My Thali Today....Mangalorian Bangda Fish Phanna Upkari , Andhra Pepper Rasam , Sprouted Matki Usal , Salad , Wheat Flour Alaan Roti (Roti with cooked wheat Atta ), n.....Rice.

 


Andhra Pepper Rasam... Very healthy n tasty ..very easy to make fresh hot Rasam.


Recipe..

Make dry powder in a grinder with 1 tsp.dhania Seeds , 3/4  tsp. Jeera , 1/4 tsp.of Black  

pepper (Black miri ), 1 whole red chilli, 1 green chilli,  12 to 15 small Garlic cloves , 1/2 

inch Ginger pieces n 7 to 8 cury leaves.

Take small ball of imli ..add some water n keep its juice ready.

Take 3 Tomatoes.. make small pieces n smash it with hand nicely.

Then in big pot add smashed Tomato pieces , add Freshly made above ground  Rasam 

powder..add atleast 1 liter water.. Add Imli Juice, little of dhania leaves , 1/2 tsp haldi..add salt ... 

Add  little gud only if you want to give slight sweetness to Rasam. ( its optional.. I dont 

add gud in it ).  Then boil it nicely on medium flame till it reduces n all get well mixed n 

tomatoes get well cooked..and you get nice aroma of Rasam. Switch off the gas.

Then make tadka with oil , Jeera 1/4 tsp. , Currypatta 4 to 5 , 1 whole red chilli, n pinch of 

hing .. add it in ready Rasam.. Garnish with dhania leaves n serve...




 Light n Healthy  Wheat Flour Alaan Rotis.....we call it Alaan Roti.. means with cooked atta.

very Easy ..quick n tasty Rotis..

Recipe..

 Boil 2 cup of water adding pinch of salt..  

 once it gets boil add Wheat Flour 2 cups ..mix it nicely.. then cover it.. n switch off the 

flame.. keep for 5 minutes covered.. 

then knead it nicely when it is hot.. you can use little more water of you need as water 

quantity depends on quality of flour. The dough shud be just like chapati soft atta..

Then keep it covered.. then take one by one round ball n again knead nicely n roll it 

round as big you like..

 then roast it on tawa by both sides.. just twice you have to change up n down without 

any oil... it puffs up nicely.. only good kneading is needed..you can roast it just like other 

rotis..no oil needed.

then take it down apply ghee on it.. it remains soft for long time ..even till next day..

 we can eat it with any powder chutney..or wet chutneys or with any curries...

For variation we can use rice flour or jowar  or Bajra or Ragi Flour.. we can mix flours n 

make it as well... try it .. I make it  regularly..These Rotis remain soft for many hours .

Methi Batata Bhaji..Recipe. In a pan heat oil .add some  rai,3 crushed garlic fry little,add hing,haldi,red chilli powder. add green chillies,then add 1finely chopped big  onions,fry for few seconds   add potato pieces.add sugar,salt and cover the pan , cook till potatoes get cooked.add methi leaves.cook for few minutes.use little water if you need . Cook for 2to 3 minutes.. Methi potato bhaji is ready to serve. Gajarachi Koshimbir. ( Carrot Salad )...recipe..  Peel 2 Carrots.. Then Grate it. In A Bowl take Grated Carrot..add Finely chopped little of Onion ( optional..you can skip it.. ),  Add 1to 2 tabsps of Grated Fresh Coconut ,Salt, Lemon Juice.  Mix it properly..Then add Tadka with Ghee , Rai, Curry Patta, Green chilli, small whole  red Chilli , Hing.. Mix it.. Garnish With Dhania Leaves n serve it. Takachi Kadhi.. (Butter Milk Kadhi ).... recipe... Mix 2 tabsps of Besan in 2 to 3 cups of Buttermilk.. Make tadka with Ghee ,some Rai, Jeera, me...

Rava-Kakdi Or Taushe Doddak Or Thalipeeth Or Bhakri... ( Cucumber Doddak ).. I have used our plain regular Green Cucumber

 Rava-Kakdi Or Taushe Doddak Or Thalipeeth Or Bhakri... ( Cucumber Doddak ).. I have used our plain regular Green Cucumber. Ingredients... Grated Cucumber (Kakdi).. 1cup..to 1/2 cup. Rava or Suji... ( Wheat Rava )... 1 cup Grated fresh Coconut...3/4 cup. Green Chilies... 3to 4 as per taste ..chopped finely. Grated Ginger... 1tsp.. or 1  inch Ginger piece. Salt..as per taste.. Sugar ..1 tsp.or Gud... Small piece as per taste. Oil.. to fry Thalipeeth or Doddak. Water..to mix dough. Method... Mix together Rava.. gratedCucumber..  grated fresh Coconut,  Finely Chopped Green  chillies, Grated Ginger, Salt, Sugar or Jaggery (Optional ), n Water as needed.. make a soft dough.. Make hands wet dipping in water  n take a small round ball n spread it on tava as a  thalipeeth or doddaks on heated tava directly. My Thali...Grated Suran Andhra Bhaji.. Yam Sabji , French Beans Kismur , Vilayati Dal , (Simple Dal Varan with Kanda, lasun ) , Gongura Chutney.. Tangy n Spicy Andhra Chutney....n...Rice.

  French Beans Kismur Recipe.. Ingredients: 1.parasbi(french beans)- 250gms,finely chopped. 2.onion -2 small, finely chopped. 3.grated coconut - 3/4-1 wati 4.green chillies-2 long slits. 5.lemon juice -1 tsp or to taste 6.salt to taste 7.dhania leaves- finely chopped for garnishing 8.oil - to fry (appx 2-3 tb sp) Instructions: 1.heat oil in a fry pan add chopped parasbi, little  salt, green chilly and fry till its crispy and light  brown. 2.In a serving bowl, add onion,grated coconut,  little salt, fried parasbi, dhania leaves and  lemon juice and mix well. 3.garnish with dhania leaves and serve.
