My Thali... Zatpat Chicken Curry , Palak-Moong Dal Bhaji , Garlic Tadka Butter milk Kadhi ,Mooli Raita ....n....Rice

 Zatpat Chicken Curry. Recipe... Marinate chicken pieces about 750gms..with haldi,salt,.. Make thin long cut onions 3 ... Chop Tomato 1 or 2. In pressure cooker take 2to 3 tabsps of oil.. When heated add 2 lavang, 2 elaichi, 5to 6 black pepper. After frying add 1 tabsp of garlic paste, n 1tabsp.of Ginger paste ...you can use grated  garlic n ginger. Then add chopped onions ..fry for few minutes till it gets soft n slight brown in colour. Add chopped tomato fry it.. add some green paste of dhania n garlic n green chilli about  1tabsp. This is optional. Then after frying for few minutes add malvani ,or garam masala or any home made red  masala you have.. add dhania powder 1 tsp.. saute every thing together nicely...  Add 2 tabsps of Dahi ..n stir it properly. Add 2 Green chillies, n dhania leaves..then add chicken pieces in it. Fry nicely till oil  separates from masala.. add salt as per taste.. add some water n cook it for 2 to 3  whistles.. My Lunch Today.... Sprouted Alsandya (Black Eyed Beans) Ghashi.. (Amti with coconut ground masala ) Zatpat Soaked Black Eyed Beans Usal , Tomato Chutney... Andhra styled in my way , Black Pomfret Fish Fry... ( Halwa Fish Fry ), Phulka...n...Rice.

   Sprouted Alsandya (Black Eyed Beans) Ghashi.. (Amti with coconut ground masala ) Recipe Soak 3 cups of black eyed beans in water for overnight,.next day remove water n keep in  warm place for sprouts.then again add water in it,.n remove skin of each bean.then cook  it with water n salt till it gets soft.n  well cooked...(you can cook it in pressure cooker for  only 1 whistle.) Roast and 5 to 10 methi seeds, 1tsp.Dhania Seeds and 2-3red whole chillies in less than 1/4tsp of oil in a tadka pan Grind  1.1/2wati fresh coconut, small piece of chinch(tamarind),haldi, and above roasted  masala with some water.make fine paste..then add this  ground masala in the mixture of  well cooked beans. Add salt &mix well..boil it..  Make tadka of 1t to 2tabsps of oil,I use coconut oil..you can use any oil  add 4 to 6 crushed Garlic cloves,.fry till brown.and add in the curry.. My Thali Today... Drumsticks ,Cauliflower Stems n Dal Amti (Maharashtrian Type ) , Bhendi..Onion Stir Fry , Bhendi Simple Cury With Some Gravy.... (South Indian type Curry with my Aai's Recipe.) , Carrot Koshimbir, Phulka ....n....Rice

  Drumsticks ,Cauliflower Stems n Dal Amti (Maharashtrian Type ) Recipe... Cook Tur dal , n Cauliflower Stems in separate vessels in Pressure cooker Boil drumsticks & tomato pieces separately on low flame.  then mix it with cooked Dal n Cauliflower Stems .. make tadka of oil, rai, methi seeds, jeera, hing, haldi, currypatta, some goda masala,(if  you don't have Goda masala then youcan use dhane jeera powder n garam masala  powder.) , red chilli powder, then pour it in dal mixture. add imli juice, again add some  more goda masala, green chillies, dhania leaves, add salt, little jaggery as per taste  & boil  it nicely till Amti aroma comes out.. garnish with dhania leaves. amti is ready to serve.. Chole Pulao ( Pulao of Rice With White Kabuli Chana ) , Cabbage Sabji ,Katache Saar ( kat means Boiled Chana Dal For Making Puran For Puran Poli..then strained it n water used to make Saar , Fresh Pickle of Ambe Haldi..fresh Haldi..Kairi..Green chillies Pickle. ,Roasted Red chilli Papad n Sun Dried Udid Vade or Sandge.

 Vegetable Pulao.. Recipe.. Wash rice 1cup n keep for half an hour..  wash n soak overnight 1/2cup White kabuli Chana ( Chole ).. Cook soaked Chana with water in pressure cooker for 1 to 2 whistles. you can add any other vegetables which you like..But I havent added. In  a cooker take some oil n ghee. Add whole garam masala like lavang..dalchini..black  pepper, elaichi, shahi jeeera, tej patta, dalchini. add paste of green chillies, ginger n some dhania leaves... n Garlic ( optional ). then add  Onions long cut if you want  .I havent used as it is naivedya for Holi...n all  vegetables if you have used.. stir it for few minutes. then add rice.. fry for few minutes... Add cooked chole in it..do not add water. stir it.. Add salt as per taste.. add hot water 1n 1/2 cup.. n salt.. .close the cooker.. n take 1 whistle..  Garnish with Dhania leaves. My Thali Today.... Prawns Ghashi , Karela with Onion Stir Fry.. (Bitter Gourd Stir Fry ) , Khandeshi Green Baingan Bharta , Cauliflower Bhajiya , Phulka...n.... Rice

 Prawns Ghashi... Recipe... Wash n clean prawns. 1to 1n half cup... remove black thread from each prawn.. then  apply some salt to it.. keep aside. Grind together 1 cup fresh grated coconut, 1tabsp.of dhania seeds, 1/4 tsp. Jeera, 4 garlic  cloves, 4..5 whole red chilli, 1/2 tsp Haldi, 1/2 small onion, n 1 inch Ginger. make fine paste..  Add some coconut milk powder in ground masala.n grind it again.you can skip this step  if you dont have coconut milk powder. Then  in a kadhai take oil.. add 1/2 finely chopped onion, fry till soft..  then add ground masala.. 1tabsp.of imli juice, or Kokum, salt, green chillies. boil it nicely . then add prawns in it.. boil till prawns get cooked..  garnish with dhania leaves n serve. Karela with Onion Stir Fry.. (Bitter Gourd Stir Fry ).. Recipe.. Make thin Round pieces of Karela.. n Make thin long pieces of Onion. Add some Salt to chopped Karela..n keep for 15 minutes.. then squeeze it n wash it nicely  then again squeez it to removes its Bitterness.

My Thali.. Vaal Papdi Bhaji with Green Mirchi Kharda or Thecha , Tadka Dal , Whole Masoor Masala , Mirchi Bhajiya, Phulka....n.....Rice.

 Vaal Papdi Bhaji with Green Mirchi Kharda or Thecha... Recipe... Wash 250 gms Vaal Papdi. Make it half n then chop it in small pieces.. Make fresh Kharda.. crush or dry grind 1 tabsp of grated dry coconut , 2 tabsp.of roasted  Grond nuts powder, 8to 10 Garlic cloves n pinch of salt together .. Then make tadka with 1tabsp. of oil ..add 1/4 tsp.of mustard seeds, curry patta, hing ,  Haldi, then add  Prepared Green Mirchi Kharda or Thecha. Stir it properly.. Then add chopped Vaal Papdi..Mix it..add salt as per taste..saute.. Then add some water..cover it n cook till Vaal Papdi gets well cooked.. Garnish with Dhania n ready to serve. Tadka Dal... Recipe... Pressure cook 1 Cup Toor Dal  till Dal cooks very soft.. then mash it or mix it till no  Dal grain remains.  Add water as much you need.. keep for boiling..add salt in it.... mix it.. boil it properly.. keep the thickness of Dal as you like. Make tadka with Ghee ..add mustard seeds, jeera, green chilli  add cushed lots of Garlic n  Whol

Soft n Spongy Idli with Coconut Green Chilli Chutney n Chutney Powder mixed with Sesame oil or Home Made Ghee..

  Soft n Spongy Idlis.. Recipes Ingredients.... 1. Udid Dal... 1 cup 2. Rice.. Ponni or Idli Rice... 3 cups if grinding in table top grinder with stones.. or  2 cups  if grinding in regular mixie. 3.  Methi Seeds.. 8 to 10 seeds 4.  Salt as per taste or 1 tsp. 5.  Water ... to  soak n  Grind. 6.  Oil.. little to grease idli moulds 1. Soak Udid dal , Rice n Methi seeds separately in water for 3 hours. 2. Then Grind   in the table top grinder with stone. .but 1st grind udid dal with adding little little at a time ...dont add all the water at a time. N grind it for more time..so udid dal textures comes very well.then remove it. 3.  Then grind rice finely . 4..Mix both the batters.keep batter thick.n keep for fermenting for overnight.. 5. Grease Idli moulds with some oil. n put batter in it then steam the idlis. Chutney Powder...Recipe.. 1. Roast 1 cup chana dalnin few drops of oil till slight brown..then add hing about 1tsp.on it.just before taking it from flame. 2. Then dry roast llittle

My Thali ... Huli or Puli Koddel, kadgi (Raw Jack fruit ) n Alsanda n Kirlu (tender Bamboo Koddel or Bendi ( Mangalore Curry ), Andhra Style Stuffed Brinjals with Green Masala , Beet Root Sasam , Cauliflower Bhajiya , Drumsticks - Small Onion n Green Brinjal sambhar...or Kholombo....n... Rice.

 Puli Koddel.. Recipe.. This curry is made with  ash Gourd , Val  Papdi, Carrot, mix Veggies.  Roasted whole red  chillies, dhane seeds, udid  dal, chana dal, mustard seeds, methi seeds , raw  rice, Hing ,(everything roasted  together) then  roasted some grated Coconut  separately n... Roasted some while til  separately..then Ground this masala with some  water. then added in boiled ash gourd pieces with all  Veggies together with imli juice ,salt n jaggery.. then added tadka finally with oil,rai, curry patta  kadgi (Raw Jack fruit ) n Alsanda n Kirlu (tender Bamboo Koddel or Bendi ( Mangalore Curry ), Recipe.. Cook alsanda  in pressure cooker till soft.. Cook  Jackfruit pieces n Kirlu with little salt In  separate vessel in cooker. Grind red whole chillies ...fresh grated  coconut,..little imli (tamarind)..make a fine  paste.. You can add some Tirphals if you like.. but its  optional.. .you can make without it. Mix all cooked Vegetables together.. Mix this ground masala with cooked ve

Crushed Dhania leaves, Garlic n Green            chillies.. 2tabsp . 5.Dahi..3 tabsps. 6.Shaha jeera... 1/4 tsp. 7.Lavang...2  8.Onions.. 3 9.Garam Masala Powder.. 1tsp. 10.Chopped Ginger1/2 inch n Chopped Garlic 2  Cloves..  11. Tomatoes..2 Big. 12.Green Chillies Full. 13. Black Pepper.5to 6 14. Garlic n Ginger paste..1tabsp. 15..oil.. 3 tabsps. 16. Dhania powder.. 1tsp. 17. Dhania leaves.. chopped.as per taste. Method.. Wash Mutton .. add some salt 1tsp , Haldi ,1/2  tsp.,Crushed Lots of Garlic , n Dhania leaves  finely chopped n 2 Green chillies.,add 1/2 tsp.  Garam Masala powder, 3Tabsp Dahi..   Keli Phodi.. Recipe.... peel the raw bananas.. make thin long pieces.. apply salt,haldi,red chilli powder,hing..& mix it.. add rice powder & some Besan...mix it.. then deep fry or shallow fry in a pan.. Beetroot Upakari.. Recipe.. Boil Beetroot in Pressure cooker. Then peel it...remove its upper skin.. Grate it . Then make Tadka with oil ..Add Rai, Udid Dal, Whole red chilli, Curry Patta ,Green Chilli,  hing. Add grated Beetroot in it.. Add salt as per taste.. Mix it..then add grated fresh Coconut. Light Lunch Today....Rice , Toor dal n Moong Dal Khichdi... With Tadka of oil, Chopped Garlic, n Home Made Sun Dried Green Chilli, , Kokum Saar, Papad Fry, Phodni Mirchi or Green Mirchi Pickle...n....Tomato Onion Salad.

Rice ,Toor dal n Moong dal Khichdi ..withTadka of oil , chopped Garlic n Home made Sun  Dried Green Chillies... Recipe.. Wash 1 n 1/2 cup Rice n 1/ 2 cup Yellow Moong Dal n 1/2 cup Toor dal... mix it..  In pressure cooker make tadka with ghee add 1  tsp.jeera.. add Rice n Dal mixtutre.. saute  it then add haldi , Goda masala 1/2 tsp.. salt, pinch sugar (optional), mix it.add some more  ghee in it.. Then add 6 glasses of water.. n cook it for 3 to 4 whistles..  Make Tadka with oil heat it add chopped Garlic n Sun dried Green chillies in it .fry till  brown.. And serve it with hot soft Khichdi. My Thali....Karela Stir Fry.. (Bitter Gourd Stir Fry ) , Alsanda Upakari , Alsanda Saar, Tikhat Red Chilli Thecha...n...Rice.

  Karela Stir Fry.. (Bitter Gourd Stir Fry ).. Recipe.. Make thin Round pieces of Karela.. Add some Salt..n keep for 15 minutes.. then squeeze it n wash it nicely then again sqeez it  to removes its Bitterness. But this step is optional.. you can skip this step n  use pieces  just after chopping . Then in a pan take little moore oil as it is stir fry.. Add karela pieces in it.. stir it..then add some salt .mix it...keep the lid n cook for 3to 4  minutes. Then add chopped finely 4 cloves of garlic.. n finely chopped 3 greean chillies. Keep stirring.. then add little of haldi n red chilli powder. Stir fry till it gets light brown colour n get slight crispiness.. Karela stir fry is ready to serve. Alsanda Upakari.
