My Lunch Thali ...after a long time....Val papadi Bhaji, Bangda Curry , Dal Osaman ( Gujarati Dal ) , Padwal Seeds Chutney , Padwal Fried Crispy Rings....Rice.


 


Crispy Padwal Rings.... Snake Gourd Fried Rings..

Recipe..

Slightly scrape Padwal  n Remove seeds from it. Do not throw these seeds..we can make 

chutney with it..

Make medium thin pieces of Padwal as shown in my above pic..

Add Salt, Haldi n Red Chilli powder n Hing in it..

 Mix it well.

Add Rice powder n some Besan in it  till all pieces get well coated

Then deep fry these rings till it become crispy..

Serve it hot n fresh..



Val Papdi Bhaji...(Green Broad Beans )

Recipe....


(Approximately )
2 cup - Val Papdi ..washed ..make it half then chop finely

3/4 cup -Fresh grated coconut 

2 Green chillies

Pinch of Asafoetida 

Salt to taste 

 wash Val Papdi properly and keep for dry.

Once its dry chop it into small pieces.

 Heat little oil in a pan,make tadka with rai, udid dal, green chilli , curypatta, 1whole red 

chilli, hing ,pinch haldi...

then add chopped Val Papdi add salt n Gud as per taste.. mix it..add some fresh grated 

coconut..mix it.. add some water..n cover it.. n cook till Papdi get well cooked n 

dry the remaining water in the bhaji.

Garnish with dhania leaves n serve.




Bangda red curry...

Recipe..


1. Clean fish thoroughly and apply salt and turmeric and keep aside.

2. take 1/4 tsp oil in a pan and roast red chillies slightly.

3. grind 3tabsps of fresh coconut, 4..5 red chillies, soaked tamarind ,1tabsp. dhania seeds, 

5-6 methi seeds, 2 garlic cloves,with water. make a fine paste.

4. fry 1 small finely chopped onions in coconut oil (or any oil)till it turns soft &&slight 

brown.,add the ground coconut chilly paste,salt and stir till oil seperates, then add fish in

 it..do not stir for some time. .. . 

then add some water and simmer for 4-5 mins

5. serve with rice or chapati





Dal Osaman... (Gujarati Dal)..

Recipe...

Cook yellow toordal with water in pressure cooker..

then mash it.  Or whisk it nicely with whisker for ssmooth dal.

again while boiling add roasted dhania  jeera powder.,kokum..green chilli..salt...gud ..

Boil it nicely ..

add tadka with mustard seeds.,rai..curry patta..hing n haldi.n again boil dal properly.

add dhania leaves in it,,.dal is ready to serve.

this is my way of making gujrati dal.it tastes yummy.

Garnish with dhania leaves. N serve...






Padwal Seeds Chutney...

Recipe...

in a pan add 1/2 tsp of oil..add 1tabsp.of udid dal..n 1/2 Tsp of Jeera.. add whole Red 

chillies 2..3 or you can use 2..3 green chilies...Stir it n fry till slightly brown..then add 1 

cup of padwal seeds with soft white flesh (Gar) around it.n. . Fry it till slightly brown then 
add 3..4 big chopped garlic cloves..n add 1/2 cup of fresh grated Coconut....

Add small piece of imli as per your taste, then fry till coconut becomes dry..

add salt n small piece of gud (optional) .then grind it in mixie with adding little of 

water..Padwal Seeds Chutney is ready to serve.

Lacy Neer Dosa or Panpole With coconut Garlic Chutney For Breakfast..

 Lacy Neer Dosa or Panpole.. Here is recipe. Ingredients... Rice...1 cup Fresh Grated Coconut.. 1/2 cup. Sugar.. 1 tsp.(optional ) Salt.. as per taste. Water...as needed. Oil..For Frying Dosa Method... 1-soak rice for 3-4 hours in water. 2-grind rice,grated coconut,salt and sugar(optional )with water in a fine paste. 3-add some water and make that paste thin to spread dosas. 4-take non stick tawa and spread thin dosas on it 5-apply some oil on tawa to take out dosas easily. Coconut Garlic chutney.. Grind fresh 1 cup fresh grated Coconut ,  4 to 5 Garlic cloves, small piece of chinch (Imli) 2 or 3 Whole Red Chillies n salt with some  water. Chutney is ready to serve.

Rice Oondi (Undi) & Lasun (Garlic) Gojju (Chutney)

Rice Oondi (Undi) & Lasun (Garlic) Gojju (Chutney). Recipe.... Ingredients.. Rice Idli Rawa...2 cup Fresh Grated Coconut... 1/2 cup.. (4to 5 tabsps) Water...4 cups. For Tadka.. Oil.. 2 tabsps. Rai..1/2 tsp. Curry patta.. 8 to 10 Whole red chilli..2 or 3 Hing..1/4 tsp. Salt...as psr taste or minimum 1tsp. Sugar..1tsp.  Method.. Wash 1 wati idli rice rawa & keep. make tadka of oil,rai,red chillies,curry  patta,& hing. then add water .. while boiling add rawa,2 to 3 tabsp.grated  coconut..salt, sugar. mix it.& make it dry  like upma.. then make round undies with hand..make a  small whole in the middle.. steam it like idlis..undies r ready to serve... Serve it with Lasun Gojju. Lasun (Garlic ) Gojju ( Chutney) Recipe... Grind Grated fresh coconut 1cup with garlic 3..chinch small 2 pieces ,  3whole red  chillies & salt as per taste with little  water. sprinkle some coconut oil on it. (This is optional)
