Valval... Mixed Vegetables with Sweet Corn Curry With Coconut Milk..

 Our Traditional  Manglore Styled Vegetable  Valval Is Ready To Serve.. Ingredients.. Mixed Vegetables..  Magge or White Dudhi ( Yellow Cucumber or  Bottle Gourd )..pieces..1 cup Pieces of Tondli... (Ivy Gourd )... 1/2 cup Corn Cob pieces...6 to 8 Green Long Beans... 1/2 cup Red Pumpkin pieces... 1/4 cup. 1 Carrot Pieces.. Small pieces of Potato peeled..1/2 cup Soaked Ground nuts..2tabsp. Long cut Green chillies..2 to 3 as per taste. 2 to 3 cups Coconut Milk.. 1tabsp.of Maida or rice flour Tadka things.. Ghee. 1tabsp. Rai.. 1/4 tsp.. Jeera..1/4 tsp. Curry patta.. 6 to 8 Cashew nuts pieces.. 1tabsp. Method... take mixed Vegetables....Magge or White Dudhi,  Some pieces of Tondli, ,some pieces of Long  Beans , Corn Cob pieces, Red Pumpkin, some  pieces of Carrot., Small potato pieces,some  soaked ground nuts,.  add long cut green chillies add little of water.n  boil it for few minutes.. keep fresh coconut milk thin n thick ready by  grinding fresh coconut with water in a  grinder..strain

Ragi n Rice Chakli.. twist in Chaklis.. instead of Ragi powder I used Instant Ragi dry Shevai ( Vermicelli ) in packet..

  Ragi n Rice Chakli.. twist in  Chaklis..  I had some  Ragi Shevai packet  which we make  Upma with it.. but when I made upma it was so  sticky that everyone told me to throw that in  waste bin.. but instead of wasting remaining  dries shevai..I boiled it in the water.. then  ground it in mixie...then added Rice powder ,  For 1 cup Ground Ragi Paste.. I added about 2to  2n1/2 cup Rice powder 3 tsps of butter, dhania jeera powder, hing , pinch of haldi, salt ,til n jeera.. n made dough for chakli..  then put it in a chakli mould n made  chaklis..deep fried it.. its so yummy n crispy..  everyone at home just loved it..I am so happy..

My Thali Today... Mango curry....Gontambyachi Andurli or Ambyacha Kol , Karela Upkari(Bhaji) , Fresh Green Peas n Potato Ambat, Stuffed Karela Pickle..Phulka...n...Rice.

     Mango curry....Gontambyachi Andurli or Ambyacha Kol.. Recipe.... 1. peel outer skin of  8 to 10 Gontambo.. these r very small juicy mangoes.add little water in all mango peeled skin.and take out all juice from it. 2. take big vessel &put all mangoes and above juice in it. add enough water . 3. add 1/2 tsp black pepper powder,1 or 2 green chillies(optional),jaggery(gud),salt.keep for boiling. 4. add 2tabsps of rice powder mixed in some water.. and add this paste in it and let it cook for 5 minutes. 5. make tadka. heat 1tabsp.ghee add 1/2 tsp.rai,1whole red chillies ,1/2 tsp hing and  add in above curry and keep lid. 6. serve with rice. Karela Upkari .. Chop finely 2 ..3  Big Karelas.. apply some salt n keep it for some time..then squeez it n  wash it if you dont want bitterness..again squeez it nicely.. You can skip this step.. Then In a pan  Make tadka with some oil ,rai, Udid dal, currypatta, red whole chilli, hing  n haldi..  Then add choppped Karela in it.. add some salt n

My Thali Today....Kurkuri Bhendi , Crushed Tondli Talasani , Takachi Kadhi , Ghosale (Ridge Gourd or Dodka ) n Kook (Chinese Potato) Upakari. (Bhaji) ,Haldi, Green Mango Karambi ( preserved with salt) ...n...Rice

 Kurkuri Bhendi.. Recipe.. Make slit in the middle of bhendi,,and make it half....Make thin stripes  Apply some salt,haldi,red chilli powder, hing, black pepper powder.  Mix it properly. Then add rice powder to coat it....mix it nicely. Deep fry it in oil till crispy on low flame . TONDLI TALASANI... (Ivy Gourd)  Recipe.... Crush whole tendi little with stone..it shud not break.. then make tadka with oil,lots of crushed garlic ,1 whole red chilli,then add tendli.. add little of red chilli powder, pinch of Haldi..add salt, little of jaggery or pinch sugar.. mix it nicely..add some water.. keep lid cook till tendli gets cooked..then  remove lid & fry it for some time till all water dries up  Stir fry till  Tondli gets some brownish colour. Takachi Kadhi.. (Butter Milk Kadhi )....  recipe... Mix 2 tabsps of Besan in 2 to 3 cups of Buttermilk.. Make tadka with Ghee ,some Rai, Jeera, methi seeds , 2 lavang , currypatta, whole red  chilli, hing n Haldi.. then add paste of green chilli n

Garlic Tadka Thin Dal ... Recipe.. Pressure cook 1/2 Cup Toor Dal  till Dal cooks very soft.. then mash it or mix it till no  Dal grain remains.  Add water as much you need.. keep for boiling..add salt in it.. add haldi in it.. mix it.. boil it properly.. keep the thickness of Dal as you like. But This is a Saar  so tastes good if you keep it thin

Spinach & Corn Bake.... Healthy n yummy...Garnish with some Grated Cheese & Serve with Garlic Bread ..

Spinach & Corn Bake... Ingredients 1 medium tin kraft cheese grated 2 eggs to be beaten well(whipped) 500 gms frozen spinach to be blanched(sqeeze all the water from it) 1 tin cream of mushroom soup 1 cup mayonnaise 1 tin sweet corn 2 onions finely chopped 2-3 green chillies finely chopped little salt & pepper powder to taste 2 tbsp fresh bread crumbs Method    Mix all the above ingredients Together in a Buttered Pirex dish. Sprinkle bread crumbs  on  it   Place in the oven to bake for about 45 minutes at 180 degrees.. Check it by inserting a stick or knife to see if it is ready... Garnish with some Grated Cheese & serve with Garlic Bread .

My Only Fish Thali...Small Tarle Spicy Tikhle or Amshe Tikhshe (Small Saradines spicy Red Curry ) , Crispy Tarle Fish Fry ,Green Chutney Appplied Pomfret Fry...!n.. Rice..

 Tarle Fish Tikhle or Amshe Tikhshe... here is Recipe.. clean 10 to 12 tarle fish & make ...add salt,haldi and keep aside  roast10-12 red Bedgi chillies in few drops of oil for 1 minute. grind 2tabsp grated coconut,red chillies,1.4tsp haldi,2-3 garlic cloves,small ball of tamarind.make fine,smooth paste with water. grind 5-6 tirfal with little water and strain it  Boil ground masala,tirfal water, by adding some more water. add fish in it.. and boil it  for 3 to 5 minutes... sprinkle coconut oil on it.. n cover it.curry is ready to serve.. sprinkle 1tabsp.coconut oil on the curry,cover with lid.curry is ready..serve with Rice. Small Tarle or Saradines Fry.. Recipe.. Clean Fish  .  apply salt,haldi,red chilli powder.n lemon juice..mix  it  shallow fry in oil..fry fish is ready to serve.. Batata Bhaji... Recipe... Description: Very delicious potato bhaji.. it is usually served with hot pooris..I have given slight change to this bhaji..so try it.. I am sure you all will love it... Ingredients: 1.potatoes-4-5 2.oil-2 tabsp. 3.udid dal-1/4 tsp. 4. rai (mustard seeds)- 1/2 tsp. 5 jeera (cummin seeds)-1/4tsp 6.garlics chopped-2 7.whole red chilli-1 8.curry patta 5-6 9.pinch hing, 10.haldi-1/4 tsp  11/ginger-small piece. 12.green chillies=2 13.onions-2 14.sugar-little((optional). 15.salt-as per taste. 16.besan (gram flour)-2tabsp. 17.dhania leaves-chopped finely-1tabsp. 18.water-some as needed for gravy. Preparaion: 1.Boil potatoes in pressure cooker.peel it & make pieces. 2.In a pan make tadka of oil.when heated add udid dal, rai(mustard seeds), jeera(cummin seeds),garlic  chopped,whole red chilli,curry patta,pinch hing, haldi,after frying for few seconds , 3,add small piece of finely chopped ginger,finely chopped green chillies, 4,then add finely chopped onions.fry till

  Tambli ( with onion,ginger)... Recipe; we make different varietis of tambli..either with garlic,or with onion-ginger..or palak tambli..all have different taste & recipes.. Today I made onion tambli means just ,made fine paste with fresh coconut,some red  whole chillies,&small piece of tamarind..&  After making fine paste lastly I added 1onion pieces,& small ginger,1tabsp dahi.,salt.&again ground it jst for few seconds.. we can add water as required..no need of heating it.. it tastes very yummy with hot steamed rice Batata Talasani... Recipe.. Peel the Potatoes.. Make long n thin Pieces like we make for Finger Chips or French Fry.. Make Tadka with Oil , add lots of Crushed Garlic, Whole Red Chilli, fry it till brown . My Thali Today... Mooli (Radish) Green leaves Sabji , Tomato Rasam , Sprouted Vaal Birde..(Dalimbi Usal , Carrot Tokku , Light n Healthy Rotis...Wheat Alaan Roti , ....n ...Rice...

  Mooli (Radish) Green leaves Sabji....  Recipe Wash n clean the leaves of Mooli... chop finely  about 3to 4 cups..n keep it aside.. In a pressure cooker add  2  tabsps .of oil ..add 3 Garlic cloves chopped finely ,add 1/4 tsp.of Rai , 2 Green chillies chopped , when Rai splutters add Haldi. Add 1 finely chopped Onion,saute it ..then add 1 finely chopped Tomato.. saute it till all gets well mixed..then add 1/4 tsp.of Dhania powder, Pinch of Red chilli powder ..saute it. Add chopped Green leaves in it.. mix it for few minutes.add salt n gud as per taste.. add 2 tabsps of  fresh grated Coconut.. mix it.. add some water..n close the pressure cooker. Cook it for 1 or whistles.. this sabji becomes very soft n yummy to eat with Chapati or phulka. Tomato Rasam.. Recipe... Chop 2-3 tomatoes. grind it in mixie without water... In a vessel take 3-4 glass water,add tomatoes,2tbsp cooked n mashed dal or you can use any left over dal.. add green chillies,crushed garlic,rasam powder.(or little sambh

Soft n Spongy Dosa With Surnoli Batter.. ( Surnoli is Our Traditional Pan Cakes From Mangalore ) ..Today I made Thin Dosas with This Batter..

  Soft n Spongy Dosa With Surnoli Batter.. !!! Tastes best with Gharche Loni(Butter). Recipre.. Ingredients:  1.Rice - 2 cups 2.methi seeds - 1/2 to 3/4 th tsp. 3.curd / buttermilk - appx 1 cup 4.pohe- 1 cup 5.jaggery - 3/4 - 1 cup..as Per taste. 6.grated coconut - 1 cup 7.salt - 1/4th Tsp 8.turmeric(haldi)-  1/2 tsp. 9.oil - as needed. water to grind. 10.plain eno (fruit salt)- 1 tsp. Instructions:  1.Soak rice in water with methi seeds for a minimum of 4-5 hours. 2.wash pohe and keep aside. 3.grind the soaked rice, curd/buttermilk,pohe,jaggery,grated coconut,salt and haldi  together with water. make a smooth thick paste slightly thinner than idli batter. If you want to make cheppi   means Plain Surnoli Dosa without jaggery then grind soaked rice , poha , coconut ,salt  1st..remove it n then add jaggeri n haldi in the mixer with remaining batter to make sweet Surnoli Dosa.. 4.keep this batter to fermant for atleast 7-8 hours. 5.Add eno and mix well in the batter at the time of making
