My Thali Today.... Chole Pulao ( Pulao of Rice With White Kabuli Chana ) , Cabbage Sabji ,Katache Saar ( kat means Boiled Chana Dal For Making Puran For Puran Poli..then strained it n water used to make Saar , Fresh Pickle of Ambe Haldi..fresh Haldi..Kairi..Green chillies Pickle. ,Roasted Red chilli Papad n Sun Dried Udid Vade or Sandge.
Vegetable Pulao..
Recipe..
Wash rice 1cup n keep for half an hour..
wash n soak overnight 1/2cup White kabuli Chana ( Chole )..
Cook soaked Chana with water in pressure cooker for 1 to 2 whistles.
you can add any other vegetables which you like..But I havent added.
In a cooker take some oil n ghee. Add whole garam masala like lavang..dalchini..black
pepper, elaichi, shahi jeeera, tej patta, dalchini.
add paste of green chillies, ginger n some dhania leaves... n Garlic ( optional ).
then add Onions long cut if you want .I havent used as it is naivedya for Holi...n all
vegetables if you have used.. stir it for few minutes.
then add rice.. fry for few minutes...
Add cooked chole in it..do not add water. stir it..
Add salt as per taste..
add hot water 1n 1/2 cup.. n salt.. .close the cooker.. n take 1 whistle..
Garnish with Dhania leaves.
Pulao is ready to serve.. with Raita.

mix this water with little of Puran , green chilles n crushed garlic , salt n kokum
Then keep it for boiling.
Add salt in this..if you wanter little more sweet then add gud as per taste. (Optional ).
Then add ghee tadka of garlic n red chillies .
But Today For Holi...I havent used Garlic..instead of garlic tadka I have used rai, hing ,
curry patta n red chilli.
Fresh Ambe Haldi , Ginger, Kairi, Green Chilli Pickle.
Recipe..
Make pieces of fresh Ambe Haldi about 250g.
then peel big full piece of ginger n make piecesor grate it .
Make pieces of Green Kairi 3 to 4
Mix these grated things in a bowl add 10 to12 green chillie pieces.I have taken some
spicy n some less spicy green chillies..add 1tabsp.of red chilli powder.
roast about 1 tabsp of mustard seeds. Add pinch of methi seeds.. roast for few
seconds.then add hing as per your taste.
then powder these things n mix it in Kairi mixture.add salt as per taste.
mix it.
then heat some oil.n add it in the pickle after it cools down.mix pickle nicely.n fill it in
the bottle. I kept it in the fridge after 3 days.now its ready to serve.
Cabbage Bhaji....
Recipe...
Chop Cabbage in thin long pieces..you can grate it .
Make Tadka in a pan with oil , add Rai ,Jeera ,Currypatta ,green chillies ,little of Udid dal
( optional ) , Hing n haldi..
Then add Cabbage in it.. Mix it..
Add little of Dhane n Jeera powder ..add some Dhania leaves , add salt.. n cover it .
Cook it for 4to 5 minutes on low flame.. garnish it with fresh grated coconut n dhania
leaves n serve.
