My Thali.... Vankaya Pachikaram...(Andhra styled Spicy Green Brinjal Sabji). Arvi Jumping...... (Taro root Dry Spicy Sabji ), Simple Goad Dal Varan ,Tomato Goad Lonche or Hot n Sweet Tomato Chutney , Dodkyachya Salichi Chutney... (Ridge Gourd Skin Chutney) , ....n....Rice


 Vankaya Pachikaram...Andhra styled Spicy Green  Brinjal Sabji..

Recipe...

Take medium sized 5 to 6 Green Brinjals.

Make medium pieces. Put it in the water..

Grind 5to 6 Green Chillies, 1cup Dhania leaves with stems, 8 to 10 peeled Garlic cloves, 

1 inch chopped n peeled Ginger, 1/2 tsp.Jeera in a Grinder without water. Keep it coarse  

mixture ready.

In a pan take 2to 3 tabsps of oil.. heat it.add drained Brinjal pieces.. fry it for few 

minutes.. then add Haldi 1/4 tsp. n saltas per taste..mix it.. then add some handfull of   

fresh Green methi leaves in it.. mix it..keep frying.

Add Ground Green masala in it.. mix it n cook it for few minutes..

Spicy Green Brinjal Sabji is ready to serve with Rice or Chapati...

You can even make this sabji without Methi leaves n only with Brinjals.







Arvi Jumping...... (Taro root Dry Spicy Sabji )....

Recipe..


 Steam Arvi till soft.. peel it ..make small pices of it.

take little more oil in a pan.. add lots of crushed garlic..fry till slight brown..

Add Arvi pieces.. add haldi,salt & lots of red chilli powder..

and fry it till Arvi pieces get crisp n well mixed.

 it is spicy  so we call it Arvi jumping!!!!





 Simple Goad  Dal Varan...

Recipe..


Cook Toor dal nicely till it cooks soft n completely cooked in Pressure Cooker adding 

haldi, hing, n ghee.

Then Remove it.. add water as much as you need.. boil it for 10 minutes nicely adding 

with salt n sugar as per taste... You have to add some sweetness as this tastes yumm 

when we add gud or sugar in it.. then serve it with adding some lemon juice n ghee in it..

Then serve it with hot hot steamed rice.





Tomato Goad Lonche or Hot n Sweet Tomato Chutney

Ingredients: 

1. Red ripe Tomatoes - 4 to 6 finely chopped

2. Green chilly - 2 medium spicy long slits.

3. Red chilly powder - 2 tsp.

4. turmeric - 1/4 tsp

5. Jaggery - 2-3 tbsp

6. salt as per taste.

7. oil for tadka - 2 tbsp

8. Mustard seeds - 1/2 tsp

9. hing - 1/2 tsp

10.methi seeds(fenugreek) - 1/4 tsp


Instructions: 


1. In a fry pan make tadka of oil, mustard seeds, methi seeds, hing, turmeric, red chilly powder.

2. Add the finely chopped tomatoes and green chillies.

3. Add salt and jaggerry and stir well.

4. cover with lid and cook on medium flame for appx 15 mins.

5. tomato chutney is ready to serve.



Dodkyachya Salichi Chutney........ Ridge Gourd Skin Chutney..

Recipe...

Peel green upper skin of Ridge Gourd or Dodka..

Then in a pan add 2 t sps.of oil..add 1/2 tsp.of White Udid Dal,  pinch of Rai , 3to 4 Green 

chillies, n 1 dry whole red chilli.fry it for few minutes then add  chopped Peels of Ridge 

Gourd..fry it till slight brown add 2 tabsps.of Fresh grated Coconut, n small round ball of 

imli.. Fry till coconut gets slightly brown..add  6 to 8 Garlic cloves..,salt n small piece of 

Gud.(optional).

Grind it in coarse Chutney adding some water.. 

Yummy spicy chutney is ready to serve.

Maharashtrian Goda Masala...Home Made Brahmani Goda or Kala Masala Powder..

 Maharashtrian Goda Masala...    Its a Home made Fresh Maharashtrian  Brahmani Goda Masala powder..I use this this  Masala in my regular  dishes like Amti, Bharali  Vangi, or any vegetables , Many Vegetable   Sabjis,  Dal Rice Khichdi, or Masale Bhaat , we  can even spread this Masala with some oil on  rotis n make rolls n eat. We can make Masala  Chapati. It us used in making Cutlets.. we can  add it in aby non veg dishes with eggs, fish or  meat..  Ingredients..   Use same Big Wati or Cup for measurement . 1...Dhane ( Dry Coriander Seeds )... 4 Big Wati. 2...Regular Jeera (Cummin Seeds.)... 1/2 Wati 3....Shaha Jeera.. 6 tsps. 4...Lavang (Cloves ).... 4 tsps. 5...Dalchini (Cinnamon)... 8 to 10 pieces about 2  inch each. 6.... Methi (Fenugreek Seeds)....1 tsp. 7....Rai (Mustard Seeds)...1tsp. 8....Hing Khada..2 pieces or 3 tsps Hing powder 9...Whole Lal Mirchi... Dry Whole Red Chillies..8  to 10. 10... Bread Thalipeeth... Very Good Of Use Of Left Over Bread...

Bread Thalipeeth  Recipe... Ingredients.. Brread Slices...5 to 7 big Fine Rawa (Suji ) Green Mirchi (Chillies)..3..4 Garlic ..2 big Dhania leaves.. as needed Onion.. 1 big chopped finely Sugar... 1sp or as per taste Salt..as per taste Water.. as needed Oil.. for frying Method.. Put 5 to 6 bread slices in water..immediately press it n remove water n take it in a bowl, Then add 1cup fine rawa..add salt .little of sugar,  Add chopped finely green mirchi, dhania leaves.n little of garlic grated. ( this time I added 2tsps of green masala.i.I green chillies.,grated garlic n dhania leaves chutnney)   . Add chopped finely onion..n mix it nicely n make dough for thalipeeth.if you need some water u can sprinkle some on the dough n,make ot soft.. Take parching paper or butter paper then apply some oil n keep 1 ball of dough n press it  make round thin like  puri or chapati   Shallow fry it on a pan with applying oil from both sides,make churchuri ( crispy ) n serve it..
