Kurkuri Bhendi..
Recipe..
Make slit in the middle of bhendi,,and make it half....Make thin stripes
Apply some salt,haldi,red chilli powder, hing, black pepper powder.
Mix it properly.
Then add rice powder to coat it....mix it nicely.
Deep fry it in oil till crispy on low flame .
TONDLI TALASANI... (Ivy Gourd)
Recipe....
Crush whole tendi little with stone..it shud not break..
then make tadka with oil,lots of crushed garlic ,1 whole red chilli,then add tendli..
add little of red chilli powder, pinch of Haldi..add salt, little of jaggery or pinch sugar..
mix it nicely..add some water.. keep lid cook till tendli gets cooked..then
remove lid & fry it for some time till all water dries up
Stir fry till Tondli gets some brownish colour.
Takachi Kadhi.. (Butter Milk Kadhi )....

Mix 2 tabsps of Besan in 2 to 3 cups of Buttermilk..
Make tadka with Ghee ,some Rai, Jeera, methi seeds , 2 lavang , currypatta, whole red
chilli, hing n Haldi.. then add paste of green chilli n small ginger piece..
Then add mixture of Buttermilk n Besan.. Add some sugar n salt as per taste..boil it ...keep stirring it till boil.. or it might curdle..
Add some dhania leaves..garnish it n serve
Ghosale (Ridge Gourd or Dodka ) n Kook (Chinese Potato) Upakari.... Bhaji .
Recipe....
2 cup - Ridgegourd
10 to 12 small Kook
3/4 cup -Fresh grated coconut
2 Green chillies
Rai..1/4tsp
Udid dal..1/4 tsp.
Curry patta.. 4 to 5
Pinch of Asafoetida
Haldi.. pinch
Whole Red chilli ..1
Salt to taste
Gud ..as per taste..( optional)
Chop the peel of Ridge gourd and wash it properly. Then make small pieces.
Peel Kook and make pieces.
Heat little oil in a pan,make tadka with rai, udid dal, green chilli , curypatta, 1whole red
chilli, hing ,pinch haldi...
then add peeled Kook pieces n chopped ridge gourd add salt n Gud as per taste.. mix
it..add some freash grated coconut..mix it.. add some water..n cover it.. n cook till it get
well cooked n dry the remaining water in the bhaji
Garnish with dhaniac leaves n serve.
Haldi, Green Mango Karambi ( preserved with salt)
Recipe...
Chop finely Raw Mango ..
Peel Fresh Haldi n chop finely.
Peel some Ginger n chop finely.
Chop Finely Green Chillies
Then mix al above chopped things together.. add some salt, little of Hing (optional ), 1tsp of oil , n mix it nicely .
Then fill it in the glass jar n keep it in the fridge..
You can eat it From next day.. it will remain in the fridge for atleast 1 week or more.. it
can be served as pickles.
