SURAN ( YAM ) KOOT... This is just like Suran Fresh Pickle..This is a Side Dish of Mangalore. It can be preserved only for 2 to 3 days..

Recipe...
Ingredients..
1..Suran..(Yam)....peeled n chopped in to small pieces.. 2 cups.
2..whole Red Chillies..5to 7 ..as needed..
3. 1/4 sp. Rai.
4..Dhania Seeds...1tsp.
5.. Fresh Grated Coconut..1tabsp.
6.Haldi...1/4 tsp.
7..Hing..1/4 tsp.
8..Oil...3 tbsp.to fry Suran pieces. n 1/4 tsp for Frying masala.
9..Salt..as Per taste.
10..Imli..small round ball.
11..Methi Seeds..4 to 5
Method..
finely chop suran.
add some salt.shallow fry it in some oil in non stick pan..so more oil is not required..make it
crisp..
fry 1/4 tsp rai, 4-5 methi seeds, 1 tsp dhania seeds, red chillies 5to7... 1tabsp fresh coconut &
some haldi & hing in 1/4sp of oil..
grind this with some imli & water..
& add fried suan in it.. mix properly..no need of heating ..suran koot is ready to serve..
