Sprouted Vaal Birde (Dalimbi Usal) ...
Recipe..
Soak Vaal overnight & give them sprouts..peel each Sprouted Vaal.
make tadka of oil,add rai,hing,haldi,red chilli powder(optional),goda masala(or pinch garam masala),
then add sprouted val in it.add 2 kokums in it.stir for few minutes.....
Add coarsely ground fresh grated coconut, Green chillies n garlic n Jeera.. Saute Vaal with all this masala..
add water & cook it till Vaal gets soft.
then add salt as per taste,little sugar,or gud..again cook it properly.
Garnish with dhania leaves.
Vaal birde or usal is ready to serve.
If You want to make it quick then you can make directly in pressure cooker.. add salt n gud n everything together n just cook for 1 or 2 whistles.then garnish with dhania leaves.
Ash Gourd ( kuwalya)Ambat ( Coconut Masala Curry )..
Description:
Ingredients:
1.ashgourd-peeled &chopped in cubes-3wati.
2.grated fresh coconut-1wati
3.green chillies-3-4.
4.dahi-1-2tabsp.
5.curry patta-10-12
6.oil-2tsp
7.methi seeds-less than 1/4sp.
8.mustard seeds(rai)-1/4tsp.
9.small whole red chilli.
10.hing-pinch
11.salt-as per taste.
Preparation:
1.peel ashgourd..make square cubes.
2.cook it with green chillies,salt,and some water.cook it till ashgourd cooks well.
3.in a tadka wati take 1/4tsp oil add methi seeds.fry for few seconds.
4.grind and make fine paste of fresh grated coconut,fried methi,with little water.
5.add this masala in boiled ashgourd,add some curry patta in it.
6.after boiling when masala gets well mixed with ashgourd,add whisked dahi in it.switch off gas..plz do not
boil curry after adding dahi.
7.make tadka of oil,mustard seeds,curry patta,hing,small piece of whole red chilli,and add it in curry.
8.Ash gourd white curry is ready to serve.
Takatlya (Buttermilk) Dalimbi (sprouted val)..Recipe..
Boil 1 cup of Dalimbi (sprouted & skin removed
val), with 2-3 chopped green chillies,5-6 curry
patta,some dhania leaves, salt ,and some water
in pressuer cooker .cook till 3whistles.
mix 2-3cups of buttermilk with 1tsp of
besan.make tadka of 1tabsp oil,add rai, methi
seeds, jeera, curry patta,1red whole chilli,1green
chilli, hing powder, haldi..then add cooked val
in it..then mix it .add butter milk mixture.add
salt and 1tsp sugar.some dhania leaves.stir well.
keep it on flame till it gets boiled..garnish with
dhania leaves..takatlya dalimbi is ready to serve
