My Thali Today.... Egg Bhurji , Rajma Curry , Carrot Koshimbir , Phulka.... n..... Rice

 


Egg Bhurji... 

1..Whisk the 4  Eggs in a bowl..Keep aside.

2.. Finely Chop 2 Medium Onions.

3.. Finely Chop 2 to 3 Green Chillies.

4... Finely Chop 1 Small Tomato.

5.. Finely Chop Dhania Leaves.

6..In a Pan add 2 tabsps Of Oil or Ghee. Add 1/2 tsp.of Jeera.. then Add Finely Chopped Onions, Green Chillies , Some Finely Chopped Dhania Leaves..Stir Fry till Onions Become soft ..then Add Finely Chopped Tomato.. Fry till Tomato Gets Mixed with onions. Then add Whisked Eggs in it.. Add 2tabsps.to 3 tabsps of Milk in it.. add Salt, Pepper Powder ..Mix It Nicely Till Eggs Get Properly Cooked.. Then Garnish With Dhania Leaves  n Serve.


Rajma Curry..

1.. Soak  2 cups Rajma Over Night.. Morning Cook it with Adding Water In the Cooker for 2 Whistles..

2.. Then In pressure Cooker take 3tabsps.of Oil Or Ghee add 2 cloves, 1Tejpatta, 1 Green Elaichi, 4to 5 Black pepper, Fry for few Seconds.  Then Add 1 onion Paste 1tabsp.of Garlic n Ginger Paste, fry Till it becomes Slight Brown and Then add 1 Finely Chopped Tomato... Fry till Tomato Becomes Soft..then Add Haldi , Red Chilli powder, Dhania Powder , Jeera powder  as per taste.. add Salt, mix it.. then add Cooked Rajma in it.. Mix it Properly.. n again cook it For 3 to 4 Whistles..Garnish with Dhania leavesn serve. ..( Keep Gravy thick as You like)


Carrot Koshimbir.

1.. Peel 2 Carrots.. Then Grate it..In A Bowl take Grated Carrot..add Finely chopped little of Onion, Add 1to 2 tabsps of Grated Fresh Coconut ,Salt, Lemon Juice. Mix it properly..Then add Tadka with Ghee , Rai, Curry Patta, Green chilli, small wholle red Chilli , Hing.. Mix it.. Garnish With Dhania Leaves n serve it.

Rice Oondi (Undi) & Lasun (Garlic) Gojju (Chutney). Recipe.... Ingredients.. Rice Idli Rawa...2 cup Fresh Grated Coconut... 1/2 cup.. (4to 5 tabsps) Water...4 cups. For Tadka.. Oil.. 2 tabsps. Rai..1/2 tsp. Curry patta.. 8 to 10 Whole red chilli..2 or 3 Hing..1/4 tsp. Salt...as psr taste or minimum 1tsp. Sugar..1tsp.  Method.. Wash 1 wati idli rice rawa & keep. make tadka of oil,rai,red chillies,curry  patta,& hing. then add water .. while boiling add rawa,2 to 3 tabsp.grated  coconut..salt, sugar. mix it.& make it dry  like upma.. then make round undies with hand..make a  small whole in the middle.. steam it like idlis..undies r ready to serve... Serve it with Lasun Gojju. Lasun (Garlic ) Gojju ( Chutney) Recipe... Grind Grated fresh coconut 1cup with garlic 3..chinch small 2 pieces ,  3whole red  chillies & salt as per taste with little  water. sprinkle some coconut oil on it. (This is optional)

My Thali...Grated Suran Andhra Bhaji.. Yam Sabji , French Beans Kismur , Vilayati Dal , (Simple Dal Varan with Kanda, lasun ) , Gongura Chutney.. Tangy n Spicy Andhra Chutney....n...Rice.

  French Beans Kismur Recipe.. Ingredients: 1.parasbi(french beans)- 250gms,finely chopped. 2.onion -2 small, finely chopped. 3.grated coconut - 3/4-1 wati 4.green chillies-2 long slits. 5.lemon juice -1 tsp or to taste 6.salt to taste 7.dhania leaves- finely chopped for garnishing 8.oil - to fry (appx 2-3 tb sp) Instructions: 1.heat oil in a fry pan add chopped parasbi, little  salt, green chilly and fry till its crispy and light  brown. 2.In a serving bowl, add onion,grated coconut,  little salt, fried parasbi, dhania leaves and  lemon juice and mix well. 3.garnish with dhania leaves and serve. Grated Suran Andhra Bhaji.. Yam Sabji Recipe.. Remove skin of Suran.. you can take Suran piece  as much as your need. Grate it thicker  not fine. Then place it in a dish n steam it in a steamer     or  in pressure cooker without whistle for 5 to 7  minutes. Do not add any water in grated suran. Then in a pan make tadka with 2tabsps.of ...

 Rava-Kakdi Or Taushe Doddak Or Thalipeeth Or Bhakri... ( Cucumber Doddak ).. I have used our plain regular Green Cucumber. Ingredients... Grated Cucumber (Kakdi).. 1cup..to 1/2 cup. Rava or Suji... ( Wheat Rava )... 1 cup Grated fresh Coconut...3/4 cup. Green Chilies... 3to 4 as per taste ..chopped finely. Grated Ginger... 1tsp.. or 1  inch Ginger piece. Salt..as per taste.. Sugar ..1 tsp.or Gud... Small piece as per taste. Oil.. to fry Thalipeeth or Doddak. Water..to mix dough. Method... Mix together Rava.. gratedCucumber..  grated fresh Coconut,  Finely Chopped Green  chillies, Grated Ginger, Salt, Sugar or Jaggery (Optional ), n Water as needed.. make a soft dough.. Make hands wet dipping in water  n take a small round ball n spread it on tava as a  thalipeeth or doddaks on heated tava directly.
