Nepali Momos Served with Thin Clear Soup or Shorba n Tomato Chutney or Dip....


 


Chicken Momos..


Ingredients...


Boneless Chicken Pieces... 1 big or 2 small.

Onion..1

Ginger.. 1tab sp.Gingger paste for stuffing

Green chillies..2or 3

Spring onion...as needed.

Dhania leaves..as needed

Soya sauce.. 1/2 tabsp.

Momo Masala..1 tabsp. Ready made or home made. Or you canadd little of meat masala as per 

taste. Or any chicken noodle masala.

Salt.as per taste


Outer Cover...

Ingredients..

Maida ..1 cup

Salt ..as per taste

Water about 1 cup.


Momo Masala..Home made..


1tabsp Dhania, 1/4 tsp,methi seeds, 1/2 tabsp.Jeera, 1/4 tabs,black pepper, 1tsp,mutard seeds, 

4Green Elaichi,5/6 whole red chillies, 5cloves,small piece of dalchini, 1/4tsp ginger powder,haldi.

2 Tbsps sesame seeds  til

Roast til till slight brown separately..
roast all other whole masala ingredients for just 1minute,.n

then add haldi n ginger powder in it.. make masala powder.
you can preserve these  masala in a bottle



For Momos...

knead dough with cups of Maida (Plain Flour ) with salt,n water.

keep it covered with wet cloth for atleast 15 minutes...  


For Stuffing....

Take chicken kheema in a bowl..add finely chopped onion, 1tabsp.ginger paste , momo masala 

powder as per taste, salt, .Add some green leaves of spring onion,little of soya sauce, Dhania 

leaves, Finely chopped Green chillies..mix it 

properly n keep it aside for 10 to 15 minutes.


Then make small round balls of kneaded maida dough... roll it like poori.. stuff the chicken 

stuffing in it... n shape it as you like.. You can make momos like Modak shapes .. arrange those 

momos in the greased steamer pots.

I have used Momo steamer to steam momos ..shown in above pic.

In the momo steamer down in the last pot take water, chicken bones , ginger n garlic paste, and 

1 tsp.momo masala n salt, green chillies as per taste..then keep it on the gas..This soup gives 

very nice flavour to Momos while steaming.

then keep arranged momoms pots above it ..n steam the momos for  half an hour.. Chicken 

Momos r ready to serve with thin soup n chutney.

If you dont want soup then you can take plain water to steam it.you can steam it with any 

steaming method.


Thin chicken Momo Soup or Shorba... 

After removing upper pots of momos... Take boiled water from last pot ..strain it.

 And serve it as a soup. If you want thick soup you can add 1tabsp.of corn flour in the same 

water n boil it again.



Chutney or Dip ... 


Chop 3 Green chillies ,Garlic cloves 3, 1 medium onion ,Tomato 2..make big pieces of them.

chop it roughly.


Then fry in in 1tabsp of oil..roast 2tabsps Til separately..then mix everything together add 1 tirfal 

in it add salt as per taste.. then grind it water as needed.. Chutney or dip is ready to serve with 

Momos..

Lacy Neer Dosa or Panpole With coconut Garlic Chutney For Breakfast..

 Lacy Neer Dosa or Panpole.. Here is recipe. Ingredients... Rice...1 cup Fresh Grated Coconut.. 1/2 cup. Sugar.. 1 tsp.(optional ) Salt.. as per taste. Water...as needed. Oil..For Frying Dosa Method... 1-soak rice for 3-4 hours in water. 2-grind rice,grated coconut,salt and sugar(optional )with water in a fine paste. 3-add some water and make that paste thin to spread dosas. 4-take non stick tawa and spread thin dosas on it 5-apply some oil on tawa to take out dosas easily. Coconut Garlic chutney.. Grind fresh 1 cup fresh grated Coconut ,  4 to 5 Garlic cloves, small piece of chinch (Imli) 2 or 3 Whole Red Chillies n salt with some  water. Chutney is ready to serve.

Rice Oondi (Undi) & Lasun (Garlic) Gojju (Chutney)

Rice Oondi (Undi) & Lasun (Garlic) Gojju (Chutney). Recipe.... Ingredients.. Rice Idli Rawa...2 cup Fresh Grated Coconut... 1/2 cup.. (4to 5 tabsps) Water...4 cups. For Tadka.. Oil.. 2 tabsps. Rai..1/2 tsp. Curry patta.. 8 to 10 Whole red chilli..2 or 3 Hing..1/4 tsp. Salt...as psr taste or minimum 1tsp. Sugar..1tsp.  Method.. Wash 1 wati idli rice rawa & keep. make tadka of oil,rai,red chillies,curry  patta,& hing. then add water .. while boiling add rawa,2 to 3 tabsp.grated  coconut..salt, sugar. mix it.& make it dry  like upma.. then make round undies with hand..make a  small whole in the middle.. steam it like idlis..undies r ready to serve... Serve it with Lasun Gojju. Lasun (Garlic ) Gojju ( Chutney) Recipe... Grind Grated fresh coconut 1cup with garlic 3..chinch small 2 pieces ,  3whole red  chillies & salt as per taste with little  water. sprinkle some coconut oil on it. (This is optional)
