My Thali Today... Bharali Vangi (stuffed brinjals) , Jumping Potato , Tomato Saar with Coconut Milk , French Beans Koshimbir , Simple Dal Varan with Kanda, lasun , Phodni Mirchi , Phulka....n.... Rice


 

Bharali Vangi (stuffed brinjals)....

recipe...

Give cross slits to Small Vangi(brinjals) 250gms..

fry finely cut onions 2 in oil till it becomes soft..

In grinder grind slightly chopped onions,  grated fresh coconut 2tabsps, and roasted 

ground nuts powder ..

Then take this ground masala in a bowl ,add Goda masala 1tabsp. ,Gud,Chinch (imli) 

juice,salt, chilli powder 1\2 tsp.,1/4 tas haldi.

Add Finely Chopped Green chillies 1 or 2, dhania leaves..

Mix well.stuff this masala in Brinjals.

In a pan add oil,rai,curry patta ,hing,haldi..add 1tabsp of finely chopped onion n grated 

garlic 1tsp.then fry for few minutes..add   brinjals in the tadka..stir for few seconds..

Add little water to cook..keep lid & cook it till brinjals get cooked..

Serve with chapati,bhakri,or rice..(if you dont have goda masala you can use,garam 

masala, malvani masala, or amti powder)






PARASBI (FRENCH BEANS) KOSHIMBIR..

RECIPE..

1.heat 2-3tabsp.oil in a fry pan add 250gms.chopped parasbi, little salt,2 long slit green 

chillies and fry till its crispy and light brown.

2.In a serving bowl, add 2 finely chopped onion,3/4 wati grated coconut, little salt, fried 

parasbi, finely chopped dhania leaves and1/2 tsp lemon juice and mix well.

3.garnish with dhania leaves and serve.




Simple Dal Varan with Kanda, lasun ...

Recipe...

My Amma used to call this Vilayti Dal..as it doesnt have any masala or spices.. but tastes 

very yummy...this is my most favourite Dal since my childhood to till now.


Soak Toor dal for 1/2 an hour .then add 1 onion medium chopped pieces..add 4 Crushed 

Garlic, add salt , Haldi ..and home made  ghee..and cook it in pressure cooker for 4 to 5 

whistles.

 It shud be cooked very soft..no grain shud be seen...then remove it in vessel..add little 

sugar n salt  if needed..

Keep slight thick like other varan.. boil it nicely adding some water if needed..

While serving on rice add some ghee agian n serve.





PHODNI MIRCHI .....

Recipe ..

make long pieces of green chillies. make tadka of oil rai,hing, haldi,& very little methi 

crushed or powdered..cool it.... 

then grind rai or yellow rai dal with some lemon juice .. mix chilli pieces, salt, ground 

mustard.& oil tadka.mix it properly...keep it in the bottle.. it can be preserved in the fridge

Lacy Neer Dosa or Panpole With coconut Garlic Chutney For Breakfast..

 Lacy Neer Dosa or Panpole.. Here is recipe. Ingredients... Rice...1 cup Fresh Grated Coconut.. 1/2 cup. Sugar.. 1 tsp.(optional ) Salt.. as per taste. Water...as needed. Oil..For Frying Dosa Method... 1-soak rice for 3-4 hours in water. 2-grind rice,grated coconut,salt and sugar(optional )with water in a fine paste. 3-add some water and make that paste thin to spread dosas. 4-take non stick tawa and spread thin dosas on it 5-apply some oil on tawa to take out dosas easily. Coconut Garlic chutney.. Grind fresh 1 cup fresh grated Coconut ,  4 to 5 Garlic cloves, small piece of chinch (Imli) 2 or 3 Whole Red Chillies n salt with some  water. Chutney is ready to serve.

Rice Oondi (Undi) & Lasun (Garlic) Gojju (Chutney)

Rice Oondi (Undi) & Lasun (Garlic) Gojju (Chutney). Recipe.... Ingredients.. Rice Idli Rawa...2 cup Fresh Grated Coconut... 1/2 cup.. (4to 5 tabsps) Water...4 cups. For Tadka.. Oil.. 2 tabsps. Rai..1/2 tsp. Curry patta.. 8 to 10 Whole red chilli..2 or 3 Hing..1/4 tsp. Salt...as psr taste or minimum 1tsp. Sugar..1tsp.  Method.. Wash 1 wati idli rice rawa & keep. make tadka of oil,rai,red chillies,curry  patta,& hing. then add water .. while boiling add rawa,2 to 3 tabsp.grated  coconut..salt, sugar. mix it.& make it dry  like upma.. then make round undies with hand..make a  small whole in the middle.. steam it like idlis..undies r ready to serve... Serve it with Lasun Gojju. Lasun (Garlic ) Gojju ( Chutney) Recipe... Grind Grated fresh coconut 1cup with garlic 3..chinch small 2 pieces ,  3whole red  chillies & salt as per taste with little  water. sprinkle some coconut oil on it. (This is optional)
