Home Made Kesar, Choco, & Cashew Modaks...

  Here r the recipes... Kesar Modaks.. recipe.. take 3/4th cup to1cup or sugar as per taste. in a  pan &add 1/2 cup of water.keep it on low  flame..stir it till sugar melts n start boiling. then  add1 cup of fresh grated paneer & 2cups of  Mava in it. Keep stirring continuously. on low  flame. then add 4tabsp.of milk powder in it..stir  continuously. add kesar mixed in 1tabsp of milk.& elaichi powder. add 4tab sp of cashew powder or add kesar milk  masala..keep stirring.  when it looks like dough..remove it. when it becomes cool.make modaks  in modak  sacha.(mould) Cashew n choco modaks.. recipe. take 4cups of grated mava in  a pan. add 1&1/2 cups of sugar,keep it on low flame.stir  it..,it will become liquidy..just after 3 to 4  minutes,, remove it from the gas.,& keep down stirring for  2 minutes more,then keep it in fridge to cool  down completely,then take that mawa dough  out,,add elaichi powder in it..mix it,.make 2  parts,, in 1 part add 4to 5 tabsp cashew po

My Thali Today....Mutton Kheema Masala , Batata Soang , Bharali Vangi (Stuffed Brinjals ) Buttermilk with Garlic Tadka , Phulka....n....Rice.

   Mutton Kheema Masala... Recipe.. Wash n clean Mutton Kheema...500 gms. Grind Green Masala with 1 cup Dhania leaves, Garlic 7to 8 small cloves. Grate 1 inch Ginger .n grate 7to8 small garlic cloves n keep aside. Then in pressure cook take 3 tabsps of oil.   add 2 finely chopped onions.. fry for few minutes till it becomes slightly brown..  Add grated Garlic n Ginger..stir it.. then add Mutton Kheema.. keep stirring then add  ground Green masala, stir it for few minutes.. Add Garam masala, or Sunday Masala or any mutton masala, 1 tabsp Dhania Powder,   1 /2 sp of Haldi, add 2 green chillies.n 1 finely chopped Tomato.keep stirring it.. then add salt as per taste. Cook it till kheema gets cooked for 2 to 3 whistles..  adjust the gravy.. You can keep it with some gravy or make it dry as per taste.. Garnish with Dhania leaves.. n serve with Phulka or Rice. My Simple Thali ....Rajma Chawal n Vadi , Papad Fry.

 Rajma Masala.... Recipe... 1.. Soak  2 cups Rajma Over Night..  Morning Cook it with Adding some salt n Water In the Cooker for 2 Whistles.. 2.. Then In pressure Cooker take 3 tabsps.of Oil Or Ghee add 2 cloves, 1 Green  Elaichi, 4 to 5 Black pepper, Fry for few Seconds.   Then Add 1/2 chopped long onion pieces..Fry it add 1/2 Tomato pieces.. Fry till Tomato gets  well mixed with onion. Then Add 1 onion Paste 1tabsp.of Garlic n Ginger Paste, n 1 Tomato pieces n 1 Green Chilli. Add Haldi , Red Chilli Powder, 1tab sp. Dhania Powder. Add salt. Add Garam masala powder or  any other masala powder  which you like.. I have added Chole Masala powder. Then fry Till oil separates. then add Cooked Rajma in it.. Mix it Properly.. n again cook it For 3 to 4 Whistles..Garnish with  Dhania leaves n serve. ..( Keep Gravy thick as You like). Rajma masala is ready to serve with Rice or Roti..

Happy Independence Day...My Tri Coloured Thali....Suran Koot , Bhendi Kurkuri ,Cabbage Koshimbir ( Salad ) , Bhendi-Onion Bhaji...n....Rice

Cabbage Koshimbir (Salad )...  Grate cabbage..add some  finely chopped 1/2 small onion..add 2tabsps of fresh grated coconut. add salt,  lemon juice mix it properly  add tadka with gheee ..rai.. currypatta, dry red whole chilly, 1chopped green chilly, n add in the salad..mix it.. garnish with dhania leaves n serve.. add fresh grated coconut,& dhania leaves.   Bhendi Kurkuri.. Recipe.. Make slit in the middle of bhendi,,and make it half....Make thin stripes  Apply some salt,haldi,red chilli powder, hing, black pepper powder.  Mix it properly. Then add Rice powder,some Besan n 1 Tabsp.of Fine Rawa to coat it....mix it nicely. Deep fry it in oil till crispy on low flame . . Bhendi..Onion Bhaji... Recipe... SURAN ( YAM ) KOOT... This is just like Suran Fresh Pickle..This is a Side Dish of Mangalore. It can be preserved only for 2 to 3 days..

  SURAN KOOT... Recipe... Ingredients.. 1..Suran..(Yam)....peeled n chopped in to small pieces.. 2 cups. 2..whole Red Chillies..5to 7 ..as needed.. 3. 1/4 sp. Rai. 4..Dhania Seeds...1tsp. 5.. Fresh Grated Coconut..1tabsp. 6.Haldi...1/4 tsp. 7..Hing..1/4 tsp. 8..Oil...3 tbsp.to fry Suran pieces. n 1/4 tsp for Frying masala. 9..Salt..as Per taste. 10..Imli..small round ball. 11..Methi Seeds..4 to 5 Method.. finely chop suran.  add some salt.shallow fry it in some oil in non stick pan..so more oil is not required..make it  crisp.. fry 1/4 tsp rai, 4-5 methi seeds, 1 tsp dhania seeds, red chillies 5to7... 1tabsp fresh coconut &  some haldi & hing in 1/4sp of oil.. grind this with some imli & water..  & add fried suan in it.. mix properly..no need of heating ..suran koot is ready to serve..

White Chavali or Black Eyed Beans n Mayalu or Malabar Spinach Curry

 White Chavali or Black Eyed Beans n Mayalu ,Vali or Malabar Spinach  Curry.. Recipe credit to My Frend Vanita Tipnis...Thanks so much for this lovely Recipe...I am Always  inspired by her Yummy Recipes. Recipe...  Ingredients... 1.. Black Eyed Beans...1/2 cup. 2...Mayaly Bhaji or Vali Bhaji..1 Bunch. 3..Onion...small 1 ..chopped. 4... Garlic  ..For Grinding...4 to 5 and 8 to 10 Small crushed Garlic for Tadka. 5.. 1Tomato..chopped 6..Whole Red Chillies... 5to 6 ..I used Bedgi Chillies. 7... Haldi... 1/2 tsp. 8..Dhania Seeds...1 tabsp. 9..Methi seeds...6 to7 10..Rai...Pinch..less than 1/4;tsp. 11.. Jeera..1\4 tsp. 12...Black Pepper 5to 7 13...Hing..pinch 14..salt as per taste. 15...oil ...1tabsp. 16..water..as needed. Method... Wash n clean Mayalu Bhaji .chop leaves finely..n stems into long pieces. Soak Alsanda or White Chavali for 4 to 5 hours or over night. Then cook Chavali, with Mayalu bhaji with stems.. add salt, Tomato pieces , n water in it..  Pressure cook it for 2to 3 whistles

My Thali.... Vankaya Pachikaram...(Andhra styled Spicy Green Brinjal Sabji). Arvi Jumping...... (Taro root Dry Spicy Sabji ), Simple Goad Dal Varan ,Tomato Goad Lonche or Hot n Sweet Tomato Chutney , Dodkyachya Salichi Chutney... (Ridge Gourd Skin Chutney) , ....n....Rice

 Vankaya Pachikaram...Andhra styled Spicy Green  Brinjal Sabji.. Recipe... Take medium sized 5 to 6 Green Brinjals. Make medium pieces. Put it in the water.. Grind 5to 6 Green Chillies, 1cup Dhania leaves with stems, 8 to 10 peeled Garlic cloves,  1 inch chopped n peeled Ginger, 1/2 tsp.Jeera in a Grinder without water. Keep it coarse   mixture ready. In a pan take 2to 3 tabsps of oil.. heat it.add drained Brinjal pieces.. fry it for few  minutes.. then add Haldi 1/4 tsp. n saltas per taste..mix it.. then add some handfull of    fresh Green methi leaves in it.. mix it..keep frying. Add Ground Green masala in it.. mix it n cook it for few minutes.. Spicy Green Brinjal Sabji is ready to serve with Rice or Chapati... My Thali... Black Whole Toor Usal , Whole Black Toor Beans Saar , Tendli Phanna Upakari.. ( Ivy Gourd ) , Batata Sukki Bhaji , Red Pumpkin Raita....n....Rice.

   Whole Black Toor Beans Saar  recipe... This Saar is made with water of cooked soaked Toor .I soaked it for overnight.  Cook these seeds n lots of water in the pressure cooker  for 6 to 8 whistles..  Take out all the water from  cooked Toor..this water is used for saar. grind 1tabsp.fresh grated coconut,1 whole red chilli, 3 tabsp.cooked Toor,  1/2tsp.dhania  seeds,2-3 chopped garlic,small piece of imli(chinch) with water.make fine paste..  add this in boiled seeds water..add salt,little gud,1-3 green chillies.2crushed garlics.then  boil it nicely for 5 minutes.make tadka of 1tabsp.ghee,5-6 crushed garlics,1whole red  chilli..add it in saar..garnish with dhania leaves..saar is ready to serve Black Whole  Toor Usal  recipe..
