Today.... Prawns Ghashi , Karela with Onion Stir Fry.. (Bitter Gourd Stir Fry ) , Khandeshi Green Baingan Bharta , Cauliflower Bhajiya , Phulka...n.... Rice
Recipe...
Wash n clean prawns. 1to 1n half cup... remove black thread from each prawn.. then
apply some salt to it.. keep aside.
Grind together 1 cup fresh grated coconut, 1tabsp.of dhania seeds, 1/4 tsp. Jeera, 4 garlic
cloves, 4..5 whole red chilli, 1/2 tsp Haldi, 1/2 small onion, n 1 inch Ginger.
make fine paste..
Add some coconut milk powder in ground masala.n grind it again.you can skip this step
if you dont have coconut milk powder.
Then in a kadhai take oil.. add 1/2 finely chopped onion, fry till soft..
then add ground masala.. 1tabsp.of imli juice, or Kokum, salt, green chillies.
boil it nicely .
then add prawns in it.. boil till prawns get cooked..
garnish with dhania leaves n serve.
Karela with Onion Stir Fry.. (Bitter Gourd Stir Fry )..
Recipe..
Make thin Round pieces of Karela.. n Make thin long pieces of Onion.
Add some Salt to chopped Karela..n keep for 15 minutes.. then squeeze it n wash it nicely
then again squeez it to removes its Bitterness. But this step is optional.. you can skip this
step n use pieces just after chopping .
Then in a pan take little more oil as it is stir fry..
Add Onion pieces n squeezed karela pieces in it.. stir it..then add some salt .
Add chopped finely 3 to cloves of garlic.. n finely chopped 3 green chillies.
keep the lid n cook for 3 to 4 minutes.
Keep stirring.. then add little of red chilli powder.
Stir fry till it gets light brown colour n get slight crispiness..
Karela stir fry is ready to serve.
Khandeshi Green Baingan Bharta..
Recipe
Apply few drops of oil on Green big Baingan all over.
then pierce it with fork..n Roast this Baingan on gas flame directly till outer skin of it
becomes fully black..
then remove n keep it aside..remove all black skin..n mash it with crusher.
roast 3-5 greenchillies n crushed lots of garlic on tawa.,n make thecha ..add some roasted
ground nut powder about 1tabsp.in it.mix it n keep it aside.
in kadhai take more of oil add jeera,add some finely chopped white onion part of spring
onions n fry it til it becomes slightly soft.
then add n fry mirchi thecha mixture..
then after stirring for few minutes add mashed baingan.,add saltas per taste.n fry it
nicely till all mixture
gets mixed n oil gets separated. Then add some finely chopped green leaves of spring
onion .mix it..
garnish with dhania n serve.
