AMBYA (MANGO) KOLU OR AMBYA ANDURLI


Recipe Description:

yummy!!very traditional!!but forgotton!!its very easy and original recipe which my grandmother used to 

make ..so enjoy!!


Ingredients:

1.8to10small ,juicy mangoes(ghotambo)

2.1wati or more gud (jaggery)

3.3to4 red whole chillies

4.1/2t.spoon crushed black pepper(powder)

5.2t.spoon ghee

6.salt as needed.

7.water for gravy.

8.1tbl spoon rice powder mixed with water to give little thickness to gravy.

9.1/2 t spoon rai (mustard seeds),1/2 t spoon hing.

10.2 green chillies long cut(optional)


Instructions:


1. peel outer skin of mangoes.add little water in all mango peeled skin.and take out all juice from it.

2. take big vessel &put all mangoes and above juice in it. add enough water .

3. add black pepper powder,green chillies(optional),jaggery(gud),salt.keep for boiling.

4. add rice powder paste in it and let it cook for 5 minutes.

5. make tadka. heat ghee add rai,whole red chillies ,hing,and  add in above curry and keep lid.

6. serve with rice.

  1. Vidya akka, What a delish! In Mangalore we call this ambe upkari (except the addition of black pepper)and the uncooked version of the same as Chendurli or ambe gojju. Nice to hear a new name.

Mangalore Buns r ready to serve.

 Maharashtrian Goda Masala...    Its a Home made Fresh Maharashtrian  Brahmani Goda Masala powder..I use this this  Masala in my regular  dishes like Amti, Bharali  Vangi, or any vegetables , Many Vegetable   Sabjis,  Dal Rice Khichdi, or Masale Bhaat , we  can even spread this Masala with some oil on  rotis n make rolls n eat. We can make Masala  Chapati. It us used in making Cutlets.. we can  add it in aby non veg dishes with eggs, fish or  meat..  Ingredients..   Use same Big Wati or Cup for measurement . 1...Dhane ( Dry Coriander Seeds )... 4 Big Wati. 2...Regular Jeera (Cummin Seeds.)... 1/2 Wati 3....Shaha Jeera.. 6 tsps. 4...Lavang (Cloves ).... 4 tsps. 5...Dalchini (Cinnamon)... 8 to 10 pieces about 2  inch each. 6.... Methi (Fenugreek Seeds)....1 tsp. 7....Rai (Mustard Seeds)...1tsp. 8....Hing Khada..2 pieces or 3 tsps Hing powder 9...Whole Lal Mirchi... Dry Whole Red Chillies..8  to 10. 10... Soft n Spongy Udid Dal n Regular Rava (Semolina ) Idlis With Coconut Green Chillies Chutney n Home made Dry Chutney Powder....

 Soft n Spongy Udid Dal n  Regular Rava (Semolina ) Idlis ..... Recipe.. Wash 3 to 4 times n then Soak White Udid dal 1 cup with less than 1/4 tsp.of methi seeds .. for 3 to 4 hours..  Then Grind it in fine thick batter.. Then add slightly roasted  Regular Rawa (Suji )..2 cupss... in the batter..add salt as per taste.. mix it well..n keep over night to ferment in warm place. Add 1/2 tsp.of Eno in it n mix it.. (you can skip this step if you dont like to add Eno.) Make Idlis in Idli moulds. Coconut n Green Chutney .. Recipe.. In Tadka pan add few drops of oil.. add slitted green chillies n roast it for few seconds..add hing in it.. then Grind it with fresh grated coconut, imli, 1tabsp.of phutana dal n little of water..  Add tadka with ghee or oil ,rai, currypatta n 1  small whole red chilli.. Green Chutney is ready to serve.
